PAULA DEEN'S SAVANNAH RED RICE
I love this recipe! The rice is flavorful and just slightly spicy. I have typed it exactly as written. However, when I make it, I sautee the (sweet italian) sausage first without any butter or oil, and then I add the onion and bell pepper. I always buy a local brand of sausage and I never add salt to dishes with tomatoes in them.

Steps:
- Preheat oven to 350 deg.
- In a saucepan over medium heat, saute onion and bell pepper in butter.
- Add sausage; heat until mixture is slightly browned.
- Add tomatoes, hot sauce, water, and bouillon cubes.
- Season with pepper and salt as needed.
- Stir in rice.
- Pour mixture into a greased casserole and bake for 45 minutes.

This makes a wonderful side dish or if you desire, add cooked shrimp for a main dish. Personally, I love it just by itself with a salad.

Steps:
- Fry bacon until crisp and remove from pan and crumble.
- In remaining bacon fat, saute onion, green pepper and garlic until tender Add Creole seasoning and cook another 2 minutes.
- Add bacon, Kiebasa, tomatoes and tomato sauce and simmer for about 1 hour.
- Start with part of rice and mix with sauce and keep adding rice until all is mixed in well.
- Put in 9x13 pan and cover and bake at 350 for about 30 to 40 minutes.

- Preheat oven to 325 degrees f.
- in a large skillet, fry the bacon over moderate heat till almost crisp and drain on paper towels, reserving grease in the skillet.
- crumble bacon, add the onions and bell peppers to the skillet and cook, stirring, till slightly brown, about 10 minutes.
- add the rice, tomatoes, plus the their juices, and tomatoe juice, salt and pepper, and tabasco sauce and cook,stirring,5 minutes longer.
- scrape the mixture into a greases 2- quart casserole dish and bake, covered, till the rice is slightly dry about 30 minutes -- and serve with your main dish.
