SPICY CHIPOTLE PEACH BARBECUE SAUCE WITH FRESH PEACHES



Spicy Chipotle Peach Barbecue Sauce With Fresh Peaches image

The classic combination of a good barbecue sauce flavors, this chipotle peach barbecue sauce has them all: sweet, tangy and spicy. Try it on everything!

2 fresh peaches (peeled and diced)
3 tablespoons butter
½ yellow onion (minced)
1 clove garlic (grated)
2 tablespoons honey
½ teaspoon smoked paprika
4 chipotle chiles in adobo
1 cup tomato sauce
1 tablespoon Worcestershire sauce
¼ cup apple cider vinegar
Kosher salt and freshly cracked black pepper (to taste)

Steps:

  • Peel and dice up the peaches to the desired consistency you would like. Use a food processor or blender to make smooth, if desired. Set aside.
  • In a medium saucepan melt the butter over medium heat. When the butter starts to foam, add the onion cook until softened and start to turn golden brown; about 5 to 10 minutes.
  • When the onions are golden, add in the garlic. Cook for one more minute. Stir in the peaches and any rendered juices, honey, smoked paprika, tomato sauce, Worcestershire sauce and apple cider vinegar. Using a spoon, press chipotle chiles through a sieve into a saucepan; discard solids inside the sieve. Bring to a boil. Boil for one minute, stirring constantly. Reduce heat to a simmer. Continue to simmer for 20 to 30 minutes, stirring occasionally to ensure it doesn't stick to the bottom of the pan.

Don't know if it's 'correct' or authentic but it's good. Hubby had me make a batch to can. Of course, you can add as much or little chipotle as your palate desires. Next time, I plan to use prepared chili sauce instead of the ketchup.

2 (24 ounce) jars peaches, undrained
1 onion
1/2 cup molasses
1/4 cup brown sugar
2 tablespoons ketchup
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon chipotle chile in adobo
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1 teaspoon salt

Steps:

  • Combine all ingredients in food processor & puree.
  • Simmer in saucepan over medium low heat until reduced by 1/3. Taste for seasoning!

1 (28-ounce) can crushed tomatoes
1 cup packed brown sugar
2 tablespoons molasses
3/4 cup chunky peach preserves
1/2 cup ketchup
1/4 cup chili sauce (Recommended: Heinz)
1/4 to 1/3 cup apple cider vinegar
1/4 cup Worcestershire sauce
2 tablespoons rice vinegar
1/2 teaspoon chipotle chile powder
Salt

Steps:

  • In a large saucepan, stir together the tomatoes, sugar, molasses, 1/2 cup peach preserves. ketchup, chili sauce, apple cider vinegar, Worcestershire sauce, rice vinegar, and chipotle powder. Simmer over medium heat until the sauce is thickened and flavors have blended, about 30 minutes.
  • Let the sauce cool slightly, about 10 minutes. Transfer the sauce to a blender with the remaining 1/4 cup peach preserves; season with salt to taste. Cool completely, then store in the refrigerator for up to 2 weeks.

1/4 cup Heinz chili sauce
1/4 to 1/3 cup apple cider vinegar
2 tablespoons rice vinegar
2 tablespoons molasses
1/4 cup Worcestershire sauce
1/2 teaspoon chipotle chile powder
1/2 to 1 teaspoon coarse salt

Steps:

  • In a large saucepan, combine tomatoes, sugar, 1/2 cup peach preserves, ketchup, chili sauce, both vinegars, molasses, and Worcestershire sauce, stirring after the addition of each ingredient to combine. Add chipotle powder and bring to a simmer over medium heat; simmer until flavors have blended and sauce has thickened slightly, about 30 minutes.
  • Remove sauce from heat and let cool slightly. Using an immersion or regular blender, puree sauce. Add remaining 1/4 cup peach preserves and season with salt. Let stand for 5 minutes and stir again. Let cool completely. Sauce may be kept refrigerated, in an airtight container, for up to 2 weeks.

3 tablespoons brown sugar
2 tablespoons kosher salt
1 teaspoon pepper
1/2 teaspoon cayenne pepper
8 pounds pork baby back ribs (about 3 racks)
6 medium peaches, peeled and sliced
2 tablespoons olive oil
2 large sweet onions, finely chopped
2/3 cup packed brown sugar
4 finely chopped chipotle peppers in adobo sauce plus 2 tablespoons sauce
3 tablespoons white vinegar
4 teaspoons ground mustard

Steps:

  • Preheat oven to 325°. In a small bowl, combine brown sugar, salt, pepper and cayenne. If necessary, remove the thin membrane from back ribs; discard membrane. Rub brown sugar mixture over ribs. Transfer to large roasting pans. Add 1 in. hot water. Bake, covered, until ribs are tender, 2-1/2 to 3 hours., Meanwhile, place peaches in a blender; cover and process until smooth. In a large saucepan, heat oil over medium heat. Add onions; cook and stir until tender, 12-15 minutes. Add brown sugar, chipotle peppers, adobo sauce, vinegar, mustard and peach puree; bring to a boil. Reduce the heat; simmer, uncovered, until slightly thickened, 25-30 minutes., Drain ribs. Grill ribs, pork side down, covered, on an oiled rack over medium heat until browned, 5-7 minutes. Turn ribs; brush with 2 cups sauce. Cook 5-7 minutes. Serve with remaining sauce.
