½ cup mayonnaise
2 tablespoons fresh lemon juice
1 teaspoon salt
3½ cups chopped cooked chicken
1 cup diced celery
⅓ cup slivered almonds
Sandwich bread
Green leaf lettuce
Sliced tomato

Steps:

  • In a medium bowl, stir together mayonnaise, lemon juice, and salt. Add chicken, celery, and almonds, stirring until well combined. Cover and refrigerate for up to 3 days. Serve on bread with lettuce and tomato.

1/3 cup buttermilk
1/4 cup olive oil
1 teaspoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons chopped chives
1 lb chicken breast
2 large eggs
1 cup self-rising flour
salt and black pepper
vegetable oil, for frying
12 cups mixed greens
2 plum tomatoes
1/2 small vidalia onion, sliced

Steps:

  • For Dressing: Whisk together ingredients, refrigerate.
  • For Chicken: Cut chicken into 1" strips. Whisk eggs with 1/4 cup water. Whisk flour with salt and pepper. Heat oil in skillet to 350. Dip chicken strips in eggs mixture, then coat with flour mixture. Fry 3-4 minutes until done. Season while hot.
  • For salad: slice tomatoes and toss with greens and onion slices. Top with fried chicken strips and dressing.

¼ cup honey
¼ cup Dijon mustard
1 teaspoon white wine vinegar
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 large head red leaf lettuce, torn
1 pint grape tomatoes, halved
4 tricolor mini sweet peppers, seeded and thinly sliced
½ cup thinly sliced celery
8 deli fried chicken tenders

Steps:

  • In a small bowl, whisk together olive oil and next 5 ingredients. Cover and refrigerate for up to 5 days. Divide lettuce and next 3 ingredients among 4 serving plates. Top each with 2 chicken tenders, and drizzle with mustard mixture.

1/2 cup mayonnaise
1/2 cup sour cream
1/2 lemon, juice of
1/4 cup slivered almonds

This recipe came from Paula Deen who has a cooking show on the Food Network. This chicken is so good. The house seasoning is made in bulk. You can store this for several months.

4 eggs
1/3 cup water
1 cup hot red pepper sauce (does not make chicken spicy)
2 cups self rising flour
1 teaspoon pepper
2 1/2 lbs chicken, cut into pieces
peanut oil or vegetable oil
1 cup salt
1/4 cup pepper
1/4 cup garlic powder

Steps:

  • Mix seasoning together and store in airtight container for up to 6 months.
  • In medium bowl, beat eggs with water. Add enough hot sauce so mixture is bright orange.
  • In another bowl, combine flour and pepper. Season chicken with house seasoning. You can let the chicken sit in hot sauce for up to 1 hour. It will not make the chicken spicy.
  • Dip Chicken in egg and coat well with flour mix.
  • Heat oil to 300 degrees in deep pot. Don't fill pot more than half full of oil.
  • Fry chicken in oil until brown and crispy. Dark meat goes in first and takes 13-14 minutes. White meat takes 8-10 minutes.
  • Preparation depends on how long you let the chicken soak in hot sauce.
