This candie reminds me of the middle of a Butterfinger.It is not as "brittle" as the traditional peanut brittle and is a wonderful change!

Steps:
- Preparations: Butter a cookie sheet;place in warm oven to keep warm-to hot. Combine the baking soda and vanilla in a small cup and set aside.(this keeps the soda from brown flaking in your syrup).
- Combine sugar,water and corn syrup in heavy saucepan.
- Bring mixture to full boil over high heat, stirring until mixture appears clear.
- Cook to hard crack stage- 290 degrees.(No thermometer? Fill a cup with cold water and drip a drop of the syrup into water. Feel the drop at the bottom of the cup -- if it's hard and brittle, it's ready!
- Meanwhile, put the measured peanut butter and peanuts in a medium size bowl and microwave on defrost or half power to warm .
- When the syrup hits 290 remove from heat and add vanilla,soda and the warmed peanut butter mixture. Combine and stir quickly.
- Working quickly, pour onto a very warm - hot buttered cookie sheet; spread with large spoons or forks.
- Cool; break into pieces.

BROWN BUTTER AND PEANUT BRITTLE ICE CREAM

- Melt butter in small skillet over medium-low heat. Cook until butter turns dark amber, stirring occasionally, about 6 minutes (do not burn). Pour through fine strainer into small bowl. Bring cream and milk to simmer in large saucepan. Whisk egg yolks, both sugars, and salt in large bowl until thick and well blended. Add brown butter; whisk to blend. Gradually whisk hot cream mixture into yolk mixture; return to same saucepan. Stir mixture over medium-low heat until instant-read thermometer registers 178°F, about 5 minutes. Strain custard into large bowl. Set bowl over larger bowl of ice water. Stir until custard is cold. Stir in vanilla.
- Process custard in ice cream maker according to manufacturer's instructions. Add peanut brittle during last 1 minute. Transfer ice cream to container; freeze. DO AHEAD: Can be prepared 2 days ahead. Keep frozen.
CHOCOLATE CAKE WITH MILK CHOCOLATE-PEANUT BUTTER FROSTING AND PEANUT BUTTER BRITTLE

- For brittle:
- Line large rimmed baking sheet with foil; brush with oil. Bring sugar, corn syrup, and 1/4 cup water to boil in heavy medium saucepan over medium-high heat, stirring until sugar dissolves. Boil without stirring until syrup is deep amber, swirling pan occasionally, about 10 minutes. Immediately stir in peanuts and all remaining ingredients. Scrape out mixture onto prepared sheet; spread out to about 13x9-inch rectangle. Cool completely. Coarsely chop enough brittle to measure 1 cup and finely chop enough to measure 1/2 cup. DO AHEAD: Can be made 3 days ahead. Store in separate airtight containers at room temperature.
- For cake:
- Preheat oven to 350°F. Spray two 9-inch-diameter cake pans with 2-inch-high sides with nonstick spray. Line pan bottoms with parchment paper. Sift flour, sugar, cocoa, baking soda, and salt into large bowl. Whisk 2 cups water, oil, vinegar, and vanilla in medium bowl to blend. Gradually add water mixture to dry ingredients, whisking until batter is smooth. Divide batter between prepared pans (scant 3 cups each).
- Bake cakes until tester inserted into center comes out with a few crumbs still attached, about 28 minutes. Cool cakes in pans 15 minutes. Cut around cakes and turn out onto racks. Peel off parchment and cool.
- For filling and frosting:
- Place chocolate in medium bowl. Bring 5 tablespoons cream just to simmer in small saucepan over medium heat. Pour cream over chocolate; whisk until melted and smooth. Let stand until thick enough to spread, whisking occasionally, about 30 minutes.
- Beat powdered sugar, 1 1/2 cups chilled cream, and peanut butter in large bowl just until blended. Add mascarpone; beat frosting just until thickened (do not overbeat).
- Place 1 cake layer, flat side up, on platter. Spread milk chocolate filling evenly over; sprinkle with 1/2 cup finely chopped peanut brittle. Spread with 1 cup frosting. Top with second cake layer, flat side down. Spread remaining frosting over top and sides of cake. Cover with cake dome and chill 1 hour. DO AHEAD: Can be made 1 day ahead. Keep chilled. Let stand at room temperature 2 hours before continuing.
- Sprinkle 1 cup coarsely chopped brittle over top of cake and serve.
- An Italian cream cheese; sold at many supermarkets and at Italian markets.
PEANUT BUTTER BRITTLE ICE CREAM
Steps:
- Make peanut brittle:
- Lightly oil a 12-inch sheet of heavy-duty foil. In a dry small heavy saucepan cook sugar over moderate heat, stirring with a fork, until melted. Cook caramel without stirring, swirling pan, until golden. Add peanuts and a pinch salt, stirring until mixture is combined well (caramel will not completely coat nuts). Immediately transfer mixture to foil and cool completely, about 20 minutes. Peel off foil and break brittle into pieces. In a food processor pulse brittle until coarsely ground. Brittle may be made 3 days ahead and kept in an airtight container at room temperature.
- In a deep heavy saucepan heat milk, peanut butter, and sugar over moderate heat, stirring constantly, just until smooth (do not let simmer), about 4 minutes. Stir in vanilla and cool to room temperature (do not chill). Freeze mixture in an ice-cream maker and transfer to an airtight container. Stir in 1 1/2 cups brittle and put in freezer to harden. Ice cream may be made 1 week ahead.
- Serve ice cream with dark chocolate sauce and sprinkle with remaining peanut brittle.

- Grease a 15 1/2 x 10 1/2x1-inch jellyroll pan (or 13x9, for thicker brittle).
- Sprinkle 1 cup of chips evenly on pan; set aside.
- Melt the butter in a 2 quare saucepan.
- Stir in the sugar, water, and corn syrup.
- Bring to boil.
- Cook on medium heat, constantly stirring until mixture reaches 300°F on candy thermometer (about 30 to 35 minutes).
- (Do not let thermometer bulb rest on bottom of pan).
- Remove pan from burner.
- Immediately spread mixture into greased pan.
- Add remaining 2/3 cup peanut butter chips.
- Let cool; remove the candy from pan.
- Break into pieces and store in cool dry place.

- In top of double boiler, warm peanut butter over low heat.
- Butter 2 large baking sheets.
- Butter sides of a heavy 3 quart pan, combine sugar, corn syrup, and water .
- Cook and stir over medium high heat till it comes to a boil --
- Clip candy thermometer to side of pan and cook till mixture reaches 275* (about 15 minutes).
- Reduce heat to medium and add 2 tbls butter stirring just until melted.
- Add peanuts and cook and stir for 5 more minutes until candy starts to turn brown and thermometer reads 295*.
- Remove from heat and remove thermometer
- Quickly sprinkle baking soda over mixture stirring constantly.
- Stir in vanilla.gentlly stir in warmed peanut butter.till it is well combined.
- Immediately pour candy onto prepared sheets.working quickly spread as thin as possible.
- When cool, break into pieces.

- Preheat oven to 325°F. Spray 9-inch-diameter springform pan with 2 3/4-inch-high sides with nonstick spray. Line bottom with parchment. Double-wrap outside of pan with heavy-duty aluminum foil.
- Using electric mixer, beat cream cheese, peanut butter, and sugar in large bowl until well blended and fluffy. Beat in sour cream. Beat in eggs 1 at a time, then vanilla. Stir in peanut butter chips. Transfer batter to prepared pan.
- Place springform pan in large roasting pan. Fill roasting pan with enough hot water to come 1 inch up sides of springform pan. Bake cake until slightly firm to touch and top appears dry, about 1 hour.
- Refrigerate cake uncovered until cold, at least 4 hours. (Can be prepared 2 days ahead; cover and keep refrigerated.)
- Cut around pan sides to loosen cheesecake; release sides. Invert cake onto platter; peel off parchment. Brush apricot jam over top of cake. Sprinkle 1 1/2 cups peanut brittle pieces over cake and serve.
PEANUT BUTTER CHIP BRITTLE RECIPE
Steps:
- 1. Butter 15-1/2x10-1/2x1 inch jelly roll pan. sprinkle 1 cup peanut butter chips evenly onto bottom of prepared pan, set aside.
- 2. Melt butter in heavy 2-1/2-quart saucepan, stir in sugar, corn syrup and water. Cook over medium heat, stirring constantly until mixture reaches 300 degrees on candy thermometer, this should take 30 to 35 min.
- 3. Remove from heat. immediately spread mixture in prepared pan, sprinkle with remaining 2/3 c. peanut butter chips. Cool completely. Remove from pan. Break into pieces. Store in container.
PEANUT BUTTER PEANUT BRITTLE
I was leery of using so much peanut butter and only put in 1 1/2 cups. It worked fine. Next time I will try the 2 1/2 cups of peanut butter. If you want to use dry roasted peanuts, add them when you add the peanut butter.

I found this recipe in Family Circle magazine. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use sugar free peanut brittle, all natural peanut butter, and Splenda brand sugars.

- Heat oven to 375. Place flour in a medium bowl. Break apart peanut brittle into a food processor. Pulse until brittle is finely crushed (you should have about 3/4 cup). Add to bowl of flour, along with baking powder and salt. Set aside.
- In a large mixing bowl, beat together butter and peanut butter until smooth. Add brown sugar and 1/2 cup of the granulated sugar. Beat until light in color, about 2 minutes. Add vanilla and eggs and beat until smooth, scraping down side of bowl. On low speed, beat in flour mixture.
- Place remaining 1/2 cup sugar in a small bowl. Roll 1/4 cup dough into a ball; coat in sugar. Transfer dough balls to ungreased baking sheets and flatten with a 3-inch round ramekin. Use fork tines to make "+" marks on cookies.
- Bake cookies in 375 oven for 13-15 minutes or until edges are browned and cookies are set. Rotate pans halfway through baking. Transfer baked cookies to wire racks to cool. Repeat with remaining dough.
- Store cookies at room temp in airtight container up to 2 weeks.

- 1. Spray a large baking sheet with cooking spray. Microwave sugar and corn syrup in large glass microwaveable bowl on High 5 min. Stir in butter and peanuts. Microwave 3 to 4 min. or until pale golden brown. Stir in baking soda and vanilla. (Mixture will foam.) Spread onto prepared baking sheet. Cool completely. Break into pieces. Microwave chocolate in 1-cup glass measuring cup on HIGH 1 to 2 min. or until chocolate is melted when stirred. Add peanut butter; stir until melted. Dip half of each candy piece in chocolate mixture; scrape bottom against edge of cup to remove excess chocolate. Place on sheet of foil or waxed paper. Refrigerate 20 min. or until chocolate is firm.
BUTTER PEANUT BRITTLE
This rendition of peanut brittle is enriched with butter and a dash of vanilla. The butter and baking soda make it opaque instead of clear.

- Coat the back of a baking sheet with 2 tablespoons of the butter; set aside. In a 3-quart heavy-bottomed saucepan over high heat, cook the sugar, the water, and the corn syrup without stirring until it registers 300°F on a sugar thermometer (10 to 15 minutes). Brush down the sides of the pan two times with a pastry brush dipped in warm water to prevent the sugar from crystallizing.
- Remove the saucepan from the heat and with a long-handled wooden spoon or heatproof spatula rapidly stir in 1 tablespoon of the butter, the baking soda, vanilla, and peanuts. Be careful; the mixture will bubble and foam. Immediately turn the mixture onto the buttered baking sheet and spread it out thin with the wooden spoon. Let the brittle cool for 5 minutes, then loosen it from the pan with a flexible-blade spatula. Butter your fingertips with the remaining 1 tablespoon butter and stretch the brittle as thin as possible. Let the brittle cool completely (about 30 minutes), then break it into pieces with your hands. In a tightly covered container, the brittle will keep for 1 week at room temperature.
- Substitute any toasted nuts for the peanuts.
- Coconut Brittle: Substitute 2 cups lightly toasted, flaked unsweetened coconut and 1/4 teaspoon salt for the peanuts.
- Coconut Cashew Brittle: Substitute 1 cup toasted, salted cashews and 1 cup lightly toasted, flaked or ribbon unsweetened coconut for the peanuts.
