PEACH JAM WITH AMARETTO LIQUEUR



Peach Jam with Amaretto Liqueur image

Opinions differ how this jam tastes best. Some members of our family like it as a spread on toast, others add it to a bowl of natural yogurt. Both are very tasty.

4 ½ cups finely chopped, peeled peaches
2 tablespoons lemon juice
3 cups sugar
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
⅓ cup amaretto liqueur, or more to taste

Steps:

  • Inspect 5 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Mix peaches with lemon juice in a large pot immediately after chopping to prevent peaches from turning brown. Place pot over medium heat.
  • Mix 1/4 cup of the sugar with pectin and add it to the pot with the peaches. Stir well. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Add the remaining sugar and stir well, scraping the bottom of the pot, to fully dissolve the sugar. Cook for 1 minute, stirring constantly.
  • Remove from heat and stir in amaretto liqueur.
  • Ladle peach jam immediately into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

1 cup peach, diced
3 cups vodka
2 cups sugar
1/4 cup water
1 teaspoon glycerin (optional)

Steps:

  • In a quart jar, add peaches, 1 cup sugar, and vodka. (I use frozen peaches as the freezing process breaks down the cell walls, allowing you to get more juice)
  • Seal jar tightly, and place in a dry, dark place for about 2 weeks.
  • After two weeks, strain the liquid using a double layer of cheese cloth. Gently squeeze the peaches, getting as much juice from the peaches as possible.
  • In a fresh quart jar, add the second cup of sugar, water to top and the strained liquid. Seal and store again in a dark place until sugar is dissolved.
  • Once the sugar has all dissolved, bottle the resulting liqueur in a fresh bottle and let age for roughly 3 months.

1 (750 milliliter) bottle chardonnay wine (such as Wente®)
1 cup elderflower liqueur (such as St. Germain®)
2 fresh peaches, sliced
1 pint fresh strawberries, sliced
½ cup fresh raspberries, or more to taste
½ cup fresh blueberries, or more to taste
½ cup fresh blackberries, or more to taste
ice cubes

Steps:

  • Pour chardonnay and elderflower liqueur into a pitcher; add peaches, strawberries, raspberries, blueberries, and blackberries. Stir and let fruit soak for at least 2 hours.
  • Fill wine glasses with ice and pour in sangria.

Microwave Peach Jam With Orange Liqueur image

This recipe is from the book "Small Batch Canning" by Topp and Howard. I haven't made this yet but the peaches are starting to hit the farmer's market and it looked simple and easy.

3 cups peaches, peeled and chopped
2 cups granulated sugar
2 tablespoons lemon juice
2 tablespoons orange liqueur (or frozen orange juice concentrate, thawed)

Steps:

  • Place peaches and sugar in a deep 8 cup microwavable container.
  • Stir in lemon juice.
  • Microwave, uncovered, on High (100%) for 7 minutes, stirring twice.
  • Microwave uncovered, on High for 12 to 15 minutes or until mixture will form a gel, stirring every 4 minutes.
  • Stir in liqueur.
  • Ladle into sterilized jars and process 5 minutes in boiling water.

I haven't tried this yet but I did taste it at a get together. It was wonderful. Prep time does not include 2-3 weeks for liqour to set.

2 lbs peaches
2 cups sugar
1/2 liter vodka
1/2 cup peach schnapps

Steps:

  • Rinse peaches, dry, slice and peel.
  • Put into big jar, sprinkle with sugar. Wait few days (fruit must give juice). Then add alcohol and vodka.
  • Close jar tightly. Wait 2-3 weeks. Strain liquid to remove any pulp
  • Pour into a blender anad puree.
  • Then pour into clean bottle and close tightly.
