My mother always asked our family what we wanted to eat for holiday dinners. Without exception, our requests included this refreshing gelatin. Toasted walnuts give it a little crunch. -Dennis King, Navarre, Florida

1 can (29 ounces) sliced peaches, drained
1-1/2 cups boiling water
2 packages (3 ounces each) lemon gelatin
1 can (12 ounces) ginger ale, chilled
1/3 cup chopped walnuts, toasted

Steps:

  • Arrange half of the peach slices in a 6-cup ring mold coated with cooking spray. In a small bowl, add boiling water to gelatin; stir 2 minutes to completely dissolve., Stir in ginger ale. Pour half of the mixture over peaches; sprinkle with walnuts. Refrigerate 30 minutes or until set but not firm. Let remaining gelatin mixture stand at room temperature., Carefully arrange remaining peach slices over gelatin in mold. Spoon remaining gelatin mixture over top. Refrigerate until firm. Unmold onto a serving plate.

Peach-Cranberry Gelatin Salad image

Harvest colors and flavors give this refreshing salad a delightful twist that's just right for Thanksgiving or any special meal. I use lime gelatin instead of peach for green and red salad at Christmastime. -Patty Kile, Elizabethtown, Pennsylvania.

2 packages (3 ounces each) peach or orange gelatin
4 cups water, divided
1 cup orange juice
2 cans (15 ounces each) sliced peaches, drained
1 package (6 ounces) cranberry or raspberry gelatin
1 cup cranberry juice
2 large oranges, peeled
2 cups fresh or frozen cranberries
1 cup sugar

Steps:

  • Place peach gelatin in a large bowl. Bring 2 cups of water to a boil; pour over gelatin. Stir until dissolved. Add orange juice and mix well. Chill until partially set. , Fold in peaches. Pour into a 3-qt. serving bowl. Chill until firm. Place cranberry gelatin in another bowl. Bring remaining water to a boil; pour over gelatin. Stir until dissolved. Add cranberry juice and mix well. , In a food processor, combine the oranges, cranberries and sugar; process until the fruit is coarsely chopped. Add to the cranberry gelatin. Carefully spoon over gelatin. Chill until set.

2 pkg peach gelatin
2 c boiling water
2 c cold water
15 oz crushed pineapple (drained, reserve juice)
1 c mini marshmallows
TOPPING INGREDIENTS
1/2 c pineapple juice
1/2 c sugar
1 egg, slightly beaten
2 Tbsp butter
2 Tbsp flour
8 oz cream cheese
8 oz whipped topping

Steps:

  • 1. Make gelatin - Let set and add marshmallows and fruit.
  • 2. Cook juice, sugar, egg, butter and flour until thick.
  • 3. Add cream cheese, stir until dissolved. Let cool.
  • 4. Fold mixture into whipped topping and spread on gelatin mixture.
