1 tablespoon olive oil
4 cherry peppers
1 onion, cut in bite-sized pieces
1 bell pepper, cut in bite-sized pieces
1 1/2 lbs boneless chicken breasts, cut in bite-sized pieces
2 garlic cloves, crushed
1 (28 ounce) jar tomato and roasted garlic pasta sauce
1 lb angel hair pasta
parmesan cheese

Steps:

  • Heat a large, deep frying pan over medium heat. Add olive oil, then add hot cherry peppers, onion and bell pepper. Saute 2 minutes. Add chicken pieces and crushed garlic. Saute 3 or 4 minutes until browned. Add pasta sauce, lower heat and simmer.
  • Meanwhile, cook pasta according to package directions. Drain and put in a serving bowl. Pour chicken and sauce over pasta. Serve with Parmesan cheese.

1 (16 ounce) package angel hair pasta (or thin spaghetti)
1 1/4 lbs chicken breasts, cut into 1-inch cubes
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons olive oil, divided
1 large carrot, diced (or 1/2 cup baby carrots)
2 tablespoons butter
1 medium onion, chopped
1 celery rib, diced
3 large garlic cloves, minced
2 cups heavy whipping cream
5 slices bacon, cooked and crumbled (optional)
3 tablespoons lemon juice
1 teaspoon italian seasoning
1 cup parmesan cheese, shredded (optional)

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute the chicken, salt and pepper in 2 tablespoons oil until no longer pink. Remove and keep warm.
  • In the same skillet, saute carrot in butter and remaining oil for 1 minute. Add the onion, celery, and garlic; saute 3-4 minutes longer or until tender.
  • Stir in the cream, bacon, lemon juice and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 2-3 minutes or until slightly thickened, stirring constantly. Return chicken to the pan.
  • Drain pasta; toss with chicken mixture. Garnish with Parmesan cheese.

This is a delicious recipe from "Newman's Own" Cookbook. We have never been able to find his "Newman's Own Say Cheese Pasta Sauce", so feel free to use your favorite one!

8 pieces chicken
kosher salt, to taste
fresh ground black pepper, to taste
1/2 cup all-purpose flour, for dredging
1/4 cup vegetable oil
8 ounces mushrooms, quartered
1/2 cup of good dry white wine (optional)
1 (16 ounce) jar of newman own say cheese pasta sauce or 1 (16 ounce) jar your favorite pasta sauce
1/2 cup of chopped walnuts
1/4 cup fresh basil or 1/4 cup fresh parsley, chopped

Steps:

  • Preheat the oven to 375F Pat the chicken dry with paper towels, season with salt and pepper, and dredge in flour, shaking off the excess.
  • Heat the oil in a 12" ovenproof skillet.
  • Add the chicken pieces, skin side down, and brown over medium heat for 7 to 8 minutes until crisp and golden.
  • Turn the chicken over and cook 3 to 4 minutes more.
  • Remove the chicken from the pan and set aside.
  • Continue to cook the fat until the solids stick to the pan without burning and the fat is clear.
  • Discard the fat, add the mushrooms and cook for 3 minutes.
  • Add the wine (optional) and bring to a simmer, stirring to incorporate the browned bits.
  • Reduce by half.
  • Add the spaghetti sauce and bring to a boil.
  • Return the chicken to the pan, skin side up.
  • Place the pan in the oven and bake the chicken, uncovered, for 10 minutes.
  • Remove the breast pieces and keep warm.
  • Cook the dark meat 5 minutes more.
  • Transfer the chicken to a serving casserole and pour the sauce over it.
  • Sprinkle with the walnuts and basil (or parsley) on top.
  • Serve.

1 lb boneless chicken breast (cut in 1/2 inch wide strips)
4 garlic cloves (sliced)
extra virgin olive oil
4 -5 hot cherry peppers (red & green)
1/4 cup butter
1 (28 ounce) can whole tomatoes (cut up)
1 large vidalia onion (large dice)
2 tablespoons red wine
Tabasco sauce
salt & pepper
white rice or fettuccine

Steps:

  • Saute 2 cloves Garlic.
  • Add chicken to pan, and brown. Remove chicken and set aside.
  • Keep the pan hot. Add more olive oil and additional 2 cloves garlic. When garlic starts to brown add the onions. When onions are translucent add the cherry peppers and saute 2 minutes
  • Add the red wine.
  • Add in the butter and let it melt down. Add in the tomatoes and bring to a low boil. Salt and pepper and tabasco to taste.
  • Add the chicken back in for 2 minutes. Serve on top of white rice or fettucine noodles.

1 lb large shrimp, cleaned, tails on
6 cups broccoli rabe, - 2 heads stems removed
4 garlic cloves, minced
3 -4 tablespoons olive oil
1 (10 ounce) can chicken broth, more if needed
1 teaspoon red pepper flakes, pepperoncini
1 lb angel hair pasta
salt and pepper, to taste, if you like it soupier add more chicken broth
parmesan cheese, if desired

Steps:

  • In large saute pan, heat olive oil.
  • Add garlic till softened.
  • Add broccoli rabe and toss.
  • Add chicken broth and shrimp, simmer till shrimp are pink but not overcooked.
  • Add pepper flakes.
  • Meantime, boil the Angel Hair and drain.
  • Add to saute pan and toss well with tongs.
  • I serve it right from the saute pan. I prefer it without cheese but to each his own!

crushed red pepper flakes, to taste
1 garlic clove, minced
4 cups hot cooked angel hair pasta (about 8 ounces uncooked pasta)
1 cup crumbled feta cheese
