PEANUT BUTTER MARSHMALLOW COOKIE BARS
I got this recipe from a friend, after having it on our cookie exchange tray at Christmas. These are wonderful! Very rich and addictive at our house. We looove peanut butter :)

Steps:
- Heat oven to 350°.
- CRUST In a large bowl combine the cake mix, margarine, and egg.
- Mix until crumbly.
- Press into bottom of ungreased 13x9 pan.
- Bake at 350° for 15-20 minutes or until golden brown.
- Remove from oven and immediately sprinkle with 3 cups mini marshmallows.
- Return to oven for 1-2 minutes until marshmallows begin to puff.
- TOPPING In large saucepan, heat corn syrup, margarine, vanilla, and peanut butter chips until chips are melted and mixture is smooth.
- (Stir constantly) Remove from heat and stir in cereal.
- Immediately spread over crust.
- Chill and cut into bars.
PEANUT-BUTTER AND MARSHMALLOW GRANOLA BARS

- Butter a 9-inch-square baking pan; set aside. In a large saucepan over medium heat, melt butter. Add marshmallows; stir until melted, about 4 minutes. Remove from heat.
- Stir in peanut butter and granola until well combined. Transfer mixture to prepared pan. Dampen your hands, and press mixture into prepared pan, distributing mixture evenly. Set aside to cool. Invert pan, releasing bars. Cut into 16 squares.
GRAPE-NUTS PEANUT BUTTER MARSHMALLOW BARS
Snack, treat or perhaps breakfast bar! Yummy and semi healthy! Yes it has sugar, but grape nuts are nutritious! Grape-Nuts have natural fiber, whole grains, antioxidants, high in iron and folic acid! I bought a few boxes on sale but never want to eat them, lol! On the Post grape-nuts box it had a recipe for peanut butter bars which tasted okay, but I thought marshmallow would make them so much better and was right! So we adapted the recipe to meet my families likes. I think adding chocolate would of course be awesome too, but have not tried. So alter away! The recipe can be doubled. Original recipe said reduced fat peanut butter, and had an optional adding dried fruit such as cranberries, raisins or cherries adding at the time of the cereal.

- Grease an 8x8 pyrex dish (or if doubling the recipe a 13x9).
- Microwave peanut butter, corn syrup and sugar in a medium size bowl on HIGH for 1minute. Stir and then stir in marshmallows and microwave 1more minute. Stir, if melted move on otherwise continue cooking 1minute at a time.
- Add Grape-Nuts cereal; mix well.
- Press cereal mixture firmly onto bottom of 8x8 pan sprayed with cooking spray. Cool completely.
- Cut cereal mixture into bars. I kept in pyrex with the lid on but you can wrap individual bars with plastic wrap, store at room temperature.

- Line a 9 x 13 baking dish with non-stick foil. Set aside.
- Combine the chocolate chips, butterscotch chips, and peanut butter in a large microwave safe container. (I use the 8 cup Pyrex measuring cup.)
- Microwave on high heat in 30 second intervals, stirring in between, until the chips are fully melted, the peanut butter is incorporated, and the mixture in smooth.
- Stir in the marshmallows until they are fully coated. Pour the mixture into the prepared baking dish.
- Refrigerate until set, about 2 hours. Cut into bars. Store leftovers in an airtight container.
ULTIMATE RICH PEANUT BUTTER MARSHMALLOW CRISPIE BROWNIE BARS
These bars are seriously ridiculous because the are easy and SO rich. When I bring them for co-workers, they go biserk. Kids love them and grown men have been reduced to nothing but silence and eye rolling. Starts with a plain boxed brownie mix.

- Preheat oven to 350 degrees F.
- Grease the bottom of a 9" x 13" baking dish.
- Prepare and bake the brownies according to box directions.
- Remove from oven and immediately sprinkle with the mini marshmallows. Return to oven for another 3 minutes or until marshmallows just start to puff up.
- Remove from oven and set aside, allow to cool off a little bit.
- Place chocolate chips, peanut butter and butter in medium saucepan. Melt over low heat, stirring constantly to avoid burning.
- Remove from heat and add the crispie cereal, mix well.
- Drop spoonfulls of chocolate crispie mix over the marshmallows and spread across to cover the top.
- Allow to cool completely before cutting into bars.
- Might want to refrigerate if it's warm in the house.

- Using low heat, mix together your butter then butterscotch chips and peanut butter.
- When thoroughly blended, take off element and allow to cool enough not to melt the marshmallows. More time the better.

PEANUT BUTTER MARSHMALLOW CANDY BARS
I was given this recipe just last year and it reminded me of a recipe my mom made when we were kids. I had forgotten about it and now I can't forget it... These are way too easy and quick. They should come with a warning label...LOL You can use multi-colored marshmallows and if you want more of the butterscotch use only 1 bag of marshmallows. Everyone loves these!

- Melt butter in double boiler. Add rest of the ingredients and stir until all melted together and well blended. Make sure it's NOT too hot. Test with your finger. If its too hot, just let it set a couple of minutes.
- Place all of the marshmallows and nuts if using in a large bowl. Pour the hot mixture over them. Mix well.
- Put in a greased cookie sheet if you want thinner candy or a 9x13 pan if you want thicker candy. Sprinkle with coconut. You may toast it first or not. It's up to you. Cut into bars. Cover and Refrigerate.

- Heat oven to 350 Mix dry cake mix, butter and 1/3 cup milk until well blended; press 2/3 onto bottom of 9x13 pan. Bake 12 to 14 minutes, or until center is almost set. Cool 3 minutes. Combine peanut butter and remaining milk; spread onto crust. Top with small spoonfuls of the marshmallow creme and remaining cake mixture. Sprinkle with nuts and chocolate; press into cake mixture. Bake 18 minutes or until center is set. Cool completely before cutting into bars. If making ahead; prepare as directed; cool completely. Do not cut into bars. Wrap tightly and freeze. Thaw before cutting bars.
