GRANDMA'S PITTSBURGH FRIED BOLOGNA SANDWICH

Steps:
- Place a large skillet over medium heat. If you have a grill plate, this works even better as you have more surface area.
- Place 1 tablespoon of butter in the pan.
- When the butter is melted place 2 thin slices (1 one thick slice) of bologna (however many you can fit without crowding) in the pan. *note to prevent 'doming' prior to putting the bologna in the pan, cut a slit from the edge to the middle of the slice.
- Cook for 3-5 minutes per side or until the edges are golden brown.
- Flip the bologna over and cook for another 3 minutes or until the edges are golden brown.
- While the bologna is cooking (after you've flipped it) prepare the bread by spreading 1 tablespoon divided evenly on one side of each slice of bread. So if you're frying up only 2 pieces of bologna, only jelly 2 slices of bread.
- Place one slice down, jelly side up and place a small handful of potato chips on top.
- Take your fried bologna from the pan and place on top of the chips.
- Place another small handful of chips on top and then take the other slice of bread placing it jelly side down on top of the chips.
- Gently push down on the sandwich (some chips will break but that's OK).
- Take the melted butter and lightly brush the top of the sandwich.
- Working carefully, flip the sandwich over and place it buttered side down in the pan.
- Grill on each side for 4-5 minutes or until golden brown.
- Repeat steps for each sandwich if you aren't using a grill plate.
PEANUT BUTTER AND BOLOGNA SANDWICH

- Put 1 TB (or more) of peanut butter on each slice of bread.
- Add bologna to one slice of bread.
- Squirt on as much mustard as you desire.
- Top with second slice of bread.
- Enjoy!
FRIED BOLOGNA SANDWICH

- Spread one slice of bread with mayonnaise and the other slice with yellow mustard.
- Heat a medium skillet or griddle pan over medium-high heat. Make a 1-inch X in the center of each piece of bologna to keep it from curling up in the skillet. Wipe the skillet with a stick of butter until lightly greased. Add the bologna and fry a couple of minutes on each side until browned. Stack up the bologna in the skillet and top with the cheese. Cover with a large inverted bowl and heat until melted.
- Transfer the bologna to one of the slices of bread. Top with the chow chow, potato chips and lettuce. Top with the other slice of bread and give it a little push to crush the potato chips down a bit. Enjoy immediately.
GROWN-UP BOLOGNA SANDWICHES

- For the chipotle-mayonnaise spread: Combine the mayonnaise and chipotle pepper in a bowl, and blend until smooth. Refrigerate until ready to use.
- For the bologna: In a large pan on medium-high heat add the oil. Add the bologna chunks to the hot oil. Saute while tossing to brown all sides, about 8 minutes. Add the onions and season lightly with salt and a few grinds of pepper. Continue to toss while cooking until the onions are tender, about 5 minutes more. Stir in the mustard, and honey to coat, and then add the wine. Simmer while tossing until the wine bubbles and foams and is reduced to only a bit of sauce in the pan.
- To assemble the sandwiches, slather chipotle mayonnaise on each slice of toasted bread and top equally with the bologna. To serve as a smaller bite, cut the toasted bread into 1/4ths and continue to top as directed.
KITTENCAL'S FRIED BOLOGNA SANDWICH
This makes the best fried bologna sandwich, I think it's the buttered grilled buns that really add to the flavor! My DS loves this with a couple slices of dill pickles and chips. I like to sprinkle some garlic powder on top of the slices after spreading with butter, and before browning, but that is only optional.

- Slice each of the buns in half, then spread each side with about 2 teaspoons butter (can use more).
- Spray the pan with non-stick cooking spray or melt 1-2 tablespoons butter in the skillet until melted.
- Place the buns on the skillet buttered side down; leave untouched in the skillet for 1-2 minutes or until browned; remove to a plate and spread brown mustard on one or both sides of the buns (over the butter).
- Fry the bologna slices in the same skillet with a slit cut in the middle to prevent it from curling while frying turning once after it had developed that slighty burnt crispy coating on one side.
- Turn the slices over and place a slice (or two) of Swiss cheese on top, then continue to cook until the underneath part is browned and the cheese on top has melted; remove from skillet or griddle, then place the slices of cooked bologna onto each bun the top with onion slices then cover with the top part of bun.
- Delicious!
