3/4 cup fresh or frozen blueberries
3/4 cup fresh or frozen cranberries
1 teaspoon vanilla extract
Pastry for double-crust pie (9 inches)

Steps:

  • In a large bowl, combine sugar, flour, cornstarch, salt and nutmeg. Add fruit and vanilla; toss to mix. Let stand for 15 minutes, stirring occasionally. , Line a 9-in. pie plate with bottom pastry; add filling. Dot with butter. Roll out remaining pastry; make a lattice crust. Seal and flute edges. , Bake at 375° for 50-55 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.

The best part of summer is the fresh, juicy fruit available in grocery stores or farmers' markets. This pie is my own creation after visiting the market and seeing beautiful berries and peaches for sale. After experimenting with different fruits and sugar levels, I have put together a fresh berry and peach pie that just screams 'summer is here!'

1 pastry for a 9 inch double crust pie
1 egg white, lightly beaten
3 fresh peaches - peeled, pitted, and sliced
1 pint fresh strawberries, hulled and large berries cut in half
1 pint fresh blueberries
2 (6 ounce) containers fresh raspberries
⅓ cup all-purpose flour
3 tablespoons cornstarch
½ cup brown sugar
½ cup white sugar
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
2 tablespoons butter, cut into small pieces
1 teaspoon ground cinnamon
1 tablespoon white sugar

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Line a 9 inch pie plate with half of the dough and brush with half of the beaten egg white.
  • Combine the sliced peaches, strawberries, blueberries, and raspberries in a large bowl; set aside. Mix the flour, cornstarch, brown sugar, 1/2 cup white sugar, 2 teaspoons cinnamon, and nutmeg together. Gently fold the flour mixture into the fruit, taking care not to crush the berries. Transfer the fruit mixture into the pastry-lined pie plate. The filling will be piled high but will cook down. Dot with butter.
  • Top the filled pie with a lattice crust or a full top crust (cut decorative slits in the crust to allow steam to escape). Brush the top crust or lattice with the remaining egg white. Combine 1 teaspoon cinnamon and 1 tablespoon sugar and sprinkle the mixture on the crust. Place the pie on a baking sheet to catch drips.
  • Bake the pie until the crust is golden brown and the filling is bubbly, 45 to 60 minutes. Turn off the oven and let the pie set for 30 minutes; transfer to a cooling rack. The filling will be loose if served warm, but will tighten up when the pie is completely cooled.

1 cup fresh raspberries
¾ cup white sugar
3 tablespoons all-purpose flour

Steps:

3 cups peeled, sliced peaches
1 cup Bing cherries, pitted and halved
1 cup blueberries

1/2 cup raspberries
1/2 cup blackberry
3/4 cup strawberry (quartered)

3 tablespoons corn syrup
1 tablespoon honey
2 teaspoons lemon juice
1 tablespoon fresh squeezed orange juice
1 teaspoon cornstarch

1 cup butter
1/3 cup shortening
8 -10 tablespoons cold water

Steps:

  • Prepare the crust. In a medium bowl, stir together flour and salt until well combined. Add 1/3 cup butter and the shortening, then cut in with a pastry blender until flour appears crumbly and no crumbs are larger than pea size. Gradually add water, one tablespoon at a time, tossing thoroughly with fork after each addition until dough sticks together. Dough should be only slightly moist and should still retain a crumbly appearance until pressed together between fingers. Place mixture into an ungreased 9 x 13 inch glass baking dish and flatten to bottom, pressing dough halfway up the sides of the baking dish. Melt the remaining tablespoon of butter and brush over crust using a pastry brush. Immediately sprinkle with cinnamon and sugar and set aside.
  • Make the filling. Peel and slice two of the peaches and place into a medium bowl. Add strawberries, blackberries, raspberries, and rhubarb. In a small bowl, combine 1 tablespoon flour and 2 tablespoons sugar, then pour over fruit and toss until fruit is evenly coated. Set aside.
  • Preheat oven to 350 degrees. In a medium sauce pan, add remaining peaches (peeled and sliced), cinnamon, butter, corn syrup, honey, lemon jice, orange juice, and sugar. Begin cooking over medium heat, stirring constantly until juices form. Mix corn starch with 1 teaspoon of water and gradually pour into mixture while stirring constantly. Allow mixture to come to a boil. Continue to boil, stirring occasionally, until mixture thickens. Once thickened, stir constantly until the liquid portion of the filling sticks to the spoon when removed from the pan. It should almost have the appearance of cooled pie filling. Remove from heat and add remaining fruit, stirring juices into flour mixture before adding to the filling. Lightly stir to combine and set aside.
  • Place empty pie crust in the oven on the middle rack and bake until the butter is melted and the cinnamon and sugar appear to have absorbed into the crust.
  • In the meantime, prepare the streusel. In a medium bowl, combine all ingredients and stir together until crumbly and all dry ingredients appear a bit moist. Set aside.
  • Remove crust from the oven and top evenly with pie filling. Cover with the streusel, paying special attention to the sides as the filling tends to bubble up over the topping along the edges. Bake on center rack for approximately 45 minutes, or until crust appears golden and streusel is crunchy. Remove from oven and cool, then slice into 12 pieces.

1 1/2 teaspoons baking powder
1/4 cup sugar, plus

1 tablespoon heavy cream or 1 tablespoon whipping cream

2 lbs ripe peaches (about 5 medium)
3 cups assorted berries (1 cup each blueberries, blackberries and raspberries)

Steps:

  • Prepare crust: In medium bowl, combine flour, baking powder and 1/4 cup sugar.
  • With pastry blender or 2 knives used scissors fashion, cut in butter until mixture resembles fine crumbs.
  • Add 1/2 cup cream and stir with fork until dough comes together. Gather dough into a ball and place on lightly floured sheet of waxed paper. With floured rolling pin, roll dough to a 9-inch round.
  • Slide waxed paper onto cookie sheet and refrigerate dough until ready to use.
  • In cup, mix cinnamon and remaining sugar.
  • Prepare fruit filling: Preheat oven to 400 degrees F. Place cookie sheet lined with foil in oven. In 4-quart saucepan, stir sugar, water and cornstarch until cornstarch dissolves; stir in peaches.
  • Heat to boiling over medium-high heat, stirring often. Reduce heat to low; simmer 2 minutes, stirring often. Remove from heat; gently stir in berries. Pour filling into 9-inch deep dish pie plate.
  • Immediately, while filling is hot, remove dough round from refrigerator and, using waxed paper, invert dough over fruit mixture. Peef off paper. Cut 4-inch X in center of round, fold back points to make square opening.
  • Brush dough with remaining cream; sprinkle with cinnamon sugar.
  • Bake pie on foil-lined cookie sheet 35-40 minutes or until fruit is bubbly in center. If crust is browning too quickly, loosely cover pie with foil after 25 minutes. Cool pie on wire rack.

Combine 1 teaspoon cinnamon and 1 tablespoon sugar and sprinkle the mixture on the crust. Place the pie on a baking sheet to catch drips. Bake the pie until the crust is golden brown and the filling is bubbly, 45 to 60 minutes. Turn off the oven and let the pie set for 30 minutes; transfer to a cooling rack. The filling will be loose if served warm, but will tighten up when the pie is completely cooled.

1 1/2 cups sugar
1/4 cup flour
2 tablespoons cornstarch
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1 3/4 cups sliced peeled fresh peaches or 1 3/4 cups sliced peeled frozen peaches, thawed and drained
3/4 cup fresh blueberries or 3/4 cup frozen blueberries
3/4 cup fresh cranberries or 3/4 cup frozen cranberries
1 teaspoon vanilla extract
pastry for double-crust pie (9inches)
1 tablespoon butter or 1 tablespoon margarine

Steps:

  • In large bowl combine sugar, flour, cornstarch, salt and nutmeg.
  • Add fruit and vanilla, toss to mix.
  • Let stand for 15 minutes, stirring occasionally.
  • Line pie plate with bottom pastry, add filling.
  • Dot with butter, Roll out remaining pastry, make lattice crust, seal and flute edges.
  • Bake at 375 for 50-55 minutes or until crust is golden brown and filling is bubbly.
  • Cool on wire rack.

1/2 cup(s) all-purpose flour
1/8 teaspoon(s) salt
2 tablespoon(s) shortening
2 tablespoon(s) cold water
FOR THE FILLING
1/3 cup(s) sugar
1 tablespoon(s) cornstarch
1/8 teaspoon(s) salt
1/4 cup(s) water
1/2 cup(s) chopped peeled fresh peach
1/2 cup(s) fresh blueberries
1/2 cup(s) sliced fresh strawberries
- whipped cream, optional

Steps:

  • In a small bowl, combine flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Cover and refrigerate for 15 minutes or until easy to handle. Roll out pastry to fit a 5-in. pie plate. Transfer pastry to pie plate. Trim pastry to 1/2 in. beyond edge of plate; flute edges. Line unpricked pastry shell with a double thickness of heavy-duty foil. Fill with dried beans, uncooked rice or pie weights.
  • Bake at 450° for 5 minutes. Remove foil and weights; bake 5-7 minutes longer or until golden brown. Cool on a wire rack.
  • In a small saucepan, combine the sugar, cornstarch and salt. Stir in water until smooth; add peach. Bring to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in berries. Let stand for 15 minutes. Pour into crust. Refrigerate for 3 hours before serving. Garnish with whipped cream if desired.

4 cups - peaches (drained, fresh or frozen)
2 cups - raspberries (i use fresh)
3 Tbsp. - flour
3/4 cup - sugar
1 1/2 tsp. - cinnamon
2 - pie crusts
3 Tbsp. - oleo (margarine or butter)
2 Tbsp. - sugar

Steps:

  • This recipe makes one 9" pie. Preheat oven to 400 degrees. Dress pie plate with pie crust. Drain fruit in colander for fifteen minutes.
  • Mix flour, sugar and cinnamon in bowl. Add fruit and toss together. Place fruit mixture in pie crust. Dollop butter on the fruit and cover with second pie crust. Pinch crusts together and create small vents on top. Sprinkle the top of the pie with 3 Tbsp. sugar (less or more to your personal taste.) Bake for 45-50 minutes until crust is brownish and the insides are bubbling.
  • This pie is scrumptious with vanilla bean ice cream! ENJOY!

4 ripe peaches (skin and pit removed)
1/2 cup fresh raspberries
Fruit Glaze Ingredients:
1/2 cup sugar
1-cup water or fruit juice
1/2 teaspoon agar-agar powder (gum)
1 tbsp. tapioca flour

1 crust

Steps:

  • Pie Assembly: 1. Bring water to boil in saucepan. 2. Carefully add peaches and cook 1 minute. 3. Immediately submerge peaches into ice water to stop cooking. 4. When cool enough to handle, remove skin and pit and cut into slices. Layer the sliced peaches on top on prepared crust. 5. Add raspberries. Fruit Glaze: Yields: 1 1/4 cup glaze 1. Blend the sugar, Agar, and tapioca together. 2. Add the water or fruit juice until blended. 3. Stirring constantly, over medium heat, bring to a boil. 4. Reduce heat to a simmer and continue cooking for 1 minute. 5. Cool slightly (about 1-2 minutes) and apply on top of fruit. 6. Fruit should be nicely coated (may have glaze to spare). 7. Refrigerate 1 hour before tasting. Pie is best eaten the same day.
