Steps:

  • Preheat oven to 350 and butter a 9x9 baking dish.
  • Layer peaches on the bottom of the dish.
  • Mix the rest of the ingredients in a bowl, forming a crumble topping.

4 ripe peaches, halved, pitted and cut into 4 wedges each
4 tablespoons (1/2 stick) unsalted butter, melted
4 tablespoons pure maple syrup
1 teaspoon pure vanilla extract
4 slices walnut-raisin bread
Pinch kosher salt

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the peaches, 2 tablespoons of the butter, 2 tablespoons of the maple syrup and the vanilla in a 2-quart oval baking dish. Toss with a spatula to combine, then arrange the peaches cut side up.
  • Put the bread and salt in the bowl of a food processor. Pulse until you have small crumbs (take care not to over-process or the crumbs can get gummy). Transfer to a medium bowl and mix with the remaining 2 tablespoons butter and 2 tablespoons maple syrup. Sprinkle the bread mixture evenly over the peaches.
  • Bake until the peaches are very tender and the bread crumbs are golden-brown, 30 to 35 minutes.

3 cups fresh raspberries or 3 cups frozen raspberries
2 cups fresh peaches or 2 cups frozen peaches, sliced and peeled
1/2 cup sugar
1 tablespoon all-purpose flour
1 tablespoon crystallized ginger, finely chopped or 1/8 teaspoon ground ginger
5 cups whole wheat bread cubes, soft (about 7 slices)
3 tablespoons butter, melted
whipped cream

Steps:

  • Preheat oven to 375 degrees.
  • Thaw frozen peaches and raspberries, do not drain.
  • In a large bowl, combine sugar, flour, and ginger.
  • Add raspberries and peaches, toss gently to coat.
  • Add 2 cups of the bread cubes, toss gently to combine.
  • Transfer mixture to a 2 quart square baking dish.
  • For the topping, place remaining bread cubes in a medium bowl.
  • Drizzle with melted butter, toss gently to coat.
  • Sprinkle topping over fruit mixture.
  • Bake about 30 minutes or until peaches are tender and topping is golden.
  • Serve warm, with whipped cream if desired.

1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup cold butter or margarine, cut into pieces
1/2 cup milk
1 teaspoon decorator sugar crystals, if desired
3/4 cup sugar
2 tablespoons all-purpose flour
1 cup fresh blueberries
1 cup fresh raspberries
3 medium peaches, peeled, sliced (about 3 cups)
2 teaspoons grated lemon peel
1 tablespoon lemon juice

Steps:

  • Heat oven to 400°F. Grease 2-quart glass casserole with butter or cooking spray.
  • In medium bowl, stir together 1 1/4 cups flour, 1/3 cup sugar, the baking powder, salt and nutmeg. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in milk just until combined; set aside.
  • In 2 1/2-quart saucepan, stir together 3/4 cup sugar and 2 tablespoons flour. Stir in blueberries, raspberries, peaches, lemon peel and lemon juice. Heat to boiling over medium-high heat, stirring constantly. Spoon fruit mixture into baking dish.
  • Immediately drop biscuit dough by 8 spoonfuls onto hot mixture. Sprinkle sugar crystals over dough.
  • Bake 25 to 35 minutes or until biscuits are golden brown. Cool at least 15 minutes before serving.

1/2 teaspoon ground cinnamon
1/8 teaspoon ground allspice
3 cups sliced peeled fresh peaches
1 cup fresh or frozen unsweetened blueberries
Dough for double-crust pie
1 tablespoon butter
1 tablespoon 2% milk
Cinnamon sugar

Steps:

  • In a large bowl, combine sugar, flour, cinnamon and allspice. Add peaches and blueberries; toss to coat. , Preheat oven to 400°. On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle; cut into 1/2-in.-wide strips. Arrange over filling in a lattice pattern.
