SAUSAGE, BELL PEPPERS, AND ONIONS
Caught this recipe on Every Day Italian and looked so good I had to try it. It is absolutely delicious! The sauce is slightly sweet and the onions caramelize really nicely. The original recipe puts the final product into crusty Italian buns, but I prefer it with pasta. I have tried this recipe with chicken instead of sausage, but make sure the pieces are small enough that they cook evenly and stay moist. Don't worry about the time it takes - it is SO worth it!

Steps:
- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides. Remove from the pan and drain.
- Keeping the pan over medium heat, add peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes.
- Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
- Serve with pasta, or in Italian buns.

Steps:
- 1. put the sausages in a medium skillet with 1/2 cup water. Cover the skillet and cook over medium heat until the water evaporates and the sausages begin to Brown. Uncover and cook, turning the sausages occasionally until browned on all sides. Remove the sausages to plate.
- 2. Add the oil to the skillet and heat over medium heat. Add the peppers and salt and pepper to taste, cover and cook, stirring often until the peppers are softened, about 10 minutes. Add the onion and cook 10 minutes more, until the peppers are tender and lightly browned.
- 3. Add the sausages to the pan, with a couple of tablespoons of water. Cover and cook five minutes more. Open the rolls and pull out some of the soft crumb. Stuff the rolls with the sausages, peppers, and onions. Serve hot. Serves four.
