PB&J TEA SANDWICHES

1/2 cup creamy peanut butter
3 tablespoons mascarpone, at room temperature
2 teaspoons honey
1/4 teaspoon pure vanilla extract
20 thin slices pound cake (from one 10.75-ounce cake)
10 teaspoons grape jelly or your favorite jam

Steps:

  • Combine the peanut butter, mascarpone, honey and vanilla extract in a medium bowl. Using a rubber spatula, mix everything together until smooth and evenly combined.
  • Spread 10 slices of pound cake with 1 tablespoon of the peanut butter mixture. Then spread with 1 teaspoon grape jelly. Complete the sandwiches with a second slice of pound cake. Use a 1 1/2-inch fluted round cutter to cut out little finger sandwiches.

2 slices whole wheat bread (preferably soft)
1 teaspoon butter, the secret ingredient
1 tablespoon peanut butter (I use organic smooth)
2 teaspoons strawberry jam (I use Trader Joe's low sugar)

Steps:

  • Spread a half teaspoon of butter on each slice of bread.
  • Spread one slice with peanut butter.
  • Swirl jam into peanut butter.
  • Cover with other slice of bread.

6 tablespoons creamy peanut butter
12 slices cinnamon-raisin bread, lightly toasted
6 tablespoons whipped cream cheese
6 tablespoons strawberry jelly

Steps:

  • Spread peanut butter over each of 6 bread slices. Spread cream cheese, then jelly, over remaining 6 bread slices. Top with peanut butter bread slices. Cut each sandwich into 4 triangles.

8 slices white bread (or your choice of cinnamon swirl, raisin, apple, etc.)
1/4 to 1/2 cup peanut butter
4 to 6 teaspoons grape jelly (or your choice of jelly, jam, or preserves)
1 1/2 cups all-purpose flour
3/4 cup cornstarch
41/2 teaspoons baking powder
12 ounces carbonated energy drink (recommended: Red Bull) or seltzer water, for carbonation
1 quart canola oil (approximately, as needed for deep-frying)
1 teaspoon ground cinnamon
2 tablespoons sugar

Steps:

  • Lay out the slices of bread and spread approximately 1 tablespoon peanut butter on each of 4 slices and approximately 1 teaspoon jelly on each of the other 4 slices. Pair them together to make peanut butter and jelly sandwiches.
  • Heat canola oil in a deep-fryer to 375 degrees F. Mix flour, cornstarch, and baking powder and add energy drink in a stream while whisking constantly. Dip sandwiches into the batter or ladle batter over them.
  • Deep-fry until golden brown. Drain on paper toweling. Mix cinnamon and sugar in a bowl and sift onto fried sandwiches while they are still hot. Slice the donut sandwiches into diagonal quarters while still warm, and serve.

2 slices white bread
1 teaspoon peanut butter
2 teaspoons any flavor fruit jelly

Steps:

  • Heat griddle or skillet to 350 degrees F (175 degrees C).
  • Spread butter on one side of each slice of bread. Spread peanut butter on unbuttered side of one slice of bread, and jelly on the other. Place one slice, buttered side down on the griddle. Top with other slice, so that peanut butter and jelly are in the middle. Cook for 4 minutes on each side, or until golden brown, and heated through.
