THE DEB (PEACH-BASIL BOURBON SMASH) COCKTAIL
A juicy way to wind down after a busy day, and a good way to use up ripe peaches. Made and named for my friend Deb on her birthday. The peach-basil syrup makes 2 1/2 cups, enough for 8 to 10 cocktails. It keeps in the fridge for up to 3 weeks.

Steps:
- Combine chopped peaches, sugar, water, and 3 sprigs basil in a small pot over medium heat. Simmer, stirring occasionally, until sugar dissolves, about 5 minutes. Cool syrup to room temperature, about 10 minutes. Discard basil sprigs.
- Pour syrup into a Mason jar, seal, and refrigerate until completely chilled, about 1 hour.
- Measure 3 fluid ounces of syrup and peaches into a cocktail shaker; muddle to break peaches up. Add 4 ice cubes, bourbon, and bitters; cover and shake vigorously until ice is mostly melted. Pour into a chilled 8-ounce glass; add remaining 4 ice cubes. Gently stir in sparkling water. Garnish with a peach slice and basil leaf.

- In a large saucepan, combine sugar, peaches, basil and water; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes. Remove from heat; let stand 30 minutes. Discard basil; stir in lemon juice. Refrigerate until cooled completely., Place peach mixture in a blender; cover and process until blended. Strain into a pitcher; add additional cold water to reach desired consistency. To serve, fill glasses with ice. Pour peach mixture halfway up glass; top with club soda or, if desired, champagne. Serve with additional basil.

Steps:
- In a cocktail shaker mix all the ingredients along with the ice. Shake well and pour into a chilled martini glass.

Craving a basil martini. Just used ingredients on hand to make this. May need some tweaking yet as it was a bit "sharp" tasting.

MUDDLED BASIL MARTINI
I've been searching for the perfect summer basil martini. I think I found it on the "B*tches on a Budget" website! Slight variation using agave nectar instead of simple syrup. I had to substitute ounces for "jiggers" as called for in the original recipe -- original verbage included in directions.

- Muddle the basil, simple syrup and lime juice together. Add gin or vodka. Combine in a cocktail shaker with loads of ice. Shake until there are shards of ice and the mix turns frothy. Strain.
- Original recipe reads: 2 1/2 jiggers of vodka or gin. 1 jigger simple syrup. 1 jigger fresh squeezed lime juice. 4 fresh sweet basil leaves. 1 fresh spearmint leaf (or to taste).

- In a saucepan, combine the sugar, basil leaves, half of the peach nectar and lemon juice. Bring to a simmer, crushing the basil leaves with the back of a spoon to release their flavor. Simmer just long enough to melt the sugar, then remove from the heat and allow to cool.
- Strain the basil mixture into a pitcher filled with ice cubes. Pour in wine and remaining peach nectar. Stir briefly and serve.
