I love this recipe! The rice is flavorful and just slightly spicy. I have typed it exactly as written. However, when I make it, I sautee the (sweet italian) sausage first without any butter or oil, and then I add the onion and bell pepper. I always buy a local brand of sausage and I never add salt to dishes with tomatoes in them.

1 cup onion, chopped
1 cup bell pepper, chopped
2 tablespoons butter
1 cup sausage
1 (14 1/2 ounce) can crushed tomatoes with juice
1 tablespoon red hot sauce
1 cup tomato sauce
1 cup water
2 chicken bouillon cubes
pepper
add salt, to taste if desired (optional)
1 cup white rice, uncooked

Steps:

  • Preheat oven to 350 deg.
  • In a saucepan over medium heat, saute onion and bell pepper in butter.
  • Add sausage; heat until mixture is slightly browned.
  • Add tomatoes, hot sauce, water, and bouillon cubes.
  • Season with pepper and salt as needed.
  • Stir in rice.
  • Pour mixture into a greased casserole and bake for 45 minutes.

2 stalks celery, chopped
4 green onions, chopped
1 red pepper, chopped
2 garlic cloves, chopped
1 1/2 lbs smoked sausage, sliced diagonal
14 ounces tomatoes
4 ounces tomato paste
1 1/2 cups water
1 cup rice
1 1/2 cups jumbo shrimp, cooked

Steps:

  • Add all ingredients except shrimp to a large pot.
  • Cover and simmer for 30 minutes.
  • Add shrimp. serve.

This makes a wonderful side dish or if you desire, add cooked shrimp for a main dish. Personally, I love it just by itself with a salad.

6 slices bacon
1 medium onion, chopped
1 medium green pepper, chopped
2 cloves garlic, minced
1 (16 ounce) can crushed tomatoes
1 (8 ounce) can tomato sauce
3 teaspoons creole seasoning
1/2 lb kielbasa, chopped
1 cup uncooked rice, , cooked and cooled

Steps:

  • Fry bacon until crisp and remove from pan and crumble.
  • In remaining bacon fat, saute onion, green pepper and garlic until tender Add Creole seasoning and cook another 2 minutes.
  • Add bacon, Kiebasa, tomatoes and tomato sauce and simmer for about 1 hour.
  • Start with part of rice and mix with sauce and keep adding rice until all is mixed in well.
  • Put in 9x13 pan and cover and bake at 350 for about 30 to 40 minutes.

4 slices lean bacon
2 medium onions, chopped
2 medium green bell- bell peppers, seeded and chopped
2 cups cooked long-grain rice
1 (16 ounce) can stewed tomatoes, juices included
1 cup tomato juice
salt and pepper
Tabasco sauce, to your taste

Steps:

  • Preheat oven to 325 degrees f.
  • in a large skillet, fry the bacon over moderate heat till almost crisp and drain on paper towels, reserving grease in the skillet.
  • crumble bacon, add the onions and bell peppers to the skillet and cook, stirring, till slightly brown, about 10 minutes.
  • add the rice, tomatoes, plus the their juices, and tomatoe juice, salt and pepper, and tabasco sauce and cook,stirring,5 minutes longer.
  • scrape the mixture into a greases 2- quart casserole dish and bake, covered, till the rice is slightly dry about 30 minutes -- and serve with your main dish.
