APPLE PEANUT BUTTER DELIGHTS

6 whole-wheat English muffins
1 cup peanut butter
2 medium Granny Smith apples, cored and thinly sliced
1/2 cup sugar
1 tablespoon ground cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees F.
  • Halve the muffins and spread a heaping tablespoon of peanut butter on each half. Layer the apple slices on the peanut butter. Mix the sugar, cinnamon and nutmeg together in a small bowl and sprinkle about 2 teaspoons on top of each muffin half.
  • Put the muffin halves on a baking sheet and bake for 10 minutes. Set the oven to low broil and cook until bubbly and caramelized, about 3 minutes.

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

4 whole wheat tortillas
1 cup thinly sliced sweet apple (works best with sweet, not tart apples)
1/2 cup honey
1/2 cup peanut butter
1 teaspoon Splenda sugar substitute (optional)
2 teaspoons cinnamon

Steps:

  • Lay tortillas flat.
  • Spread peanut butter evenly between then tortillas, completely covering in a thin layer.
  • Drizzle the honey evenly between the tortillas on top of the peanut butter.
  • Put one layer of thin apple slices on top of the honey and peanut butter.
  • Sprinkle with cinnamon and Splenda, if desired.
  • Roll up and cut into bite-sized pieces or serve whole.
  • (Depends on who is eating this. As adults, we just bite in, but we cut it into smaller, more manageable pieces for my nephew).
