1 cup chopped celery
2 hard-boiled large eggs, chopped
1/4 cup chopped green onions

1/2 cup thinly sliced radishes or 1 jar (2 ounces) pimientos, drained
1 cup mayonnaise
3 tablespoons sweet pickle relish
1 teaspoon sugar

2 teaspoons cumin seeds
2 tablespoons fresh lime juice
2 teaspoons honey
1/4 cup extra-virgin olive oil
3 tablespoons chopped fresh dill
4 cups fresh shelled peas (from about 4 pounds peas in pods) or 1 pound frozen petite peas
1 bunch radishes, trimmed, halved, thinly sliced
1 cup crumbled feta cheese (about 4 ounces)
3 cups fresh pea tendrils, coarsely chopped, or pea sprouts* (optional)
*Available at natural foods stores and Asian markets.

Steps:

  • Heat small skillet over medium heat. Add cumin seeds and toast until aromatic and slightly darker, about 2 minutes. Cool; grind finely in spice mill. Whisk lime juice, honey, and cumin in small bowl. Gradually whisk in oil; stir in dill. Season dressing with salt and pepper. DO AHEAD Can be made 1 day ahead. Cover and chill. Bring to room temperature.
  • Cook peas in pot of boiling salted water until almost tender, about 5 minutes for fresh (or about 2 minutes for frozen). Drain; rinse under cold water, then drain well. Transfer to large bowl. Add radishes, feta, and dressing; toss. Season with salt and pepper. If using pea tendrils or sprouts, divide among bowls. Divide salad among bowls. Serve.

  • You need 2 large handfuls of baby spinach -- check for nasty stalky or wilted bits and then give it a really good wash (nobody likes gritty spinach). Spin dry, and add to a salad bowl with 2 smaller handfuls of fresh peas (unless you are lucky enough to get young peas which are sweet and tender, you should blanch the peas in boiling, unsalted water and leave to cool). Dress the salad at the last minute with olive oil and lemon juice dressing and sprinkle crumbled feta cheese over the top.

Made from boxed macaroni&cheese dinner. The cheese/macaroni mixture gives this a unique twist to typical macaroni salad. I've never made it from homemade cheese & macaroni, but I imagine it would work fine. Sometimes I use leftover macaroni & cheese dinner and adjust the rest of the ingredients accordingly. This is one of our quick and easy family favorites. Enjoy!!

1 (7 ounce) box macaroni & cheese dinner mix (we use Kraft brand, but store brands are fine also)
1/4 cup butter or 1/4 cup margarine
1/4 cup milk
1 cup frozen peas (thawed)
3 hard-boiled eggs (chopped)
1/2 cup celery (chopped)
1/3 cup onion (chopped)
2 green onions (chopped)
1 cup mayonnaise
1 teaspoon salt and pepper (to taste)
1 teaspoon dried dill (you can substitute with your favorite cold salad seasoning.)

Steps:

  • Cook macaroni & cheese dinner per box directions; cool. (If you're using leftover macaroni, adjust the remaining ingredients accordingly).
  • Add chopped eggs, celery, onion, green onion to cooled macaroni & cheese.

Steps:

  • Cook the pasta per package directions , making sure not to overcook. Place the peas in the colander and drain the pasta right over the top of the peas, this will cook the peas to a crisp tender doneness. Cool and lightly stir in the rest of the ingredients.

1 cup fresh shelled peas (from 1 lb peas in pods)
2 ounces pea shoots, torn into bite-size pieces
1/3 cup small fresh mint leaves
1/3 cup almonds, toasted and chopped
1 teaspoon lemon zest
1 tablespoon plus 1 tsp fresh lemon juice
1 tablespoon extra-virgin olive oil
Coarse salt and freshly ground black pepper

Return to room temperature and rewhisk before using.
