This is a family recipe that has been developed only over the last 5 years. In this short time it's made me famous in our close circle, but until now I've never shared it with anyone.

⅓ cup soy sauce
½ cup olive oil
⅓ cup fresh lemon juice
¼ cup Worcestershire sauce
1 ½ tablespoons garlic powder
3 tablespoons dried basil
1 ½ tablespoons dried parsley flakes
1 teaspoon ground white pepper
¼ teaspoon hot pepper sauce
1 teaspoon dried minced garlic

Steps:

  • Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
  • Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

Have you ever ran out of time to get your steaks marinated and all the recipes call for hours of marinating? This one takes just minutes to prepare and is then used for basting your choice of steaks while grilling and gives them a wonderful garlicky blended flavor. Recipe courtesy of TOH.

10 garlic cloves
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 tablespoons olive oil
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce
4 New York strip steaks (1-1/4 inches thick and 8 ounces each) or 4 boneless rib eye steaks (1-1/4 inches thick and 8 ounces each)

Steps:

  • With a mortar and pestle, combine the garlic, salt and pepper. Add the oil, lemon juice and mix to form a paste.
  • Grill steaks, covered, over medium heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a meat thermometer should read 145°; medium, 160°; well-done, 170°. Brush with garlic mixture during the last few minutes of grilling. Let stand for 3-5 minutes before serving.

The key to making this REALLY fast is to use a thin cut steak and only cook it for a couple of minutes on each side. I serve with grilled vegetables and rice for a complete meal. Prep time includes 30 minutes of marinating in the fridge.

4 garlic cloves, peeled
1 teaspoon kosher salt
1/2 teaspoon pepper
1/2 teaspoon cumin
1/4 cup lime juice, fresh is best
2 tablespoons olive oil
1 lb steak, cut 1/2 inch thick

Steps:

  • Combine all ingredients except for the steaks in a food processor or blender. Process until the mixture is a smooth liquid paste.
  • On a plate or in a zip top bag, combine 1/2 of the marinade with the steaks, making sure the meat is well coated. Let sit in the refrigerator for 1/2 hour. Reserve the remaining marinade.
  • Grill the steaks over high heat, 2-3 minutes per side, basting if desired with the remaining marinade.
  • Remove to a serving dish, brush with any remaining marinade, and serve.

PAWPAW'S STEAK GRILLING BASTE AND MARINADE



Pawpaw's Steak Grilling Baste and Marinade image

Adapted from a recipe in the Brett Favre Family cookbook. Baste/marinade can be used for steaks, chicken, ribs, pork chops and other meats as well. Makes one cup of marinade. These are really tasty- doesn't need a steak sauce. Maybe a grind of black pepper and that's it. Nice, buttery, and juicy. I used rib steaks.

1/2 cup(s) melted butter
1 teaspoon(s) black pepper
1 teaspoon(s) tony chachere's seasoning
2 teaspoon(s) garlic paste
1/2 cup(s) worcestershire sauce
1 pinch(es) sugar or sugar substitute

Steps:

  • Whisk together the butter, pepper, cajun seasoning, garlic paste, Worcestershire sauce and sugar.
  • Pour over steaks in a ziploc bag and refrigerate several hours or overnight.
  • Remove steaks from marinade and scrape off any solidified butter with a butter knife, then microwave that excess butter to get it melted.
  • Grill steaks to desired doneness, using the warmed marinade as a baste.
