GINGER PEACH VODKA SLUSH



Ginger Peach Vodka Slush image

Make a ginger peach vodka slush to cool off this summer! Made with frozen peaches, this frozen cocktail is filled with fruity flavor.

2 cups peach slices (frozen)
1 cup ice
3/4 cup ginger ale
3 ounces vodka

Steps:

  • Pour the ginger ale and vodka into a blender. Add peaches and ice. Cover and blend until mixture is smooth and no chunks remain. If mixture is too thick or difficult to blend, add an additional 1/4 cup of ginger ale.
  • Pour into highball glasses and serve immediately.

1/4 cup sliced fresh ginger, with skin
2 cups granulated sugar
2 cups cold water
10 ounces semi-frozen peaches
1/2 cup ginger simple syrup
Ice cubes
1 bottle Champagne

Steps:

  • Begin by making the ginger simple syrup. Peel and grate the ginger. Add it together with the sugar and cold water to a saucepan. Bring it to the boil and stir until the sugar dissolves. Cover and let steep for 15 minutes. Strain, discard ginger pieces and set simple syrup aside.
  • In a blender add frozen peaches and ginger simple syrup. Blend until completely pureed then place into the refrigerator to cool.
  • For serving:
  • Add ice cubes to a cocktail shaker and fill half way with peach puree. Top off with Champagne and shake vigorously to combine. Pour into Champagne glasses and repeat process as needed.

4 ½ cups fresh peaches - peeled, pitted and chopped
¼ cup finely chopped crystallized ginger
1 (1.75 ounce) package powdered fruit pectin
6 cups white sugar
½ teaspoon butter

Steps:

  • Bring peaches, ginger, and pectin to a boil in a large saucepan over medium heat. Stir in the sugar and butter; cook and stir until the sugar is dissolved. Return to a boil, stirring constantly for 1 minute more. Remove from heat, and skim off any foam with a spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the peach jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

1 yellow pepper, diced
1 hot red pepper, diced
1/2 cup crystallized ginger, chopped (candied ginger)
2 cups cider vinegar
3 cups sugar
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground mace

Steps:

  • Prepare fruit and vegetables.
  • Put in heavy saucepan and add remaining ingredients.
  • Bring to a boil, stirring constantly.
  • Turn heat to a simmer, cook until desired consistency.
  • Ladle into hot jars leaving 1/2 inch headspace.
  • Wipe rims and seal.
