10 tablespoons unsalted butter (cubed)
¾ cup granulated sugar
½ cup light brown sugar
¾ cup unsweetened cocoa powder
½ teaspoon salt
1 tablespoon instant coffee granules
½ teaspoon baking powder
2 large eggs (cold)
2 teaspoons vanilla extract
⅔ cup all purpose flour
½ cup chocolate chunks or chocolate chips
walnuts (if desired)
1/2 cup 1 stick unsalted butter, softened
3/4 cup creamy peanut butter
2 1/4 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla
1/4 cup semi sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Line a 9 x 9 or 8 x 8 pan with aluminum foil or parchment paper. Lightly spray with cooking spray or grease with butter. Set aside.Add butter to a medium saucepan and cook over medium heat until light brown / caramel in color. 5-10 minutes. Make sure to keep and eye on it so butter does not burn. It also helps to use a light colored saucepan for this.
  • Pour browned butter into a large bowl along with both sugars, cocoa powder, salt, instant coffee granules and baking powder. Stir until combined and allow to rest for 5 minutes or until the mixture has cooled down.
  • Stir in the eggs and vanilla and mix until batter has a nice sheen to it.
  • Fold in the flour and chocolate chunks or chips and stir until combined. (Do not over mix)
  • Pour the batter into the prepared pan and bake for 20-25 minutes or until the top is set and a toothpick comes out clean.
  • Cool completely and lift out the aluminum foil or parchment paper.Frost with peanut butter frosting and drizzle with melted chocolate.
  • Cut into 9 brownies and serve.
  • In a stand mixer with the paddle attachment cream butter and peanut butter until light and fluffy, 2-3 minutes.
  • Add in powdered sugar, milk and vanilla and mix until smooth and lump free.
  • Set aside until you are ready to frost your brownies.
  • Melt chocolate in a small saucepan or in the microwave in 15 second intervals until melted.Pour the chocolate into a small ziplock bag and cut a small snip in the corner off of the bag.Set aside until you are ready to drizzle your brownies.

2 sticks unsalted butter, cubed
1 ½ cups semisweet chocolate chip, divided
1 ½ cups granulated sugar
¾ cup brown sugar
1 tablespoon vanilla extract
1 teaspoon kosher salt
3 large eggs, room temperature
1 ¼ cups all purpose flour
⅓ cup dark cocoa powder
2 cups powdered sugar
1 cup peanut butter
1 stick unsalted butter, melted
1 cup crispy rice cereal
8 oz milk chocolate chips
¾ cup heavy cream, hot
flaky sea salt, for garnish

Steps:

  • Make the brownies: Preheat the oven to 350°F (180°C). Line a 9-inch (23-cm) square baking pan with parchment paper and grease with nonstick spray.
  • Add the butter and 1 cup of the chocolate chips to a large microwave-safe bowl. Microwave for 1½ minutes, then let sit for 3 minutes before whisking until smooth. Add the granulated and brown sugars, vanilla, and salt. Whisk to combine. Whisk in the eggs until fully incorporated.
  • Sift the flour and cocoa powder into the bowl and fold to combine with a spatula. Add the remaining ½ cup chocolate chips and fold to incorporate.
  • Pour batter into the prepared pan and bake for 35-40 minutes, until a toothpick inserted in the center comes out with a few moist crumbs attached. Let cool completely.
  • Make the peanut butter filling: In a medium bowl, use a rubber spatula to mix together the powdered sugar and peanut butter until crumbly. Add the melted butter and mix with an electric hand mixer until smooth.
  • Scoop the peanut butter filling on top of the cooled brownies and use offset spatula to spread in an even layer. Sprinkle the crispy rice cereal on top. Freeze for 30 minutes.
  • Make the chocolate ganache: Add the chocolate chips to a medium heatproof bowl. Pour the hot cream over the chocolate chips and whisk until the chips are melted and the ganache is smooth.
  • Pour the ganache over the peanut butter filling. Use offset spatula to spread in an even layer. Garnish with flaky salt, if desired.
  • Return the brownies to the freezer until the ganache sets, about 15 minutes.

1 cup/225 grams unsalted butter (2 sticks)
1/3 cup/30 grams unsweetened cocoa powder
2 cups/400 grams granulated sugar
1 1/2 cups/190 grams all-purpose flour

1 teaspoon pure vanilla extract
1 (16-ounce/455 gram) jar creamy peanut butter
1/2 cup/115 grams unsalted butter (1 stick)

Steps:

  • Prepare the brownies: Heat the oven to 350 degrees. Coat a 9-by-13-inch pan lightly with cooking spray and line it with parchment paper, leaving a 2-inch overhang on the two long sides.

  • Prepare the frosting: In a medium saucepan, melt the butter and marshmallows over medium heat, stirring often, until both are melted and no lumps remain, about 5 minutes. Add the confectioners' sugar, milk and cocoa, and whisk until smooth, about 2 minutes.
  • Spread the frosting over the peanut butter layer and freeze for 30 minutes.
  • Remove the brownies from the pan: First, cut the brownies away from the pan edge on both short sides, then lift them out using the parchment paper handles. Cut into 24 squares. Keep refrigerated.

Beat in egg and milk on low just until combined. Carefully spread over batter. Drop reserved batter by tablespoonfuls over filling.
