1/4 cup butter, softened
1/2 cup sugar
1 cup all-purpose flour
1/4 cup chopped walnuts
FILLING:
1 package (8 ounces) reduced-fat cream cheese
3/4 cup confectioners' sugar
1 carton (8 ounces) frozen reduced-fat whipped topping, thawed, divided
7 medium peaches, thinly sliced
GLAZE:
3 tablespoons cornstarch
2 cups water
1 package (.3 ounce) sugar-free lemon gelatin

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Gradually add flour (mixture will be crumbly). Stir in walnuts. Press into a 13-in. x 9-in. baking dish coated with cooking spray. Bake at 350° for 14-16 minutes or until lightly browned. Cool on a wire rack. , For filling, in a large bowl, beat cream cheese and confectioners' sugar until smooth. Fold in half of the whipped topping. Carefully spread over crust. Top with peaches. , For glaze, in a small saucepan, combine cornstarch and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir in gelatin until dissolved. Cool to room temperature. Spoon over peaches. Cover and refrigerate until firm. Dollop with remaining whipped topping.

I love this salad, and I've made it with both peach and apricot jello, and love them both. Quite refreshing! It's a great salad for a pot luck. Enjoy!

1 (15 oz.) crushed pineapple in its own juice
1 large box apricot jello - or can use peach
1 - 8 oz cream cheese, softened
1/2 c sugar
1 large jar - apricot baby food or can use peach
1 - 8 oz cool whip
1/2 c chopped, walnuts

Steps:

  • 1. In a medium sauce pan, bring the pineapple and juice to a boil - stir in jello until dissolved and simmer for 5 minutes. Set aside to cool.
  • 2. In large bowl, beat the cream cheese and sugar together until well blended. Add the pineapple mixture and baby food, then mix until well blended.
  • 3. Fold in cool whip & nuts.
  • 4. Spread into a 9 x 13 baking dish and refrigerate until set.
  • 5. Serve salad as is or with whipped cream. I sometimes sprinkle nuts on top, before refrigerating. Enjoy! I find this salad refreshing.

This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

2 cups self-rising flour
1 cup melted butter
1 cup nuts
1 (8 ounce) package cream cheese
2 1/2 cups confectioners' sugar
1 (8 ounce) carton whipped topping
4 cups sliced peaches
1 cup sugar
4 tablespoons cornstarch
4 tablespoons peach Jell-O
1 cup water

Steps:

  • Layer 1.
  • Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.
  • Layer 2.
  • Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.

A friend gave me this recipe years ago. She used all sugar-free, low-fat ingredients to make it suitable for diabetics. I lost the recipe but a JAP friend found it in a magazine. My original version is only slightly different. This tastes like a wonderful, light summery dessert and no one will know it's a diabetic dessert.

1 prepared sugar-free, fat-free angel food cake (8 - 10 ounces), cut or torn into 1-inch cubes
1 package (0.3 ounce) sugar-free raspberry gelatin
1 c boiling water
1 c cold water
1 can(s) (15 ounces) sliced peaches in juice, well drained, cut into halves
3 c cold, fat-free milk
1 package (1.5 ounces) sugar-free vanilla pudding
1 carton (8 ounces) reduced-fat, sugar-free cool whip
optional: garnish with fresh raspberries or peach slices

Steps:

  • 1. Arrange cake cubes in a 13-in. x 9-in. dish.
  • 2. Mix gelatin with hot water until dissolved, then add cold water. Mix well and pour immediately over cake cubes.
  • 3. Arrange peaches over gelatin.
  • 4. In a large bowl, whisk milk and pudding mix for 2 minutes. Let stand for 2 minutes or until soft-set. Spoon over peaches.
  • 5. Top with Cool Whip.
  • 6. Cover and refrigerate for at least 2 hours before cutting.
  • 7. Top with fresh raspberries or peach slices.
  • 8. Variations I have tried: Substitute sugar-free strawberry gelatin for the raspberry, use fresh sliced strawberries instead of the peaches, and top the Cool Whip with fresh blueberries for a colorful and delicious Fourth of July dessert.

This is another of those recipes my mom and I found when cleaning out one of her kitchen closets. It was cut from a Betty Crocker cake mix box. If you like peaches you'll love this cake!

1 (16 ounce) can sliced peaches (in light syrup)
1 (18 1/4 ounce) package yellow cake mix
1/3 cup oil
3 eggs
1 (6 ounce) container peach yogurt
1 (4 ounce) container frozen whipped topping

Steps:

  • Preheat oven to 350 degrees. Grease and flour 2 8-inch or 9-inch round cake pans.
  • Drain the peaches, reserving the syrup. Add enough water to the syrup to make 1 1/4 cups. In a large bowl, beat cake mix, syrup, oil and eggs until well combined.
  • Pour batter into prepared pans. Bake at 350 degrees, 27 to 32 minutes for 8-inch pans or 23 to 28 minutes for 9-inch pans. Cool 10 minutes in pan, then remove to wire rack and cool completely.
  • Cut peaches into bite-sized pieces. Mix yogurt and whipped topping, then fold in peaches. Place 1 layer of cake on serving plate; top with 1/2 of the whipped topping mix. Cover with the second cake layer and frost top with remaining whipped topping mix. Refrigerate about 2 hours before serving.

For graham cracker crust and topping:
2 cups crushed graham crackers
1/2 cup unsalted butter-melted
6 tablespoons sugar
For peach filling :
5 cups fresh peaches-peeled and diced into 1 inch peaces (about 6-7 medium peaches)
2 cups water
1 cup sugar
3 tablespoons cornstarch
1 (3 oz.) package peach Jello
For cheesecake layer:
8 oz. cream cheese-room temperature
3/4 cup powdered sugar
1 teaspoon vanilla
1 (8 oz) carton Cool Whip

Steps:

  • Preheat oven to 375 F. In a bowl combine crushed graham crackers and 6 tablespoons sugar. Add melted butter and stir with a fork until all crumbs are moistened. Take out 1½ cup crumbs and set aside for topping. Press the remaining crumbs into the bottom of a 13×9 inch baking dish bake for 8 minutes. Set aside to cool. In a sauce pan combine water, 1 cup sugar and cornstarch, stir well and bring to a boil. Add the package of peach jello and stir to dissolve. Remove the mixture from heat and allow to cool completely, then add diced peaches, stir and pour over cooled crust. Place in the fridge until set (about 4 hours). Cream together powdered sugar, cream cheese and vanilla. Fold in cool whip and spread over the top of peach filling. Place in the fridge to set and top with the 1 ½ cup reserved graham cracker crumb mixture before serving.

I saw this on an episode of 'Come Dine with Me' the other day. The measures I have given are what I have tried and are approximate since none were given on the show. Feel free to add either more brown sugar or butter as per your taste. It is served along with a scoop or two of vanilla ice cream. I didn't have ice cream on hand so I had it just like that and quite liked the earthy flavour of the brown sugar sauce.

1 package of white or yellow dry cake mix
1/3 cup butter, room temperature
2 large eggs, divided
29 ounce can of peach slices, drained
8 ounces of Cream Cheese, room temperature
1/3 cup of sugar
1 teaspoon Vanilla Extract

  • Preheat oven to 350 degrees. Spray a 13 x 9 pan with cooking spray. In large bowl combine cake mix, butter, and 1 egg. Mix until crumbly. Set aside 1 1/2 cups of crumbs for topping. Press remaining crumbs in bottom of prepared pan. Bake 10 minutes.
  • Cut Peach slices into 1 inch pieces. You can use frozen or fresh peaches if you choose but I like canned for this particular recipe because of the short baking time. Spoon into partially baked crust. In large bowl combine cream cheese, sugar, 1 egg and vanilla extract. Beat with mixer until creamy. Spoon over peaches. Sprinkle with reserved crumbs. Bake 30 minutes. Chill at least 30 minutes before serving. Refrigerate leftovers.

I was looking for something quick, simple and sweet, for dessert but not too sweet. I looked through the cupboards and this is what I came up with. It just hit the spot, not to sweet and definitely quick. My youngest son ate two bowls of it.

2 cup(s) special k vanilla almond cereal, crushed to 1 cup (could use a similar favorite)
1/3 cup(s) brown sugar, firmly packed

dash(es) cinnamon and/or nutmeg

Steps:

  • Preheat oven to 350*.
  • In small bowl combine cereal, sugar, flour, and butter; mix well and set aside.
  • Place drained peaches in ungreased 2-quart casserole dish. Sprinkle a little (or to taste)cinnamon and nutmeg over the peaches. I used a little sprinkle of both.
  • Top with cereal mixture. Bake 15-20 minutes or until golden brown.
  • Serve with either a little cream poured over the top while still warm, a scoop of vanilla ice cream, or a little (or a lot) of whip cream. I chose a little cream for my serving and it just kicked it up a notch on the comfort level.

2 poundw powdered sugar
2 eggs
1 package vanilla wafers or graham cracker crumbs
3 cups sliced fresh peaches -approx 6-7 peaches depending on size. (Can used canned crushed pineapple too)
1 pint whipping cream or 2 packages of dream whip whipped

Steps:

  • Mix graham cracker crumbs with enough butter to moisten. Press into bottom of 13x9x2 cake pan. Combine remaining melted butter, powdered sugar & eggs. Beat until very fluffy. Spread mixture over crumbs. If mixture is too stiff to spread evenly add one more egg & beat in. Cover mixture with peaches right away. (If sugar mixture is exposed to the air for too long it gets a crust on it) Then layer with whipped cream and graham cracker crumbs on top.

Rich Custard Ice Cream or whipped topping (optional)

  • * Cooking Time: 8 to 9 minutes Power: 100% (700 watts) Standing Time: At least 15 minutes Place butter in a medium microwavable bowl. Microwave, uncovered, at 100% power (700 watts) for 45 to 60 seconds or until melted. Stir in granola, brown sugar, flour and cinnamon. Press half of the mixture in bottom of a 9-inch microwavable pie plate.Peel and slice peaches (you will need about 2 cups).* Arrange peaches evenly in pie plate. Sprinkle with sugar.
