8 granny smith apples, peeled, and quartered
2 tablespoons all-purpose flour
1/4 cup brown sugar
1 tablespoon lemon juice
1/4 cup maple syrup
1/2 cup all-purpose flour
1/2 teaspoon cinnamon
1/4 cup brown sugar
4 ounces unsalted butter, chilled, and cut into small cubes
1/2 cup peanut brittle, chopped
1/4 cup peanuts, chopped
vanilla ice cream (for serving)

Steps:

  • Preheat oven to 375 degrees.
  • Rub butter to coat bottom of a 9x13 inch baking dish.
  • In a large bowl, mix all the filling ingredients, toss to coat the apples, and pour into the baking dish.
  • In another large bowl, combine all the topping ingredients except for the ice cream, and mix well.
  • Using both hands, mix topping ingredients in the bowl together until the mixture forms small lumps.
  • Sprinkle this mixture over the apple filling , and bake in a preheated ovenfor 50 minutes.
  • Let cool 15 minutes.
  • Serve with vanilla ice cream.

1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 cup packed brown sugar
1/8 teaspoon salt
1/4 cup chilled stick margarine or butter, cut into small pieces
1/2 cup coarsely broken peanut brittle (about 2 ounces)
7 cups peeled sliced Granny Smith apple (about 2 pounds)
3 tablespoons orange marmalade
2 cups low-fat vanilla frozen yogurt

Steps:

  • Preheat oven to 375 degrees F. Lightly spoon the flour into a dry measuring cup, and level with a knife. Combine flour, sugars, and salt in a bowl; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal. Add peanut brittle, stirring to combine. Arrange apple in an 8-inch square baking dish; spoon marmalade over apple. Sprinkle flour mixture over marmalade. Bake at 375 degrees F for 40 minutes. Serve warm. Top with yogurt.
