This Peanut Butter Protein Granola is the perfect healthy snack, breakfast, or dessert! You only need 4 ingredients and 15 minutes to make it. Vegan, oil-free, gluten-free, with a paleo option!

½ Cup Creamy Peanut Butter (or any nut/seed butter of choice) (use the code "shh20" for free shipping)
1 Cup Rolled Oats (or Quick Cooking)
½ Cup Uncooked Prewashed Quinoa (Can Sub Oats)
2 Tbs Honey (or Pure Maple Syrup)
Optional: ¼ Cup Unflavored Protein Powder (I used unflavored grass-fed whey) (See Note 4)

Steps:

  • 1. Preheat oven to 325 F. and line a cookie sheet with parchment paper. 2. In a medium bowl, add all ingredients and mix until well combined and peanut butter is coating everything. 3. Transfer to baking sheet and flatten into an even layer. 4. Bake 325 F. for 10-13 minutes until golden and fragrant. 5. Let cool completely to allow granola to firm up and get crunchy. 6. Serve over yogurt, with milk, or eat it plain! Store in an airtight container in the pantry for up to 2 weeks, or in the refrigerator for up to a month.

This protein granola is a healthy breakfast made with just 4 ingredients! The addition of protein powder adds an extra 22 grams of protein per serving!

2 cups rolled oats (gluten free, if needed)
1/2 cup protein powder (* See notes)
1/3 cup peanut butter (** See notes)
1/4 cup maple syrup (or honey)
1 cup mix-ins of choice (*** See notes)

Steps:

  • Preheat the oven to 180C./350F. Line a large baking tray with parchment paper and set aside.
  • In a large mixing bowl, add the oats and protein powder and mix well. In a microwave safe bowl, add the peanut butter and maple syrup and microwave in 20-second spurts, until the peanut butter has melted.
  • Add the wet ingredients into the dry ingredients and mix well, until fully incorporated.
  • Transfer the protein granola mixture onto the lined baking tray and spread out in an even layer. Place the baking tray in the oven and bake for 13-15 minutes, removing the granola halfway through to stir.
  • Remove the granola from the oven and mix once more, before letting it cool completely. Once it reaches room temperature, transfer into a large mixing bowl and add your mix-ins of choice.

2 tablespoons margarine
1/3 cup natural-style peanut butter
1/3 cup honey
1/2 teaspoon vanilla
1/4 teaspoon salt
2 scoops chocolate protein powder
3 cups rolled oats
1/2 cup raisins (optional)

Steps:

  • Melt the margarine, peanut butter, and honey until smooth.
  • Add vanilla, salt, and protein powder.
  • When mixture is well combined, add the rolled oats and raisins, if desired.
  • Spread onto cookie sheet or 13X9 pan and bake at 375 degrees for 10 minutes. Allow it to cool in the pan.
  • Break it into pieces and store in an airtight container.

I have a chef friend, Nancy Russman in Louisville Kentucky, who spends a lot of her time teaching kids to cook and eat healthier snacks. When she first met me and my son there at a Julia Child birthday party I was cooking for, she made a big impression on him, much bigger than Julia! Probably because she's very short, and closer to his size than Julia. She taught him the cheer of "Go Cats!" in support of the Louisville Wildcats. We also had a nice tour of the Louisville Slugger Baseball Bat Factory, a visit to a bourbon distillery for another Julia party and a visit to my favorite goat cheese maker, Judy Schad, in nearby Greenville Indiana. This is one of Nancy's kid-friendly recipes that the kids can help make.

2 to 4 tablespoons milk, or as needed

  • In a large bowl, mix together the honey and peanut butter. Using a spatula, stir in the granola. Add enough milk to just moisten--you want it to stick together. Form into balls. Chill until ready to serve.

1/3 cup peanut butter
1/3 cup honey
1/2 teaspoon vanilla
1/4 teaspoon salt
3 cups oatmeal

Steps:

  • Melt together margarine, peanut butter and honey.
  • Add vanilla and salt.
  • Add oatmeal and toss to coat completely.
  • Spread on baking sheet.
  • Bake at 375 about 10 minutes. Stir after 5 minutes.
  • Store at room temperature in sealed container.
  • Note.watch it closely while it bakes -- it burns easily, especially around the edges where it's spread thinner on the pan.
  • Also note -- I omit the salt without noticing any change in flavour.
