1/3 cup vegetable oil
1/3 cup applesauce
1 egg
4 very ripe bananas
2 tablespoons buttermilk
1/4 cup pecans
1/2 cup wheat bran
4 tablespoons flax seed meal
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup Splenda sugar substitute
1/4 cup sugar

Steps:

  • Combine first 8 ingredients in a blender. Mix until bananas and nuts are smooth. Empty mixture from blender into a bowl and stir in remaining ingredients. Mix well. Pour into muffin cups. Bake at 350 for 25 minutes.

1 1/4 cups mashed ripe bananas
3/4 cup sugar
2/3 cup buttermilk
4 1/2 tablespoons margarine
1/2 teaspoon vanilla extract
2 eggs
2 2/3 cups all-purpose flour
3/4 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 tablespoon cinnamon
4 tablespoons sugar

Steps:

  • Preheat oven to 350º F.
  • Lightly grease muffin tins or line with paper cups.
  • Place bananas, sugar, yogurt, melted butter, vanilla, and eggs together in a large mixing bowl and beat with a wooden spoon until smooth.
  • In a second bowl sift together flour, baking powder, baking soda, cinnamon and salt.
  • Add dry ingredients to wet and mix until just combines. Do not over-mix, or.the muffins will be tough.
  • Fill muffin cups three-quarters of the way full.
  • Mix cinnamon and sugar and sprinkle on to the tops of the muffins to your liking.
  • Bake in oven for about 25 minutes.
  • A toothpick inserted in the center of the muffins will come out clean when they are cooked.
  • Remove from the oven and cool before serving.

2 cups whole wheat flour

3 mushed medium bananas

3/4 cup all-purpose flour
3/4 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon ground nutmeg
2 egg whites
1 cup mashed ripe bananas (about 2 medium)
1/2 cup packed brown sugar
1/4 cup fat-free milk
1/4 cup canola oil
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, beat the egg whites, bananas, brown sugar, milk and oil. Stir into dry ingredients just until moistened.
