RUDOLPH'S RED NOSE COOKIES

Santa Claus is coming to town and he's going to need Rudolph's Red Nose to guide his sleigh! Let's kick off my new 24 Cookies of Christmas countdown with Rudolph's Red Nose Cookies!

Number Of Ingredients 7

14 ounces sweetened condensed milk
2 tablespoons butter, (melted and cooled)
1 teaspoon vanilla extract
1/4 cup cocoa powder
5 1/2 cups unsweetened coconut, (shredded)
1/4 cup confectioner's sugar
30 whole red candied cherries

Steps:

  • In a large bowl, whisk together the condensed milk, butter, and vanilla extract.
  • Next, whisk the cocoa powder into the mixture. Don't whisk to the point of making the mixture frothy, but just until the cocoa powder is well incorporated.
  • Add 5 cups of the coconut and all of the powdered sugar. Stir until well combined.
  • Place in refrigerator and chill for 15 minutes. In the meantime, add the remaining 1/2 cup of coconut to a bowl. Line a baking sheet with wax or parchment paper and set aside.
  • Once the mixture has chilled, use a cookie scoop to keep the portions even. Working with one cookie at a time, portion our a heaping tablespoon of the cookie mixture. Roll into a ball.
  • Roll the ball into the remaining coconut and place onto prepared baking sheet.
  • Place a candied cherry onto the cookie and with a clean finger, push the cherry straight down until the cherry is half way buried into the cookie. Continue until all of the cookie mixture is used up.
  • Once done, place the entire baking sheet into the fridge for 30 minutes until the balls are firm. Remove from fridge and transfer to a food-safe container with a tight fitting lid.
  • Keep balls refrigerated. Remove desired amount from fridge a few minutes before serving.

1/2 cup peanut butter
1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 tsp vanilla
1 egg
1 1/3 cup flour
1 tsp baking soda
1/2 tsp salt
48 red M&M's candies
96 mini chocolate chips
Mini twist pretzels

Steps:

  • Preheat oven to 350.
  • Break pretzels into pieces to use as antlers.
  • Cream together peanut butter, butter, sugar and brown sugar until smooth.
  • Add egg and vanilla and beat until smooth.
  • Whisk together flour, baking soda and salt in a separate bowl.
  • Slowly add dry ingredients to the creamed mixture, beating until incorporated.
  • Roll into 1/2-3/4" balls and place on cookie sheet several inches apart.
  • Sprinkle with sugar and gently make an indentation slightly off the center of each cookie.
  • Bake 12-14 minutes.
  • Place an M&M in the indentation of each cookie.
  • Insert 2 mini chocolate chips (pointy side down) above the M&M to be the eyes.
  • Insert 2 pretzel pieces to resemble antlers. If the antlers won't stick, place some chocolate chips in a sandwich bag and microwave 30 seconds and knead until soft. Clip the very tip of the corner and pipe onto cookie to act as glue.

1/2 cup unsalted butter, softened
3/4 cup peanut butter
1/3 cup granulated sugar
1/3 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
48 red M&M's plain chocolate candy or 48 maraschino cherries, halved
96 miniature semisweet chocolate chips
thin pretzel, broken into 96 1-inch pieces

Steps:

  • Heat oven to 375 degrees and place rack in center.
  • Grease two baking sheets.
  • In large mixer bowl, beat together butter, peanut butter, and sugars on medium speed until light, about 2 minutes.
  • Add egg and vanilla extract; beat until combined.
  • Stir in flour, baking soda, and salt until a dough forms.
  • Roll into 1-inch balls and place 1 inch apart on prepared baking sheets.
  • Bake, one sheet at a time, until just set and bottoms are golden, 8-10 minutes.
  • For each cookie, immediately place 1 red M&M or cherry half in center for nose, 2 chocolate chips for eyes, and 2 pretzel pieces on top of cookie for antlers.
  • Transfer cookies on sheets to a wire rack and let cool completely.

Very CUTE little cookies that will bring a smile to the little ones faces! Great little cookies to send to school on "Christmas Party" day! You will be the hit of the classroom! (hint: you can use icing bag with piping tip, and a frosting that dries hard to stick on the eyes and nose, I use a stiff buttercream frosting colored the color of the eyes and nose, it works faster for me than the melted chocolate). I just LOVE all the cute photos and different ideas for this recipe!

4 ounces chocolate-flavored candy coating
96 thin pretzel sticks
1 (16 ounce) package Nutter Butter sandwich cookies
64 miniature M&M baking bits (blue, green, or brown)
32 cinnamon red cinnamon candies or 32 red miniature M&M baking bits

Steps:

  • Microwave the chocolate in a small glass dish on high for 3 minutes, stirring once.
  • For each Rudolph dip 2 pretzel sticks in chocolate and stick to top of each sandwich cookie, forming large antlers.
  • Break one pretzel in half, dip in chocolate and place pretzel half next to longer pretzel sticks, forming antlers.
  • Dip one side of blue, green, or brown mini M&M's in melted candy coating and place, coated side down, on cookies for the eyes.
  • Dip one side of the cinnamon red hot, or red M&M in candy coating, and place on cookies, coated side down, for the nose.

If you can believe it, we weren't able to find the red gumdrops called for in the recipe, so used dried cranberries instead. We were pleased...

1 c butter
1 c peanut butter
1/2 c honey
1 c sugar
2 egg
2 1/2 c flour
1 tsp baking soda
1 tsp baking powder
1 tsp vanilla extract (real vanilla)
1 1/2 c chopped peanuts
128 small pretzels
64 small red gumdrops
1 pkg semisweet miniature chocolate chip pieces

Steps:

  • 1. Beat butter and peanut butter for 30 seconds.
  • 2. Add half the flour, the sugar, honey, eggs, baking soda, baking powder, and vanilla. Beat until thoroughly combined.
  • 3. Stir in the remaining flour. Stir in peanuts. cover and chill thoroughly at least one hour (1 hour) or until the dough is easy to handle.
  • 4. Work with half the dough at a time, keeping the rest refrigerated. Using one Tablespoon of the dough, shape it into a triangle about 2 and 1/2 inches long and 2 inches wide on an ungreased cookie sheet. Lightly press pretzel antlers into sides at wide end of triangles. Add gumdrop noses and chocolate pieces for eyes.
  • 5. Bake at 375 degrees for 7 to 8 minutes or until bottoms are lightly browned. Let cool 2 minutes on cookies sheet and then carefully remove to rack to cool.
  • 6. Makes 64 cookies. This is a great kid cookie treat. They go fast. Great to take to kid parties and not so sweet that you don't feel super bad.....
