Chocolate Peanut Butter Dreams image

These are good anytime for a chocolate lover. I make these ahead of time, place in the freezer and then do the chocolate coating as I need them.

Number Of Ingredients 12

1 ½ cups packed brown sugar
1 cup peanut butter
¾ cup butter, softened
⅓ cup water
1 egg
1 teaspoon vanilla extract
3 cups rolled oats
1 ½ cups all-purpose flour
½ teaspoon baking soda
1 ½ cups semisweet chocolate chips
4 tablespoons shortening
⅓ cup chopped peanuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sugar, peanut butter, and butter or margarine till fluffy. Blend in water, egg, and vanilla.
  • Combine oats, flour and baking soda and add to the mixture.
  • Shape into balls 1 inch in size. Place on ungreased cookie sheet, and flatten with a glass dipped in sugar. Bake 8 to 10 minutes. Cool completely.
  • In a saucepan over low-heat, melt chocolate and shortening, stir until smooth. Take 1/2 teaspoon and spread over each cookie, sprinkle with nuts. Chill until set.

½ cup butter
4 cups confectioners' sugar
2 cups creamy peanut butter
3 cups crisp rice cereal
2 cups semisweet chocolate chips
4 tablespoons shortening

Steps:

  • In a large mixing bowl, mix butter, sugar, peanut butter and crisp rice cereal together thoroughly.
  • Roll into small balls and set aside.
  • Melt chocolate chips and shortening in a small saucepan over low heat. Remove from heat. Coat the small balls in the chocolate mixture. Refrigerate for several hours.

These remind me of the Girl Scout peanut butter sandwich cookies--they're wonderful and "healthy" too with the oat flour! This recipe comes from an old Quaker Oats recipe booklet that I've had for over 15 years.

1 teaspoon vanilla
2 1/4 cups ground oat flour
2 teaspoons baking soda
1/4 teaspoon salt
1 cup coarsely chopped peanuts
1 cup vegetable shortening (regular or butter flavored)
1 cup creamy peanut butter or 1 cup crunchy peanut butter
1/2 cup granulated sugar
1 cup firmly packed brown sugar
2 eggs

Steps:

  • Ground oat flour: Place 1 to 1 1/2 cups oatmeal (quick or old-fashioned) in blender or food processor.
  • Blend or process for about 60 seconds.
  • Makes about 1 cup oat flour.
  • Beat together butter, peanut butter and sugars.
  • Blend in eggs and vanilla.
  • Add combined dry ingredients: mix well.
  • Stir in peanuts.
  • Drop by teaspoonfuls onto an ungreased cookie sheet and flatten with a fork dipped in sugar to form a crisscross pattern.
  • Bake in a preheated oven (350°) for about 10 minutes or until edges are golden brown.

chocolate (chips and morsels)
butter
flour
peanut butter
egg
vanilla
salt
sugar

Steps:

  • 2 squares unsweetened baking chocolate 12 oz of semi-sweet choc. morsels 1/2 t of vanilla 1/4 t of salt 3/4 C of sugar 3/4 C of flour 1 egg 1/2 C of butter 1/2 C of peanut butter Mix sugar and butter and salt in blender until creamy. Add egg and vanilla and blend. Add flour and blend. Melt all chocolate in double boiler and blend into the mix. Fold in peanut butter. Sometimes I let the dough chill a little and this might help keep the cookies from flattening out. Bake in 350 degree oven for 8 1/2 minutes, until firm and beginning to texture on the outside. Don't overbake!

FIRST LAYER
1 c brown sugar
1 c white karo syrup
2 c peanut butter
4 c rice krispies
SECOND LAYER
1/2 c butter - melted
4 Tbsp vanilla pudding mix (or french vanilla )
6 Tbsp milk
4 c powdered sugar
THIRD LAYER
1 c chocolate chips
4 Tbsp peanut butter

Steps:

  • 1. 1st LAYER: Melt the brown sugar, syrup, and peanut butter together. Add the Rice Krispies and stir until evenly coated. Press into the bottom of a buttered 9 x 13 baking pan.
  • 2. 2nd LAYER: Combine all the ingredients together and beat until thoroughly combined. Spread over the top of the 1st layer. Allow to chill before adding the 3rd layer
  • 3. 3rd LAYER: Melt the chocolate chips and peanut butter together and spread on top of the 2nd layer. Keep refrigerated.

Steps:

  • 1.Cream butter with peanut butter thoroughly;add 1/2cup brown sugar gradually,beating until fluffy.2.Add 1 cup flour in halves,mixing until blended after each addition. press evenly into greased 9x9x2-inch baking pan.3.Bake at350F 10 to 15 minutes, or until lightly browned.4.Meanwhile,beat eggs,extract, and 1 cup brown sugar until thick. Add a mixture of 1/3 cup flour and the baking powder:beat eggs, extract,and 1 cup brown sugar until thick. Add a mixture of 1/3 cup flour and the baking powder;beat until blended.5.Stir in coconut and chocolate pieces. Spread evenly over partially baked layer in pan.6.Return to oven and bake 30 minutes.7.Cool completely and cut into squares or bars makes about 2 dozen cookies.

These are so yummy! These are a peanut butter lovers, dream come true.. I use milk chocolate chips, for the coating.

1 lb powdered sugar
2 c peanut butter, creamy
3 c rice krispies
CHOCOLATE COATING
12 oz package chocolate chips
4 Tbsp vegetable shortening

Steps:

  • 1. Mix butter, sugar, peanut butter and rice krispies together thoroughly. Roll into small balls and dip in chocolate coating (below). Refrigerate for several hours.
  • 2. Melt chocolate chips and shortening in a double broiler. Coat the small balls in the chocolate mixture. Line the bottom a cookie sheet with wax paper to set them on. I always refrigerate them on the cookie sheet for 10-15 minutes before I remove them (so the coating sets)and put them into a container to keep in the refrigerator.

3/4 cup powdered sugar
1/3 cup creamy peanut butter
2 oz cream cheese
2 oz white chocolate, melted and cooled
2 tbsp butter, softened
3/4 cup milk chocolate finely chopped

Steps:

  • Blend first 5 ingredients together in medium bowl or mixer. Refrigerate until firm enough to shape, about 30 minutes. Line 2 baking sheets with wax paper. Roll peanut butter mixture into balls and set on first sheet. Refrigerate again until firm. Melt milk chocolate in double broiler, or microwave with 1/4 cup butter stirring frequently until smooth. Let cool slightly. Dip peanut butter balls into the cooled chocolate mixture. Place coated balls in cool place or refrigerate to harden.
