This is one of my adopted recipes and. I have now made this. I used my own shortbread crust #72584 but you can use any crust you want. I also made my own Peach Pie filling but for speed use a can of peach pie filling.

1 shortbread pie crust
1 egg yolk, beaten
1 (21 ounce) can peach pie filling
1/2 cup flour
1/2 cup sugar
1 cup flaked coconut
1/4 cup margarine, melted

Steps:

  • Preheat oven to 375°F. Brush bottom and sides of crust with egg yolk; bake on baking sheet until light brown, about 5 minutes. Spoon peach filling into crust.
  • Combine flour, sugar, coconut, and margarine in a small bowl. Mix until well blended. Spread over peach filling.
  • Bake on baking sheet for 30 to 35 minutes, or until filling is bubbly and topping is light brown.

1 cup plus 6 1/2 tablespoons sugar
3/4 cup water
6 tablespoons dark corn syrup
3 cinnamon sticks, broken in half
6 whole cinnamon graham crackers, crushed to coarse crumbs
4 1/2tablespoons unsalted butter, melted
6 medium peaches, pitted, sliced into wedges
1 1/2 tablespoons fresh lemon juice
3/4 teaspoon ground cinnamon
French vanilla ice cream
6 cinnamon sticks (optional)

Steps:

  • Stir 1 cup plus 2 tablespoons sugar, 3/4 cup water, corn syrup and halved cinnamon sticks in heavy medium saucepan over medium heat until sugar dissolves; bring to boil. Reduce heat to low; simmer until syrup is reduced to 1¤ cups, about 20 minutes. Cool; remove cinnamon sticks. (Can be made 1 week ahead. Cover; refrigerate.)
  • Preheat oven to 350°F. Combine cracker crumbs, butter and 1 1/2 tablespoons sugar in small bowl; toss to coat evenly. Spread mixture out on small baking sheet. Bake until golden, stirring occasionally, about 5 minutes. Cool.
  • Mix peaches, 3 tablespoons sugar, lemon juice and ground cinnamon in medium bowl. Let stand until juices form, at least 15 minutes and up to 1 hour.
  • Place 2 scoops of ice cream in each of 6 bowls. Spoon peaches and juices over ice cream. Drizzle with syrup and sprinkle with crunch topping. Garnish with cinnamon sticks, if desired, and serve.

I have revised this recipe. Cooks have told me it has been too juicy. When it is time to fill a pie shell,(if you desire) you can peel two apples and add sliced apples to this filling or raisins and nuts if you wish.Sprinkle 1/4 cups flour and 8 dots of butter before adding top crust. If you don't want a top crust,I have added recipe for oatmeal crunch crust.(Due to juicyness of some peaches i have revised this recipe and hope you now do not have any problems with it. Also slice your peaches at least 1/2 inch slices in width or a little more.

14 cups fresh sliced peaches, with juice (skins removed)
1 1/2 cups light brown sugar, firmly packed
2 1/2 tablespoons vanilla
2 1/2 tablespoons allspice
4 cups water
2 cups white sugar
1 1/4 cups cornstarch
cold water
1 1/4 cups dry oatmeal
1/2 cup white flour or 1/2 cup rice flour
1/2 cup butter
1/2 teaspoon powdered anise
1/2 cup brown sugar
1/2 teaspoon salt
1/3 cup milk

Steps:

  • In large bowl add peaches with juice, brown sugar, vanilla and allspice. Stir to mix.
  • Set aside.
  • In large 8 guart stockpot, add 4 cups water, white sugar, and stir until dissolved.
  • Heat the peach mixture until hot, medium heat. Do not burn. Stir.
  • Add cornstarch and enough cold water in small bowl and stir until dissolved and stirable.
  • Add to syrup mixture and stir on medium heat. The syrup will be cloudy and then clear as the syrup starts to thicken.
  • Add hot peach mixture and cook for 10 minutes until it starts a rolling boil.
  • Cook 2 minutes.
  • Fill hot pint jars, wipe with clean damp cloth on the rim, seal with hot seals, rings and tighten.
  • Place in a hot water bath for 15 minutes.
  • Preparation for Oatmeal Crunch Crust:.
  • In medium bowl, add the first six ingredients. Mix well.
  • Sprinkle on the top of the filled pie shell.
  • 10 minutes before end of baking pie, sprinkle milk over the crust.
  • You can make a cobbler with this recipe also. Just grease the pan before adding the filling. I like to use my batter recipe for a cobbler.

2 tablespoons lemon juice
1/2 cup sugar
2 tablespoons cornstarch
1 pinch nutmeg
1 pinch salt
1 pinch lemon zest
1 1/3 cups all-purpose flour

1 1/4 teaspoons baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, cold, cut into cubes
1/2 cup buttermilk or 1/2 cup heavy cream
1/2 cup whole unblanched almond, Coarsely chopped
3 tablespoons light brown sugar, Packed
1/2 teaspoon cinnamon

Steps:

  • For Cobbler: In food processor, combine flour, sugar, baking powder, and salt. Pulse to combine. Add cold butter and pulse until mixture is crumbly.
  • Drizzle most of buttermilk /cream over flour mixture, pulse to combine. If mixture seems dry, add a little more. Dough should be just moist. Gather the dough and spread out onto lightly floured parchment or waxed paper.
  • Patting into a Disc a little less than 1/2-inch thick chill for 1/2 hour.
  • For Fruit: Slice peaches into wedges, toss with lemon juice. In a small bowl, combine cornstarch, spices, pinch of salt and lemon zest. Toss with the peaches and pour unto lightly greased 8-inch baking dish.
  • To assemble: On a lightly floured surface, using a fluted cutter or any shaped cutter, cut out biscuits.
  • Gently re-roll scraps and arrange over fruit, slightly overlapping.
  • Brush biscuits with cream.
  • In a small bowl, combine almonds, brown sugar and cinnamon.
  • Sprinkle over dough.
  • Place in the oven and cook until fruit is bubbling, biscuits are golden, and a skewer poked into the center of the biscuit dough comes out clean.
  • Serve warm with ice cream, heavy cream or creme anglaise.

1 - 9 " unbaked pie crust
2 eggs
1 tbsp lemon juice
1/3 cup sugar
1 cup graham cracker crumbs
Sliced peaches
½ cup almonds, toasted and chopped
1/4 cup melted butter

Steps:

  • Prepare pastry and bake at 450 degrees for 5 minutes. Beat eggs and lemon juice. Stir in sugar and add peaches. Turn into shell. Combine cracker crumbs, nuts, and butter and sprinkle over peaches. Cover edge of pie with foil and bake at 375 degrees for 20 minutes. 2 x 200ml tubs low-fat crème fraîche
85-100g demerara sugar

Steps:

  • Heat grill to high. Stone and slice the peaches. Place the biscuits in a plastic food bag and crush with a rolling pin. Arrange the peaches and the crumbled biscuits in the bottom of an ovenproof dish. Spoon over the crème fraîche, smooth with a knife so the peaches are entirely covered, then sprinkle over enough sugar to cover the crème fraîche.   • Melt 1/2 cup of butter,and drizzle over the dry cake mix in pan. Mix 1 cup of chopped pecans with 1 tablespoon melted butter. Mix together with 1/4 cup of granulated sugar. Sprinkle on top of cake mix. Press down slightly with back of spoon. Place in oven and bake at 350 for 1 hour.

3 to 4 tablespoons ice water
TOPPING
1 cup all-purpose flour
2/3 cup sugar
1 teaspoon ground cinnamon
5 tablespoons unsalted butter, melted
FILLING
7 cups sliced peeled peaches (1 inch thick) (about 3 1/2 lb.) *
3 tablespoons sugar
2 to 3 tablespoons all-purpose flour (depending on juiciness of peaches)
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice

Steps:

  • 1. Pulse all of the crust ingredients, except butter, shortening and water, in food processor to combine. Add 6 tablespoons butter and shortening; pulse until mixture resembles coarse crumbs with some pea-size pieces. With processor running, add 3 tablespoons water; pulse until moist clumps form, adding additional water 1 teaspoon at a time if necessary. Shape into flat round; cover and refrigerate 1 hour or until chilled. (Dough can be made 1 day ahead; cover and refrigerate.) 2. Heat oven to 375°F. 1 (20 ounce) can crushed pineapple
1 (18 ounce) box yellow cake mix (Duncan Hines works best)
3/4 cup sugar
3 cups peach slices (frozen or fresh)
1/4 cup sugar
1 cup butter

Steps:

  • Preheat oven to 350 degrees.
  • Butter a 9x13 pan all over
  • Drain pineapple thoroughly. Pressing as much juice out as you can.
  • Melt the sticks of butter.
  • Cut peach slices into thirds to better fit in pan.
