Simple Crepe Recipe with Peaches and Cream image

Crepes are a piece of cake with this Simple Crepe Recipe with Peaches and Cream! Homemade crepes are filled with a cream cheese mixture and topped with fresh sautéed peaches for a delicious dessert or decadent breakfast.

1 cup milk
1 cup water
4 eggs
1 teaspoon vanilla extract
2 cups flour
2 tablespoons sugar
1/2 teaspoon salt
1/4 cup butter, melted and slightly cooled
1 cup heavy whipping cream
8 oz cream cheese, softened
2 cups powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 cup butter
1 cup brown sugar
6 cups peeled, sliced peaches
1/2 teaspoon almond extract

Steps:

  • In a blender, combine the milk, water, eggs and vanilla extract. Pulse to combine. Add in the flour, sugar and salt and pour the butter on top. Pulse again until all of the ingredients are combined and the batter is smooth. Cover the batter and refrigerate for about 30 minutes.
  • While the batter is sitting, make the filling. In a large bowl, beat the cream until stiff peaks have formed. Set aside. In another bowl, beat the cream cheese until it is smooth, then slowly add in the powdered sugar until combined. Beat in the extracts. Add about 1/4 of the whipped cream to the mixture and stir with a rubber spatula. Add the remaining cream and fold it in gently. Refrigerate the mixture until needed.
  • To make the crepes, very lightly butter a small skillet (I use an 8-inch nonstick skillet) and place over medium low heat. Once hot, add about 1/4 cup of batter to the skillet and using your wrist, tilt the pan around to spread the batter, forming an even, thin crepe. Let the batter cook for a minute or two, then loosen the sides with a rubber spatula and flip the crepe over. Cook the second side for another minute or two, then remove to a plate. Repeat with the remaining batter, only buttering the pan if the batter starts to stick. (I usually only butter it once in the beginning - sometimes I need to again halfway through, but not usually.)
  • To make the peaches, melt the butter in a large skillet. Add the sugar and stir to combine, then add in the peaches. Cook until the peaches start to get soft and give up some of their juices and a syrupy sauce is created, a few minutes. Turn the heat off and stir in the almond extract.
  • To serve, spread some of the cream over a crepe, then fold in half twice. Top with the peaches. I like this best when the peaches are warm, but it's also good when the peaches are cold.

My mother-in-law passed this recipe on to me. The special ingredient, almond extract, gives it a distinctive, delicious flavor.

1 cup milk
4 large eggs
1 cup all-purpose flour
2 tablespoons sugar
2 tablespoons butter, melted
1 teaspoon vanilla extract
FILLING:
3/4 cup sugar
2 tablespoons cornstarch
1 cup water
8 medium peaches, peeled and thinly sliced (about 4-1/2 cups), divided
2 tablespoons butter
1/2 teaspoon almond extract
Whipped cream and ground nutmeg, optional

Steps:

  • In a blender, combine the milk, eggs, flour, sugar, butter and vanilla. Cover and process until smooth. Cover and refrigerate for 1 hour., Meanwhile, in a large saucepan, combine sugar and cornstarch. Gradually whisk in water until smooth. Stir in 2 cups peaches and butter. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir in almond extract and remaining peaches. Cover and refrigerate., Heat a lightly greased 8-in. nonstick skillet over medium heat; pour about 2 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between., Spoon filling over crepes; roll up. Top with whipped cream and nutmeg if desired.

2 ounces cream cheese, softened

1/3 cup each fresh blueberries, strawberries and raspberries

One of my favorite breakfasts, easy and quick to make and they go fast! Some of my recommendations for a little twist (I mix and match!): -If you desire sweeter crepes, omit the salt and add 2 tablespoons sugar -Try spreading a little cream cheese before filling the crepes -Add 1/4 cup of fresh berries, your choice (corresponding to your yogurt flavor, I recommend strawberry, which should be thinly sliced) -Garnish with whipping cream is desired

2 eggs
1 1/2 cups milk
1 cup all-purpose flour
1 tablespoon cooking oil
1 cup 2% fat cottage cheese
1/2 cup sweetened yogurt (I use yoplait or activia)
1/4 cup fresh berries

Steps:

  • Combine cottage cheese, yogurt and berries (optional) and set aside.
  • Combine eggs, milk, flour, oil and salt, beat until well mixed.
  • Heat a lightly greased 8 inch skillet to spread batter.
  • Prepare squares of wax paper to transfer cooked crepes.
  • Remove well heated skillet from heat and spoon in about 3-4 tablespoons of batter.
  • Lift and tilt the skillet to evenly spread the batter around the pan.
  • Return to heat and brown on one side.
  • Invert over to waxed paper and remove crepe.
  • Repeat with remaining batter, occasionally re-grease.
  • Spoon 1/6 of filling into the middle of each prepared crepe and roll. This recipe produces thin rolls, adding optional fruit or additional fruit will make them more bulky. (Some times it's fun to lay out the crepes, the filling and other ingredients out, to create your own "fajita" style meal.).

2 fresh peaches - peeled, pitted and chopped
3 tablespoons white sugar
½ teaspoon ground nutmeg

½ cup sour cream
2 tablespoons brown sugar
1 ½ cups all-purpose flour
1 tablespoon white sugar
½ teaspoon baking powder
½ teaspoon salt

2 cups milk
2 eggs
2 tablespoons melted butter
½ teaspoon vanilla extract
2 fresh peaches, pitted and sliced

Steps:

  • Stir together the cottage cheese, chopped peaches, 3 tablespoons white sugar, 1/4 teaspoon salt, and the almond extract in a bowl until evenly combined. Stir together the sour cream and brown sugar in a separate bowl. Refrigerate both fillings until ready to use.
  • Whisk together the flour, 1 tablespoon of white sugar, the baking powder, 1/2 teaspoon salt, and the nutmeg in a bowl. Beat the eggs, milk, butter, and vanilla extract in a separate bowl until smooth. Stir in the flour mixture until no lumps remain.
  • Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle to form silver dollar-sized blintzes. Cook until bubbles form and the edges are dry, about 2 minutes. Flip, and cook until browned on the other side. Repeat with remaining batter.
  • To assemble, spread 1 tablespoon of peach filling on top of each blintz. Stack together 5 blintzes to make a serving portion, and spoon the sweetened sour cream overtop. Garnish with peach slices.

I make these using a crepe recipe I just make them a little thicker.

1 c all purpose flour
2 eggs
1/2 c milk
1/2 c water
1/4 tsp salt
2 Tbsp butter, melted
cream cheese frosting
canned or fresh peaches

Steps:

  • 1. in a large mixing bowl, whisk together the flour and eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter beat until smooth.
  • 2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle/pan, using approx. 1/4 cup for each crepe( a little more for blintz). Tilt the pan with a circular motion so that the batter coats the surfae evenly.
  • 3. Cook the crepe for about 2 minutes, until the bottom is lightly brown. Loosen with a spatula, turn and cook the other side.
  • 4. Once crepe is cooked immediately place on a large plate and fill with frosting and peach slices. Fold burrito style and serve. May garnish with powdered sugar.
