What makes the perfect breakfast cookie? I've determined that people like a low-sugar cookie. They also really like oatmeal. As far chocolate? Less is more. These breakfast cookies are easy to make, assemble and serve-and are definitely not your average oatmeal-and-raisin cookies.

3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)
  • Scoop out the dough with a cookie scoop, and form balls with your hands, pressing the dough together very tightly. Place the balls on the prepared baking sheet. Bake until the edges start to brown, 12 to 15 minutes.

1 cup mashed bananas or 2 ripe bananas
1/3 cup peanut butter (natural if you have it)
1/2 cup unsweetened applesauce
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups old fashioned oats
1/2 cup shredded coconut

Steps:

  • Preheat oven to 350.
  • Mash bananas with a fork and mix in peanut butter, apple sauce, vanilla, salt, and cinnamon.
  • Stir in oats and coconut.
  • Drop by tablespoon onto a non stick cookie sheet (lined with parchment paper or sprayed with non-stick spray). I use a small cookie scooper.
  • Flatten a bit to shape the cookie (they don't rise or spread at all when baking).
  • Bake for 12-15 minutes, rotating the pan halfway through.

10 slices bacon
2 1/4 cups all-purpose flour
1/4 teaspoon baking soda
3/4 teaspoon salt
2 sticks (8 ounces) unsalted butter, softened
1/4 cup mayonnaise
3/4 cup granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tablespoons creamy peanut butter
2 teaspoons pure vanilla extract
3/4 cup semisweet chocolate chunks
1/2 cup chopped salted peanuts
1/2 cup sweet dried banana chips, roughly chopped

Steps:

  • Cook the bacon in a skillet until crisp, then drain on paper towels. Once the bacon is cool, roughly chop it (you should have about 1/2 cup).
  • Combine the flour, baking soda and salt in a medium bowl. In a large bowl, beat the butter, mayonnaise and sugars with a mixer at medium speed until fluffy, about 3 minutes. Beat in the eggs, one at a time, until well blended. Add the peanut butter and vanilla and beat until combined.
  • At low speed, add the flour mixture in batches, beating until just combined. Using a wooden spoon, stir in the chocolate chunks, bacon, peanuts and banana chips. Cover the bowl with plastic wrap and chill for at least 30 minutes or overnight.
  • Position the racks in the upper and lower thirds of the oven and preheat the oven to 325 degrees F. Line 2 muffin tins with paper liners.
  • Fill the muffin tins about halfway full with the batter (a 2-inch, 2-ounce ice cream scoop gives you just about the perfect amount, and helps prevent spilling).
  • Bake until the tops are slightly golden and a toothpick inserted into the center comes out clean, about 30 minutes. (Keep in mind that the cookies won't rise and form a dome like a cupcake.) Let cool in the muffin tins on wire racks for about 10 minutes, then unmold the cookie cups and transfer them to the racks to cool completely.

4 bananas
2 tablespoons fresh lemon juice
1 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper. Place a metal mixing bowl in the freezer.
  • To make the cookies, cream together the brown sugar, granulated sugar, and butter. Add the peanut butter, egg, and vanilla, and mix until well combined. In a separate bowl, whisk together the oats, flour, baking soda, baking powder, cinnamon, and salt until well combined. Add this to the sugar mixture and stir until a soft cookie dough forms.

  • To make the whipped cream, take the bowl out of the freezer, add the cream and honey, and then beat until soft peaks form.
  • Peel and slice the bananas into 1/4-inch rounds. Sprinkle the slices with the lemon juice to prevent them from turning brown.
  • To assemble, place a layer of cookies and bananas in the bottom of an 8-inch square baking dish. Layer on half of the pudding. Add another layer of cook ies and bananas and then top with the remaining pudding. Spread on top the whipped cream, and then decorate with the remaining cookies and bananas. Chill for at least 4 hours before serving, though if you prefer, you can eat it warm.
  • Alternatively, you can serve the pudding in six 1/2-pint Mason jars or bowls. Evenly divide the cookies, sliced bananas, and pudding, and then proceed as above.

I had peanut butter, I had frozen bananas, I had oatmeal, I had raisins, and I wanted cookies. I just couldn't find the right recipe, so modified what I could find and came up with this one. The resulting cookies are pretty good, but are missing "something". I can't put my finger on it. If it was a savory recipe, I would say it needed more salt. Otherwise, I was pretty happy with them. They make a soft cookie with a good bite.

3/4 cup creamy peanut butter
3/4 cup white sugar
1/4 cup brown sugar
1 egg
1 cup mashed bananas or 4 medium bananas
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
3/4 teaspoon cinnamon
1 3/4 cups oatmeal
1/2 cup chocolate chips or 1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees F.
  • In a medium bowl, wisk together flours, baking soda, salt, nutmeg, and cinnamon. Stir in oatmeal and set aside.
  • In a large bowl, cream together peanut butter and sugars. Add egg and banana and mix well.
  • Pour dry ingredients into wet ingredients bowl and mix together thoroughly with large spoon. Stir in nuts, chocolate chips, or raisins (I used raisins in my first batch -- didn't have either nuts or chocolate chips).
  • Batter will be fairly wet, so put bowl in fridge for 15 minutes to firm up.
  • Prepare baking sheets with parchment paper. Drop cookie dough by teaspoons onto sheets. Bake for 12-13 minutes. Cool on racks. (Note: return bowl to fridge in between baking.) Makes 36-45 cookies, depending on how big they are.

1/3 cup peanut butter (low fat)
2 bananas
1 teaspoon vanilla
2 tablespoons skim milk
2 tablespoons sugar-free maple syrup
2 1/2 cups oatmeal
1 dash cinnamon (optional)
1/4 cup whole wheat flour

Steps:

  • In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined.
  • Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.

My family really enjoyed these cookies. When I made these cookies I used no sugar added peanut butter, regular margarine, the 1/3 cup bananas plus 1/2 banana to use it up, plus I needed to add more flour as the dough was way to soft. I got this recipe from Ossg Recipes.

1/2 cup peanut butter (at room temperature)
1/4 cup fat-free margarine, softened
1/3 cup mashed ripe banana
1 egg
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 cup Splenda granular, sugar substitute
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Cream peanut butter, margarine, banana, egg and vanilla until light and fluffy. Mix remaining ingredients separately. Blend into peanut butter mixture until smooth.
  • Form into 1 inch balls. Place on baking sheets. Flatten with fork to desired thickness. Bake at 350°F for 10 to 12 minutes or until golden brown on bottoms. Cool on rack.

I found this recipe on a paper bag of bananas from my local Weis market. They're simple and yummy and my kids can't seem to get enough of them! It's also a great way to use up ripe bananas.

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 small ripe banana, mashed (about 1/2 cup)
1/3 cup light brown sugar, firmly packed
1/4 cup margarine or 1/4 cup butter
1/4 cup peanut butter (creamy or chunky. They also suggest using reduced fat but I never have)
1 large egg
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375.
  • Spray baking sheets with vegetable cooking spray.
  • Combine flour and baking soda in a small bowl.
  • In a medium bowl, beat together banana, brown sugar, margarine and peanut butter until light and fluffy using an electric mixer on medium speed.
  • Beat in egg and vanilla.
  • Gradually beat in flour mixture until a dough forms.
  • Shape dough into 1 inch balls, placing them 2 inches apart on baking sheets.
  • Using the tines of a fork dipped in flour, press crisscross patterns onto each cookie.
  • Bake cookies in batches until edges are set, about 10 minutes.
  • Place baking sheets on wire racks and cool completely.
