2 ½ cups all-purpose flour
1 teaspoon salt
1 cup shortening
1 egg yolk
½ cup milk
10 apples - peeled, cored and thinly sliced
½ cup light brown sugar
¼ cup white sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 egg white

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.)
  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Beat egg yolk in measuring cup and add enough milk to make 2/3 cup total liquid. Stir into flour mixture until all flour is damp. Divide the dough in half. On floured surface, roll half the dough into a rectangle and fit into a 9x13 inch pan.
  • In large bowl, combine apples, brown sugar, white sugar, cinnamon and nutmeg. Put apple mixture in pan. Roll out remaining dough and place over apples. Seal edges and cut slits in top dough. Beat egg white till frothy and brush on crust.
  • Bake in the preheated oven for 50 minutes, or until golden brown.

2 ½ cups all-purpose flour
1 teaspoon salt
1 cup shortening
1 egg yolk
Milk
1 cup cornflakes
8 - 10 tart cooking apples, peeled, cored and sliced (8 cups)
¾ - 1 cup granulated sugar
1 teaspoon ground cinnamon
1 egg white, lightly beaten
1 cup powdered sugar
3 - 4 teaspoon milk

Steps:

  • In a large bowl combine flour and salt. Using a pastry blender, cut in shortening until the mixture resembles coarse crumbs. In a liquid measuring cup, beat egg yolk lightly. Add enough milk to make 2/3 cup liquid. Stir well to combine. Stir milk mixture into flour mixture with a fork until combined (dough will be slightly sticky). Divide mixture in half.
  • On a well-floured surface, roll half of the dough to a 17x12-inch rectangle. Fold dough crosswise into thirds. Transfer to a 15x10x1-inch baking pan and unfold dough, pressing to fit into the bottom and sides of the pan. Sprinkle with cornflakes. Top evenly with apples. In a small bowl combine granulated sugar and cinnamon. Sprinkle mixture over apples. Roll remaining dough to a 15x10-inch rectangle. Fold dough crosswise into thirds. Place atop apples and unfold dough. Crimp edges or use the tines of a fork to seal. Cut slits in the top. Brush top with beaten egg white.
  • Bake in a 375 degrees F oven for 50 minutes or until golden and apples are tender, covering with foil after the first 25 minutes of baking time to prevent overbrowning.
  • In a small bowl combine powdered sugar and 2 to 3 teaspoons milk to make a drizzling consistency. Drizzle over warm bars. Let cool completely on a wire rack. Cut into bars. Makes 32 bars.

1 teaspoon salt
1 cup butter
1 egg yolk
⅔ cup cold water
1 cup cornflakes cereal
10 apples - peeled, cored and sliced
¾ cup white sugar
2 teaspoons ground cinnamon
½ cup confectioners' sugar
1 tablespoon milk
½ teaspoon almond extract

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs. In a cup, beat egg yolk, stir the cold water into the yolk. Gradually stir the egg mixture into the flour mixture until dough can be packed into a ball. On a clean dry surface, roll out 1/2 of the dough large enough to cover the bottom and sides of a 9x13 inch pan. Lay the dough in the pan.
  • Place the cornflakes over the dough in the pan. Arrange apple slices over the top of the corn flake layer. Sprinkle the sugar and cinnamon over the apples. Roll out the second half of the dough to cover the entire pan. Lay over the filling and pinch the edges of the two crusts together. Beat the egg white until foamy, and brush onto the top crust.

1/2 teaspoon salt
1 cup shortening
1 egg yolk, with enough milk to make 2/3 cup
4 handfuls corn flakes
8 -10 medium apples
1 cup sugar
1 teaspoon cinnamon
1 egg white
1 cup powdered sugar
1/2 teaspoon vanilla
2 -3 tablespoons milk

Steps:

  • Cut shortening into flour and salt. Add egg yolk and milk mixture to form dough.
  • Roll out half the dough to cover bottom and sides of 16x10 cookie sheet.
  • Crush corn flakes and sprinkle over dough. Peel apples and slice thin over corn flakes. Sprinkle with cinnamon and sugar.
  • Roll out remaining dough and seal edges. Beat egg white stiff and brush over crust.
  • Bake at 375 degrees for 45 minutes. When hot out of the oven, drizzle with glaze from from powdered sugar, vanilla, and milk.

1 cup old-fashioned oatmeal
8 -10 tart apples, sliced (8 cups)

This has been a family favorite since the 1970's when my grandmother made them. No fewer than 3 of my aunts commented when I posted this picture on Facebook about how they were their favorite fall treat. I remember my mother making them at least once every autumn. They are lovely. The frosted flakes absorb the apple juices and turn the filling into a velvety, delicious mouthful.

FOR THE PASTRY
2 1/2 cup(s) all purpose flour
1 teaspoon(s) salt
1 cup(s) cold butter cut into pieces
1 large egg - separated
1/2 cup(s) milk (see instructions)
FOR THE FILLING
10-12 medium apples -- use a variety
1 cup(s) white sugar
1 teaspoon(s) cinnamon
2 cup(s) frosted flakes cereal
FOR THE GLAZE
1 cup(s) powdered sugar
1-3 tablespoon(s) milk or cream

Steps:

  • For the pastry: combine the flour and salt. Cut in the cold butter. Separate the egg. Put the yolk in a 2/3 cup measuring cup and add enough milk to fill the cup. Pour into a bowl and beat the egg yoke with the milk. Mix into the flour/butter mixture to form a dough.
  • Divide the dough in half and roll first half out and transfer to large rimmed cookie sheet or jelly roll pan (15x10) that has been sprayed with cooking spray. Sprinkle frosted flakes evenly on the bottom crust.
  • Peel, core and slice apples. I like to use a mixture of Granny Smiths, Galas, Fuji and Cosmic Crisp Apples. If the apples are large, you might not need so many. Distribute the apples evenly on top of the frosted flakes.
  • Mix white sugar and cinnamon together and sprinkle evenly over the top of the apples. Roll out the second half of the dough and lay it over the top of the apples. Seal the edges and cut slits in the dough. Beat the egg white until frothy and brush on the top crust.
  • Bake at 375 degrees for 50 minutes. While baking, combine powdered sugar with enough milk or cream to make it easy to drizzle or spread. When the bars come out of the oven, top with the glaze. Cut into squares and eat warm or cold.

1 tsp. salt
Add and mix with fingers:
1 cup shortening
Combine:
1 egg yolk, slightly beaten and enough milk to measure 2/3 cup liquid. Pour into flour mixture and mix together forming the dough.

Steps:

  • Combine: 1 egg yolk, slightly beaten and enough milk to measure 2/3 cup liquid. Pour into flour mixture and mix together forming the dough. Take ½ the dough and roll out to fit a 15x11 inch greased cookie sheet. Sprinkle 1 cup crushed corn flakes over the dough. Peal 8 apples and slice over the corn flakes. Combine 1- cup sugar and 1 tsp. cinnamon and sprinkle over the top of the apples. Roll out the other half of the dough and cover. Beat 1 egg white until stiff. Brush over the top. Bake at 400 degrees for 35 to 40 minutes. Ice with powdered sugar glaze.
