Classic, double crusted pie filled with fresh peaches and brushed with cream and sugar!

2 unbaked pie crusts
6 c. peaches (peeled and sliced)
1 ½ c. white sugar
2 Tbsp minute tapioca
Cream and sugar; for topping

Steps:

  • In a large bowl combine peaches, sugar and tapioca.
  • Line a 9 inch pie plate with one pie crust. Place pie filling in pastry.
  • Place the second crust on top of the peach filling. Press the edges together with the bottom crust. Trim the crust, leaving about ½'' of crust around the edges. Flute the crust.
  • Make several slits in the top of the crust, allowing steam to escape while baking. Lightly brush cream on the top and sprinkle white sugar; if desired.
  • Bake at 375 degrees F for 45-60 minutes.
  • Serve with ice cream.

This recipe comes from the mortician's side of the family. I was wary at first because I had never heard of the combination of peaches and blueberries. I was quickly swayed after trying it and now believe that this is one of the best pies ever!

1 pastry for a double-crust 9-inch pie
3 cups sliced peaches
1 cup blueberries
2 tablespoons fresh lemon juice
1 cup white sugar
2 tablespoons quick-cooking tapioca
½ teaspoon salt
2 tablespoons margarine, cut into pieces

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Place one pie crust into a pie plate.
  • Toss peaches and blueberries in a bowl with lemon juice. Mix sugar, tapioca, and salt in a small bowl and add to peach mixture; stir to combine. Allow fruit to rest for 15 minutes, then transfer to prepared pie plate. Scatter margarine pieces over fruit and brush the edge of the pie with water. Cover pie with remaining crust; press and seal the top and bottom crusts.
  • Bake in preheated oven until crust is golden brown and fruit is bubbly 45 to 50 minutes.

You can use the pie crust recipe for any pie. So moist and is the easiest I have found. The tapioca thickens the pie and adds a great taste. This is an old family favorite from my grandma.

3/4 c sugar
3 1/2 Tbsp quick cooking tapioca
1/2 tsp vanilla
1/4 tsp nutmeg
1/2 c whipping cream
6 c peeled,sliced peaches or 2 big cans sliced peaches in natural juice
1 1/2 c flour
1 tsp salt
1 1/2 tsp sugar
2 Tbsp milk
1/2 c oil

Steps:

  • 1. In a bowl stir together sugar and tapioca then stir in vanilla,nutmeg and cream.Let stand for 15 minutes to soften.
  • 2. PIE CRUST:Mix flour salt,and sugar in the pie plate. Slowly add milk and the oil. Mix well with a fork. Then pat out to fit pan being sure to cover the entire bottom and sides of plate.
  • 3. Pour peaches into pastry shell. Stir the tapioca mixture and pour over the peaches.
  • 4. Bake at 375 degrees for 45-50 minutes till filling is lightly browned. If crust darkens befor done,drape it with foil.
