BOBBY'S LIGHTER BACON CHEESEBURGER MEATLOAF



Bobby's Lighter Bacon Cheeseburger Meatloaf image

This lightened up recipe is perfect for when you're craving a burger or meatloaf. Swaps like ground chicken or turkey, fat-free mozzarella, reduced-fat bacon and even the addition of zucchini make this bacon cheeseburger meatloaf a healthier option.

3 slices torn whole wheat bread
1/4 cup low fat milk
2 teaspoons canola oil
1 (8 oz) package coarsely chopped mushrooms
1 finely chopped onion
1 teaspoon salt
1 small shredded zucchini
1 (20.8 oz) package or chicken ground turkey
1/2 cup shredded fat-free mozzarella cheese
4 slices reduced-fat center-cut bacon
1/4 cup plain breadcrumbs
1 large egg
1/4 cup ketchup
1 tablespoon spicy brown mustard
2 tablespoons French fried onions

Steps:

  • Preheat oven to 350 °F. Line a broiler pan with foil and lightly spray the foil with nonstick spray.
  • Combine the bread and milk in a large bowl; let stand 10 minutes to soften. Heat the oil in a large nonstick skillet over medium-high heat. Add the mushrooms, onion, and 1/4 teaspoon salt; cook, stirring occasionally, until the vegetables are very tender, 5-7 minutes. Add the zucchini and cook, stirring until softened, about 3 minutes. Remove from the heat; let cool slightly.
  • Add the mushroom mixture, turkey, cheese, bacon, breadcrumbs, egg and remaining 3/4 teaspoon salt to the bread mixture. Toss gently to combine. In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture. Shape into a loaf and place on the pan. Spread the remaining ketchup mixture over the loaf. Bake 40 minutes. Top with French fried onions. Bake until an instant-read thermometer inserted into the center of the loaf registers 160º, 10-15 minutes longer. Let stand 10 minutes before slicing. Cut into 12 slices.

10 slices bacon
⅓ cup ketchup
2 tablespoons prepared yellow mustard
1 pound ground beef chuck
1 (8 ounce) package shredded Cheddar cheese
2 eggs, beaten
¼ cup dry bread crumbs
¼ cup mayonnaise
1 tablespoon Worcestershire sauce
¼ teaspoon salt
¼ teaspoon ground black pepper
1 (3 ounce) can French-fried onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels. When cool, crumble into a large bowl.
  • Mix ketchup and mustard in a bowl.
  • Thoroughly combine 1/4 the ketchup mixture, ground chuck, Cheddar cheese, eggs, bread crumbs, mayonnaise, Worcestershire sauce, salt, and black pepper with crumbled bacon in bowl; pat the mixture into a 5x9-inch loaf pan. Spread remaining ketchup mixture evenly over top of meatloaf.
  • Bake in the preheated oven until the meatloaf is no longer pink inside, about 45 minutes. Spread French-fried onions over the top of the loaf and return to oven until onions are browned and an instant-read meat thermometer inserted into the center of the loaf reads at least 160 degrees F (70 degrees C), 10 to 15 more minutes.

8 ounce(s) cheddar cheese, grated

1/4 cup(s) mayonnaise
1 tablespoon(s) worcestershire sauce
1/4 teaspoon(s) salt and pepper
1/3 cup(s) ketchup
2 tablespoon(s) mustard
3 ounce(s) can french's onions

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the ground chuck and next 8 ingredients, mixing well. In a small bowl, combine the ketchup and mustard. Stir 1/4 cup ketchup mixture into meat mixture, reserving remaining ketchup mixture.
  • Press meat mixture into a 9x5x3-inch loaf pan, or shape into a loaf and place on a rack in a broiler pan. Spread remaining ketchup mixture over loaf. Bake 40 minutes. Top with French fried onions; bake 10 to 15 minutes, or until meat is no longer pink.
