HOMEMADE PEACH BARBECUE SAUCE



Homemade Peach Barbecue Sauce image

Homemade barbecue sauce made with fresh peaches is always a hit in our home. This one uses ripe peaches with a hint of cinnamon and just a touch of heat from smoked paprika. It's seriously good barbecue sauce!

Number Of Ingredients 11

3 tablespoons butter
1 large or 2 small shallots (diced)
1 or 2 cloves garlic (pressed or chopped finely)
Salt and Pepper to taste (I'm not a huge black pepper fan so I leave it out)
2 tablespoons brown sugar
1/2 to 1 teaspoon cinnamon (I'm a huge fan of the roasted saigon cinnamon)
1/2 to 1 teaspoon smoked paprika
1 cup ketchup
1 cup fresh peaches (pulse them in the food processor (I like to leave mine a bit chunky))
1 tablespoon worcestershire sauce
Juice from 1/2 fresh lemon

Steps:

  • Pulse your peaches in a food processor until chunky or smooth, depending how you like your sauce. Set aside.
  • In a large saucepan melt the butter over medium heat. As it starts to glisten add the shallots and cook those until the start to go golden brown. This will take 5 to 10 minutes depending on your heat and the size of the pan you use. Once they are almost golden add the garlic. Allow to cook for about 1 to 2 more minutes.
  • Now you can add the spices, ketchup, brown sugar, and peaches. Cook until it comes to a boil.
  • Add the worcestershire sauce and the lemon juice, stir and bring back to a boil. Let it boil for about a minute or two, stir, then reduce to a simmer. Let it simmer for about 20 to 30 minutes. Give it a stir here and there.
  • Swipe it over everything you can get your hands on!
  • You can store the surplus in glass jars in the fridge for a couple of weeks.
  • Great on chicken, fish and pork.

A thick, sweet and spicy barbecue sauce flavored with bourbon and peaches makes a wonderful topping for salmon.

1 tablespoon canola oil
1 small sweet onion, (chopped)
2 cloves garlic, (minced)
2 cups chopped fresh peaches (or frozen, defrosted)
1/2 cup ketchup
1/3 cup Four Roses Bourbon
1/3 cup apple cider vinegar
1 teaspoon ground mustard
1/8 teaspoon allspice
1/2 teaspoon chipotle chili powder
1 teaspoon Worcestershire sauce
1 tablespoon molasses
4 salmon filets

Steps:

  • Heat canola oil in a medium pot. Add onion and sauté 3 minutes over medium heat. Add garlic and sauté 2 more minutes.
  • Add remaining ingredients and stir to mix. Simmer sauce for 20-30 minutes, or until it thickens up to your liking. Stir every now and then so the bottom does not burn.
  • About halfway through cooking, use a potato masher to break down the peach chunks some. This will help thicken the sauce and distribute the flavor of the peaches.
  • Heat gas grill or grill pan over medium-high heat. Lightly coat tops of salmon filets with oil.
  • Cook salmon skin side up for about 4 minutes. Flip over and cook another 4-5 minutes, or until desired degree of doneness.
  • Once salmon is almost done, coat with a thick layer of barbecue sauce. Serve additional sauce with salmon.

1 cup butter, cubed
1 cup peach preserves
1 tablespoon lime juice
1 garlic clove, minced
1/2 teaspoon prepared mustard
2 salmon fillets (1 pound each)
1/2 cup chopped peeled fresh peaches or frozen unsweetened sliced peaches, thawed

Steps:

  • In a microwave-safe bowl, combine butter and preserves. Cover and microwave on high for 45-60 seconds. Stir in the lime juice, garlic and mustard until blended. Cool. Set aside 1 cup for basting and serving., Place salmon fillets in a large resealable plastic bag; add remaining peach mixture. Seal bag and turn to coat. Marinate for 20 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. , Grill, covered, over medium heat for 5 minutes. Spoon half of reserved peach mixture over salmon. Grill 10-15 minutes longer or until fish flakes easily with a fork, basting frequently. Serve with sliced peaches and remaining peach mixture.

Record breaking heat again today! Going to grill some salmon. This makes enough for a small army (well, a 10 lb fillet) Our family likes to eat salmon this way!

1/2 c butter
1 red onion, minced
4 clove garlic, minced
1/2 c soy sauce, low sodium
1 Tbsp dijon mustard
1/2 c brown sugar splenda, firmly packed (1/4 c brown sugar and 1/4 c splenda
1/2 c lemon juice, fresh
1 c peach jam (i use smuckers simply fruit yummm)
1/2 c red wine vinegar
10 lb salmon fillet (or 2 pieces for bob and i)

Steps:

  • 1. Grill inside (for winter) or outside
  • 2. Combine all ingredients for sauce in a large sauce pan.
  • 3. Bring to a boil and reduce heat, simmer for 1/2 hr or till slightly thickened.
  • 4. Brush fish generously for BBQ, repeat several times.
  • 5. Pass extra for serving. Our little ones like this fish too!

2 peaches, peeled, pitted and coarsely chopped
3/4 cup peach nectar
1/2 cup ketchup
1 tablespoon molasses
1 tablespoon white vinegar
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1/2 teaspoon adobo sauce from canned chipotles in adobo
1/4 teaspoon liquid smoke

Steps:

  • Combine the peaches, peach nectar, ketchup, molasses, vinegar, mustard, Worcestershire sauce and adobo sauce in a deep saucepan. Bring to a boil over medium heat. Reduce the heat to low and simmer for 20 to 30 minutes, until the sauce has thickened and the flavors have melded. Puree with an immersion blender and let cool.
