This is an actual recipe from a former employee of a popular drive-in restaurant. Crispy coated onion rings like the pro's make!

1 large onion, cut into 1/4-inch slices
1 ¼ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
¾ cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed

Steps:

  • Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
  • Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
  • Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
  • Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

1 medium onion
1 pack sliced pepperoni
1 ball mozzarella cheese, cut into cubes
1 jar pizza sauce, this can be a basic pasta sauce or passata etc
1 cup grated parmesan cheese
3 tablespoons dried oregano
oil, for deep frying
3 eggs
2 cups panko breadcrumbs
2 tablespoons flour
2 teaspoons dried oregano
2 teaspoons paprika

Steps:

  • Cut onion into 2 cm (1 inch) slices. Carefully separate the layers into individual rings.
  • On a tray lined with baking paper, lay out onion rings and place a slice of pepperoni in the centre, pushing the pepperoni slice down to take the shape of the onion and make a bowl.
  • Layer in a tablespoon of pizza sauce, mozzarella, some parmesan, and a sprinkle of oregano.
  • Place tray in freezer until solid (about two hours).
  • Add flour, beaten eggs, and panko breadcrumbs to three separate bowls. Stir paprika and oregano into the flour
  • Remove frozen pizza rings from freezer.
  • Roll each first in seasoned flour, then egg, then breadcrumbs.
  • In a large saucepan, heat oil to 180˚C (350°F).
  • Fry pizza onion rings in batches until nicely browned on all sides, about 3 minutes.
  • Place on paper towel-lined plate to drain off any excess oil. Sprinkle with more dried oregano.

1 pint cherry tomatoes, halved
1 medium red onion, cut into 1/2-inch rings
1 yellow bell pepper, quartered, seeds and ribs removed
1 red bell pepper, quartered, seeds and ribs removed
1 summer squash, sliced on the bias into 1/2-inch pieces
1 zucchini squash, sliced on the bias into 1/2-inch pieces
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 teaspoon red pepper flakes, or to taste
1 (12-inch long) loaf Italian bread with sesame seeds
Lemon Mayo, recipe follows
1 (8-ounce) ball fresh mozzarella, sliced
1 bunch basil leaves
3/4 cups mayonnaise
3 cloves garlic, minced
1/2 lemon, zested
1 teaspoon lemon juice
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the grill to medium.
  • In a large bowl, toss the vegetables with olive oil and season with salt and pepper, to taste. Arrange the vegetables on the grill, turning occasionally, until charred and tender, about 10 minutes. Remove to a plate and sprinkle with red pepper flakes.
  • Slice the bread in half lengthwise with a serrated knife. Toast the bread on the grill Remove the bread and evenly spread Lemon Mayo on both sides. Evenly divide the vegetables on the bottom halves of the bread. Top with the sliced mozzarella and a handful or so of the basil. Cover with the top half of the bread and secure with toothpicks. Slice into 4 portions and serve.
  • Add the mayonnaise, garlic, lemon zest, lemon juice and salt and pepper, to taste, to a small bowl. Cover with plastic wrap and refrigerate until needed.

I saw this is America's Test Kitchen today and they looked so delicious! They used Regular Lay's potato chips and saltine crackers for their breading, but they didn't say how much, I am guessing at least 1/2 cup of each.

4 -5 large yellow onions, enough to make about 24 rings
3/4 cup buttermilk
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne (if you like some heat) (optional)
1 egg
1/4 cup flour
1/2 cup lay's regular potato chips
1/2 cup saltine crackers
3 teaspoons oil

Steps:

  • Heat oven to 450°F When hot, oil two baking sheet with the oil and place into the oven to get hot, about 8 minutes.
  • Cut off the ends of the onions and peel the outer layer off. Slice into 2 Inch thick slices. Remove the inside layers to created the rings.
  • In a food processor, combine the potato chips and the saltine crackers and mix fine into crumbs. Lay them into a medium sized bowl.
  • In another separate bowl, combine the buttermilk, egg, and salt, pepper, and cayenne and stir to combined.
  • In a small bowl add the 1/4 cup of flour.
  • Now to assemble the onion rings. Dip each ring into the flour first to get it dried. Dip them into the buttermilk mixture and then into the crumb mixture.
  • Lay them onto a dish.
  • Remove the baking sheets from the oven and place the rings on the hot pans, allowing enough room to fry. There should be 12 rings on each sheet.
  • Place back in the oven and cook for about 8 minutes. Remove them from the oven and turn each ring to assure both sides get fried. Place back in the oven and continue cooking for about 8-10 minutes and golden brown.
  • Allow to cool for a few minutes and enjoy!

1-1/2 cups all-purpose flour
1 tablespoon sugar
1 tablespoon cornmeal
2 teaspoons salt

2-1/2 cups finely chopped onions

Steps:

Delicately battered onion rings can be made at home without fuss; seltzer, or carbonated water, is the secret ingredient. Fried parsley adds a steakhouse flourish.

1 Vidalia onion, sliced crosswise into thin rings
1 1/4 cups all-purpose flour (spooned and leveled)
1/2 cup cornstarch
1 1/2 teaspoons baking powder
1 teaspoon coarse salt
1 can (12 ounces) seltzer or other carbonated water
6 cups vegetable oil
Coarse salt
1/2 cup fresh parsley leaves, washed and dried very well

Steps:

  • Line a baking sheet with paper towels; set aside. Place onion rings in a large bowl of ice water for 10 minutes; drain and pat dry. In a large bowl, whisk together flour, cornstarch, baking powder, salt, and seltzer.
  • In a heavy 5-quart pot or Dutch oven, heat oil over high until a deep-fry thermometer registers 375 degrees. Working in 7 to 8 batches, place onions in batter; using your fingers, lift out, letting excess drip off. Carefully place in oil, making sure not to overcrowd pot; cook until golden brown, 2 to 3 minutes.
  • Transfer rings to prepared baking sheet, and season with salt. Keep warm in a 250-degree oven. Return oil to 375 degrees before starting next batch.
  • Once all the onion rings are done, place on a platter. Very carefully place parsley in pot (oil will spatter), and fry until crisp, 10 seconds; remove, using a spider or slotted spoon, and season with salt. Sprinkle onions with parsley.
