- Mix together the white sugar and water in a small saucepan over high heat and bring to a boil; boil for one minute. Remove from heat and stir in the peanut butter until melted well blended. Pour the warm sauce over ice cream to serve.

- In a 1-1/2-qt. microwave-safe dish, combine the brown sugar, corn syrup, butter and salt. Cover and microwave on high for 2-1/2 minutes or until mixture boils, stirring twice. Add peanut butter; stir until smooth. Stir in evaporated milk. , Serve warm over ice cream. Sprinkle with peanuts if desired. Cover and store in the refrigerator. To reheat, microwave at 50% power for 30-60 minutes or until heated through.

My two favorite ways to eat this......French vanilla ice cream, topped with Hot Fudge sauce and then this, OR a rich chocolate ice cream topped only with this and whipped cream!! The yield is a guess here as who has time to measure when the ice cream awaits?!!

Steps:
- Melt butter in a saucepan over medium heat. Stir in brown sugar until it softens. Slowly add milk and stir until sugar dissolves.
- Bring to a boil and cook until mixture reduces and thickens.
- Add peanut butter and mix thoroughly.
- Add peanuts and vanilla.
- Continue stirring until smooth.
- Serve warm over ice cream.

- Finely grind cookies in processor. Add butter; blend until moist crumbs form. Press crumb mixture over bottom and up sides of 9-inch-diameter springform pan with 2 3/4-inch high sides. Heat sauce in microwave or in small saucepan until warm. Pour 1 cup sauce over bottom of crust. Freeze 1 hour. Spoon ice cream over sauce in pan; smooth top. Freeze until firm, about 2 hours. Rewarm remaining sauce in microwave or saucepan until warm. Pour over ice cream, covering completely. Sprinkle nuts in 1-inch-wide border around edge of pie. Freeze until set, about hour. (Can be prepared 1 week ahead. Cover and keep frozen.)
- Run small sharp knife around pan sides to loosen crust. Release pan sides. Cut pie into wedges and serve.

PEGGY'S HOT PEANUT BUTTER TOPPING FOR ICE CREAM
This is a wonderful, simple recipe my mom came up with a few years ago. Kids and adults all seem to love this. It's great for informal get togethers. The real peanut butter is the key. You can use this along with hot fudge over vanilla ice cream for a real treat! I will have to post my Gram's malt shop hot fudge recipe to go along with it.

- Microwave peanut butter with enough sugar to taste for about 30 seconds. (Remember the ice cream will be sweet so the topping doesn't need to be as sweet. If you love sweet, go for it.).
- Stir well and keep microwaving and stirring every 20 to 40 seconds until completely hot and pour able.
- Taste to see if you like the peanut butter to sugar ratio and adjust accordingly.
- Pour over ice cream scoops.
- I don't really know if 1 cup of peanut butter will make four sundaes because I don't know how much ice cream you put in yours.
