Number Of Ingredients 7

1/2 cup butter, softened
1 cup chunky peanut butter
1 cup creamy peanut butter
3-3/4 cups confectioners' sugar
6 cups crisp rice cereal
2 cups semisweet chocolate chips
Chopped salted peanuts, optional

Steps:

  • In a large bowl, cream butter, peanut butter and confectioners' sugar; stir in cereal. Divide dough in half. Cover and refrigerate 1 hour or overnight. Working with half of dough, scoop into tablespoonfuls and shape into 1/2-in.x2-in.-thick logs. Place on waxed paper-lined pans., In a microwave-safe bowl, melt chocolate chips; stir until smooth. Dip or drizzle over logs. If desired, sprinkle with peanuts. Chill until set. Repeat with remaining dough. Store in an airtight container in the refrigerator.

I haven't met anyone yet, particularly men, who don't love these. Fairly simple and no bake. However, they do not freeze well, the crisp rice cereal will become soggy. After dipping the logs in glaze, consider rolling them in chopped walnuts or grated coconut.

1 (16 ounce) jar crunchy peanut butter
1 ½ cups confectioners' sugar
2 cups crisp rice cereal
1 ½ cups confectioners' sugar
¼ cup water

Steps:

  • Using your hands, combine the peanut butter, cereal, and 1 1/2 cups confectioners' sugar in a medium bowl until well mixed. Roll into log shapes about the size of your little finger.
  • Combine the remaining confectioners' sugar and water in a saucepan; bring to boil. Remove from heat and let stand a few minutes.
  • Dip each log into glaze . Place on racks until glaze becomes firm. Store in airtight container with waxed paper between layers.

1/2 cup honey or 1/2 cup molasses
1/2 cup peanut butter
1 cup powdered milk
chocolate chips (optional)
raisins (optional) or dried fruit (optional)
coconut (optional)
nuts (optional)

Steps:

  • Kneed all ingredients together with your hands, adding enough milk powder to form a stiff but not crumbly dough. This may be more or less than a cup depending upon how thin your peanut butter and honey are.
  • Optional ingredients can be kneaded in as well.
  • Shape into logs about 2-3 inches long and 1 inch in diameter.
  • Roll in powdered milk, confectioner's sugar or coconut.

These are a favorite of my family. I make them every Christmas, right along with the chocolate covered cherries.

2 stick butter
3/4 c peanut butter, crunchy
1 box powdered sugar
2 c graham cracker crumbs
1 pkg chocolate bark candy coating, melted

Steps:

  • 1. Melt butter and peanut butter together. (I do this in microwave in a large bowl.). Add 2 cups graham cracker crumbs and one box powdered sugar. Mix together. Shape into logs, about 1 1/2 inches long or you can shape into balls. Place on cookie sheet and refrigerate until set.
  • 2. Melt almond bark in microwave. Dip each log into chocolate, place back on cookie sheet and refrigerate again until hardened. I also sling white chocolate over these as an added touch.
  • 3. I leave a few of these out on a plate to return to room temperature for eating. But I store the rest in refrigerator until we want more.

3-3/4 cups confectioners' sugar
10 ounces sweetened shredded coconut (about 3-1/2 cups)
1 cup chopped pecans
1/2 cup graham cracker crumbs (about 8 squares)
2 teaspoons vanilla extract
2 cups semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In a large bowl, combine the first seven ingredients. Chill for 1 hour or until firm enough to shape. , Shape into 2-in. logs; place on a waxed paper-lined baking sheet. In a microwave, melt chocolate chips and shortening; stir until smooth. , Dip one end of each log into chocolate; allow excess to drip off or drizzle chocolate over logs. Return to waxed paper-lined sheet; chill until chocolate is set.

1 1/2 cups old-fashioned oatmeal, toasted
1 cup creamy peanut butter
1 1/2 cups nonfat dry milk powder
4 tablespoons butter
2 tablespoons honey
1/2 cup semi-sweet chocolate chips

Steps:

  • To toast the oatmeal, preheat oven to 350. Spread oatmeal on ungreased baking sheet and toast it until it is lightly browned, about 11 minutes, shaking once. Set aside to cool.
  • In a medium bowl, combine the peanut butter and the nonfat dry milk. Stir in the toasted oatmeal and set aside.
  • In a small saucepan over medium heat, melt the butter. Stir in the honey. Pour the butter mixture over the peanut butter mixture, and stir until well combined. Allow to cool slightly.
  • Shape into about 40 logs, each about 2 1/2 inches long. Place the logs onto a wire rack or parchment lined baking sheet and set aside.
  • Melt the chocolate chips, drizzle over peanut butter logs. Serve immediately or store covered in the refrigerator for up to one week.

1 c chunky peanut butter
1/4 c salted peanuts, chopped coarsely

Steps:

  • 1. In a mixing bowl, blend together peanut butter and margarine, stir in the confectioner's sugar.
  • 2. Add cereal, mixing well and crushing lightly.
  • 3. Shape into three logs.
