Chewy Peanut Butter Popcorn Bars image

Nonstick cooking spray, for the baking dish
1/2 cup creamy peanut butter
3 tablespoons unsalted butter
One 10-ounce bag marshmallows
7 to 8 cups lightly salted popcorn, freshly popped or your favorite store brand
One 7.25-ounce bottle hardening chocolate sauce, such as Magic Shell

Steps:

  • Spray a 9-by-13-inch baking dish with nonstick cooking spray. Set aside.
  • Melt the peanut butter and butter together in a medium saucepan over low heat, then stir in the marshmallows. Continue to stir until the marshmallows are melted.
  • Remove the pan from the heat and stir in the popcorn to coat evenly in the melted marshmallow mixture. Pour the popcorn mixture into the coated baking dish and spread out into an even layer. Drizzle the popcorn with the chocolate sauce. Allow the popcorn treats to cool for 30 minutes, then cut into bars.

  • Combine brown sugar, corn syrup, and butter in a large saucepan; cook and stir over medium heat until mixture comes to a rolling boil. Remove saucepan from heat; stir in peanut butter until mixture is smooth.

1/2 cup corn syrup
3/4 cup sugar
1 cup peanut butter
1/4 cup honey
1 teaspoon vanilla extract
8 ounces semisweet chocolate, finely chopped

Steps:

  • Spread out the popcorn and 1 cup of the cashews out on two baking sheets. In a saucepan, combine the corn syrup and sugar. Bring to a boil and cook for 2 minutes; remove from heat. Carefully, add the peanut butter and honey. Stir until the peanut butter is melted, then add the vanilla. Working quickly, pour the mixture over the popcorn and cashews, and use two rubber spatulas to evenly coat the popcorn. Set aside to cool completely.
  • Fill a saucepot hallway up with water; set over medium heat and bring to a simmer. Turn the heat down to medium-low. Add the chocolate to a glass bowl and place the bowl over the pot of simmering water. Melt the chocolate, stirring occasionally.
  • Using a spoon or spatula, drizzle the popcorn with the chocolate. Sprinkle the remaining 1/4 cup cashews over the chocolate.

4 liters air popped popcorn
3/4 cup honey
1/4 cup brown sugar
3/4 cup peanut butter
1 teaspoon vanilla

Steps:

  • In a saucepan mix the honey and brown sugar. Bring to a boil while stirring then add peanut butter and vanilla. Stir until well combined.
  • Place the popcorn into a large bowl and pour hot mixture over it and stir until it is well coated.
  • The popcorn mixture will be hot but as soon as your hands can take the heat begin forming it into softball sized balls by compressing the popcorn tightly with your hands and placing them on a wax or parchment paper lined cookie sheet. Once all balls are formed, put the cookie sheet into the fridge to cool.
  • (it doesn't take long but they can be left over night, it doesn't really matter).
  • To keep little hands from getting too sticky, shove a stick into each ball after it has cooled.

7 oz marshmallow
⅔ cup peanut butter, divided
8 cups popcorn, popped
nonstick cooking spray, for greasing
2 cups dark chocolate chip
2 cups milk chocolate chips
1 ½ cups heavy cream
4 tablespoons powdered sugar, divided
2 teaspoons vanilla extract, divided
3 tablespoons milk

Steps:

  • Melt the butter in a large pot over medium heat, then add the marshmallows and stir until starting to melt. Add ⅓ cup (80 g) of peanut butter and stir until completely melted. Remove the pot from the heat.
  • Add the popcorn to the pot and stir to coat completely. Let cool for 2 minutes.
  • Grease a 9-inch (23-cm) springform pan with nonstick spray. Press the popcorn mixture into the pan using the bottom of a measuring cup, creating an even layer along the bottom and halfway up the sides. Set aside.

1/4 cup popcorn
vegetable oil
fine salt
1/2 cup honey
1/3 cup sugar
1/2 cup peanut butter
1/2 teaspoon vanilla
6 ounces white chocolate, melted

Steps:

  • Prepare a clean paper shopping bag or oversized mixing bowl. Heat a large heavy pan over medium heat and film the bottom with vegetable oil. Add the popcorn, shake to distribute, then put a lid on the pan. Leave a small crack for steam to escape. When the popcorn starts popping, shake vigorously to make sure the kernels pop evenly. When the popping slows, take the pan off the heat.
  • Pour the popcorn into the paper bag or bowl to cool, being careful to leave any unpopped kernels in the pan. Lightly salt the popcorn to taste.
  • Mix the honey and sugar in a small saucepan and bring to a boil. Let it simmer for a couple minutes, then remove from the heat and add the peanut butter. Stir vigorously until all the peanut butter is melted, and then mix in the vanilla.
  • Immediately pour the peanut butter caramel over the popcorn and stir with a long-handled wooden spoon until it's all coated. Pour onto a greased cookie sheet. Drizzle with white chocolate.

It was born one night when I was craving something delicious and melty, but being a poor college student I found myself with limited ingredients and equipment. I'm so glad that was the case, because this is now one of my favorite desserts! Heck yes! ;)

2 cups microwave popcorn (I always use one mini bag of Orville Redenbacher's 100 calorie kettle korn)
5 Dove dark chocolate miniatures
1/4 cup chunky peanut butter
15 Teddy Grahams honey graham snacks, if desired (can use any flavor, I use the Oatmeal-flavored)
1/4 cup mini marshmallows, if desired

Steps:

  • Pop kettle corn in microwave until finished-- listen carefully to be sure it doesn't burn! Meanwhile, chop 4 of the miniature Dove chocolates, leaving the 5th one whole.Remove popcorn from microwave and set aside.
  • Place peanut butter in microwave-safe mug and microwave until partially melted (about 15-20 seconds). Remove from microwave and put the unchopped chocolate in the peanut butter. Place peanut butter back in microwave for about another 15-20 seconds or until chocolate has melted.
  • Meanwhile, place 1/2 of the bag of popcorn in a microwave-safe bowl and sprinkle with 1/2 of the chopped chocolates, 1/2 of the teddy grahams (if desired) and a few mini marshmallows.Remove melted peanut butter from microwave and stir.
  • Drizzle 1/2 of the mixture over the popcorn and chopped chocolate in the bowl. Repeat the layers of popcorn/chopped chocolate/teddy grahams/marshmallows/drizzled peanut butter. Place bowl in microwave and heat until chopped chocolate has softened up a bit (about 10-15 seconds). Remove, sit back, and enjoy.

How to make Chocolate Peanut Butter Cheerios Popcorn Balls

Number Of Ingredients 5

6 cups miniature marshmallows
1/4 cup butter
8 cups popcorn
4 cups Chocolate Peanut Butter Cheerios
1 cup peanut butter candies (optional)

Steps:

  • In a large microwave safe bowl combine marshmallows and butter and microwave in 30 second increments until melted. Alternatively marshmallows and butter can be melted in a saucepan.
  • Remove from heat and add in popcorn and Chocolate Peanut Butter Cheerios, stir to combine. If desired add in peanut butter candies.
  • Lightly coat hands with non-stick cooking spray or oil. Using hands shape mixture into 12 balls. Place on a baking sheet covered with a silicone baking mat or parchment paper. If desired place straws or sticks into balls. Serve or wrap each ball in plastic wrap.
