I located this recipe in my local grocery store (Hannaford) sale circular. I plan on making this for Easter Sunday dessert so am posting on Zaar for safe keeping. It really sounds simple and delicious!

Number Of Ingredients 13

3/4 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 (4 ounce) package vanilla pudding mix (not instant)
3 tablespoons butter, softened
1 egg
1/2 cup milk
1 3/4 cups canned peaches, drained, juice reserved
8 ounces cream cheese, softened
1/2 cup sugar
3 tablespoons reserved peach juice
1 tablespoon sugar
1/2 teaspoon cinnamon

Steps:

  • Preheat oven to 350 degrees.
  • Grease pie plate.
  • combine first 7 ingredients in medium bowl; mix with electric mixer on medium speed, 2 minutes.
  • Pour into prepared pie plate; place peaches over batter.
  • In separate bowl, combine cream cheese, 1/2 cup sugar and 3 tblsp. reserved peach juice.
  • Mix on medium speed, 2 minutes; pour over peaches.
  • Combine remaining sugar and cinnamon and sprinkle over top of pie.
  • Bake 30-35 minutes.

For crust
1/2 cup unsalted butter, melted
1/2 teaspoon almond extract
2 1/2 cups shortbread cookie crumbs (about 10 ounces)
For filling and topping
8 ounces Philadelphia-brand cream cheese, room temperature
3/4 cup powdered sugar
1/2 cup whipping cream
1 teaspoon vanilla extract
1/2 teaspoon almond extract
3 large peaches, peeled, pitted, sliced
2 1/2-pint baskets fresh blackberries
1/4 cup peach jam, melted

Steps:

  • Make crust:
  • Preheat oven to 325°F. Butter 10-inch-diameter glass pie dish. Blend butter and extract in medium bowl. Mix in crumbs. Press crumb mixture over bottom and up sides of prepared dish. Bake crust until just golden, about 8 minutes. Cool crust completely.
  • Make filling and topping:
  • Blend cream cheese in processor until smooth. Add sugar, cream, vanilla extract and almond extract and blend until very smooth, occasionally scraping down sides of bowl. Spread filling in prepared crust. Refrigerate until filling is firm, about 2 hours. (Can be prepared 1 day ahead. Cover and keep refrigerated.)
  • Arrange peach slices around edge of pie. Arrange blackberries in center. Brush warm jam lightly over fruit to glaze. Refrigerate pie up to 3 hours.

This is a nice cool refreshing dessert. Came up with this one night while looking through what I had. You could also place strawberries instead of the peaches.

2 pkg cream cheese, room temperature
2 tsp lemon juice
2 tsp vanilla extract
1 c sugar
1/4 c sour cream
1 can(s) peaches drained and patted dry
YOU CAN USE ONE PEACH PEELED AND SLICED.
YOU CAN USE A GRAHAM CRACKER OR FROZEN PRE BAKED PIE SHELL.

Steps:

  • 1. Bake your pie crust according to directions. You can also use graham cracker pie shell for this as well.
  • 2. Open your can/jar of peaches and drain well. Lay your peaches on a paper towel and pat dry. I slice mine up, just enough to cover the bottom, but not fill the shell.
  • 3. Mix with your hand mixer the cream cheese, sugar, sour cream, lemon juice and vanilla. Just til it's nice and creamy. Set aside.
  • 4. Once your pie crust is baked remove from oven and allow to cool.
  • 5. Once cooled lay your peaches across the bottom of the crust.
  • 6. Spoon your cream cheese mixture over the top of the peaches in the pie shell spreading gently to cover the top to the edges.
  • 7. Cover and place in the fridge for an hour.

2 (15 ounce) cans peaches (drained-reserve)
1 (8 ounce) package soft cream cheese
1/2 cup sugar
2 tablespoons sugar
1 tablespoon cinnamon

Steps:

  • Pre-heat oven to 350.
  • Butter 10 inch deep dish pie pan.
  • Combine flour, pudding, salt& baking powder.
  • Add butter, egg& milk.
  • Pour into prepared pan.
  • Arrange peach slices on batter in a nice spiral pattern~ sprinkle with cinnamon and sugar In small bowl combine cream cheese, sugar& 4 tablespoons peach syrup.
  • Mix for 2 minutes Carefully spoon cream cheese mixture on peaches to about a 1/2 inch from edge.
  • Bake for 35 minutes.
  • Remove and cool on rack completely.
  • Refrigerate before serving.
