1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla
1 1/4 teaspoons sugar
2 large eggs
1/2 cup whole milk
1 peeled and thinly sliced banana
2 teaspoons honey
1/4 cup peanut butter
8 slices white bread
1/2 cup granola
1 1/2 tablespoons unsalted butter
maple syrup

Steps:

  • Preheat oven to 350 °F. Place the granola in a shallow bowl; set aside.
  • Spread each slice of bread with peanut butter. Drizzle honey evenly over peanut butter. Divide the banana slices among four slices of the bread; top with the remaining bread, peanut butter sides down. Remove the crusts and tightly pinch the edges of each sandwich together to seal.
  • In a medium bowl, whisk together the milk, eggs, sugar, vanilla and cinnamon. Soak each sandwich in the egg mixture for 5 seconds. Roll the edges of each sandwich in granola.
  • In a large skillet, heat the butter over medium-high heat. Add the sandwiches, working in batches if necessary; cook about 2 minutes per side or until golden. Transfer the sandwiches to a baking sheet; bake for 10 minutes. Serve immediately with maple syrup.

6 slices day-old white or wheat bread
1 to 2 ripe bananas
8 tablespoons creamy peanut butter
Honey, for drizzling
4 eggs
1/4 cup heavy cream
1 tablespoon vanilla
1 tablespoon dark rum
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
Dash salt
Butter or oil, for frying
Powdered sugar, for topping
Maple Syrup, for topping

Steps:

  • Remove crust from bread. Lay bread out on counter and spread a thin layer of peanut butter on each slice. Peel banana and slice enough to cover every other piece of bread. (You will be making 3 complete sandwiches). Drizzle a small amount of honey on each piece of bread that does not have banana on it. (These are the tops). Place honey drizzled piece of bread on top of a piece with bananas on it to make a sandwich. Repeat until you have made 3 sandwiches.
  • In a shallow medium sized bowl, gently whip, by hand, the eggs, cream, vanilla, rum, cinnamon, nutmeg, and salt.
  • Heat skillet to medium heat, around 350 to375 degrees F, or until butter melts and begins to sizzle. Dip 1 sandwich at a time into rum batter and place into skillet. Cook until golden brown (about 3 to 4 minutes before turning) on each side. Remove from skillet and cut in 1/2 diagonally. Top with powdered sugar, butter and maple syrup.

1 dash vanilla extract
2 tablespoons creamy peanut butter
2 slices bread
1 small banana, sliced
2 tablespoons butter

Steps:

  • In a small bowl, lightly beat the egg and vanilla together.
  • Spread 1 tablespoon of peanut butter on top of each slice of bread. Place the banana slices on top of one of the slices of bread. Place the other slice of bread on top of the first, to make a peanut butter and banana sandwich.
  • In a skillet or frying pan, melt the butter over medium heat. Dip the sandwich into the egg mixture and place in the heated skillet. Cook until brown on both sides. Serve hot.

So good--so easy! I bought a $10 sandwich maker from WalMart and it came with a few recipes, one was for a Monte Cristo (which is ham n cheese, dipped in egg and cooked like French toast). So I thought I could try something similar.

4 slices whole wheat bread
2 tablespoons peanut butter
1 medium banana, sliced
3 eggs
2 tablespoons milk
1 pinch cinnamon (optional)
1/4 cup sliced and sugared strawberry, with (optional)
sugar
maple syrup
cooking spray

Steps:

  • Plug in and turn on your sandwich maker.
  • If your bread is the "larger" size, cut the bread to fit your sandwich maker.
  • Slather 2 pieces of bread with as much peanut butter as you like.
  • Lay sliced bananas on the peanut butter to cover sandwich.
  • Place the last two slices of bread on top of the bananas (if you really like peanut butter, you may peanut butter them first).
  • In a small dish, beat together eggs, milk and cinnamon.
  • Spray sandwich maker down with Oil Spray.
  • Take each sandwich and turn it in the egg to coat.
  • Place in sandwich maker and close until finished.
  • On a plate place the sandwiches. I like to top with some strawberries n sugar (like shortcake strawberries) and a little maple syrup.

Steps:

12 slices bread
6 tablespoons jelly or jam
3 large eggs
3/4 cup 2% milk
1/4 teaspoon salt
2 tablespoons butter
