Triple Layer Banana Cake /w Peanut Butter Fudge Icing image

A year around family favorite, the recipe for this moist layer cake was passed on to me by my mother. Children can't keep their fingers out of the icing, which tastes just like peanut butter fudge. This is a Taste of Home recipe, which I shamefully call my own at family gatherings. LOL (after all , I did bake it!)

3/4 c butter ,softened, do not use margarine
2 c granulated sugar or 1/2 c. brown sugar and 1 1/2 c. granulated sugar
3 large eggs
1 1/2 c over ripe bananas, mashed
2 tsp vanilla
3 c all purpose flour
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/4 tsp salt
1 c dairy butter milk
ICING:
6 Tbsp creamy peanut butter
3 Tbsp butter,soft
1 tsp karo corn syrup
5 1/2 c powdered sugar
8 to 10 Tbsp milk- 2% is ok
peanut halves or pieces, for garnish or walnut halves

Steps:

  • 1. Cake: In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas and vanilla. Combine the flour, baking powder, soda, and salt; add to creamed mixture alternately with buttermilk, beating after each addition. Pour into 3 greased and floured 9-inch round baking pans. Bake at 350^ for 25 to 30 minutes or until toothpick test is clean. Cool for 10 minutes in the pan, before removing from pan to wire racks to cool completely. --- Icing: In a large bowl, beat the peanut butter, butter and corn syrup until smooth. Beat in powdered sugar and enough milk to be of spreading consistency. Frost between layers and over sides and top of cake. Garnish around top edge of cake and center with a single row of nuts.

1 large ripe banana
2/3 cup butter or 2/3 cup margarine
2 teaspoons vanilla extract
2 1/2 cups rolled oats
1/2 cup packed brown sugar
1 cup semi-sweet chocolate chips
1/2 cup peanut butter

Steps:

  • Finely chopped banana (1-1/4 cups).
  • Melt butter in large skillet over medium heat; stir in vanilla.
  • Add oats and brown sugar.
  • Heat and stir 5 minutes.
  • Set aside 3/4 cup oat mixture.
  • Press remaining oat mixture into greased 9-inch square baking pan.
  • Sprinkle banana over crust.
  • Melt chocolate chips and peanut butter together over low heat.
  • Pour and spread over banana.
  • Sprinkle with reserved oat mixture; press down lightly.
  • Chill 2 hours before cutting.
  • Store in refrigerator.

1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.)
1/2 cup creamy peanut butter
1/3 cup water
1 pkg. (3.4 oz.) JELL-O Banana Cream Flavor Instant Pudding
3 cups powdered sugar
1/3 cup PLANTERS COCKTAIL Peanuts, coarsely chopped
2 oz. (1/2 of a 4-oz. pkg.) BAKER'S Semi-Sweet Chocolate
2 Tbsp. butter or margarine
2 Tbsp. chopped dried banana chips

Steps:

  • Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave first 3 ingredients in large microwaveable bowl on HIGH 2 min. or until peanut butter is melted; stir with whisk until chocolate is completely melted and mixture is well blended.
  • Add dry pudding mix; stir 2 min. Add sugar, 1 cup at a time, stirring after each addition until blended. Stir in nuts; press onto bottom of prepared pan.
  • Microwave semi-sweet chocolate and butter in large microwaveable bowl 1-1/2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Spread over fudge layer in pan; sprinkle with banana chips. Refrigerate 2 hours or until firm. Use foil handles to lift fudge from pan before cutting into squares.

1/2 banana, mashed
3/4 cupbaking stevia or 1 1/2 cup sweetener of choice that measures like sugar
1/2 cup low-fat milk
4 tablespoons cocoa powder
3 cups quick-cooking oats
1/8 teaspoon salt

Steps:

  • Put mashed banana and peanut butter together in a large skillet and cook over medium-low heat, stirring until peanut butter and banana are combined. Once the peanut butter is melted, take the skillet off the heat and add the rest of the ingredients, stirring until everything is well combined. Drop cookie dough (about 1/8th cup per cookie) on a baking sheet lined with wax or parchment paper (or foil sprayed with cooking spray), patting cookies into desired shape.
