6 tablespoons canola oil, divided
1 large onion, sliced
1/2 lb fresh mushrooms, sliced (optional)
1 small green bell pepper, sliced (optional)
1 small red bell pepper, sliced (optional)
1 1/2 lbs beef rib eye steaks, thinly sliced
4 crusty Italian rolls, split
processed cheese sauce (Kraft Cheez Whiz)
ketchup (optional)

Steps:

  • In a large skillet, saute the onion, mushrooms and peppers in 3 tablespoons oil until tender. Remove and keep warm.
  • In the same pan, saute the beef in the remaining oil (45-60 seconds).
  • On each roll bottom, layer the beef, onion mixture, cheese and ketchup, if desired. Replace tops.

For Philadelphians, there's no hotter debate than who serves the best cheesesteak: Pat's King of Steaks or Geno's Steaks. By most accounts, Pat Olivieri invented the sandwich of thinly sliced beef and onions in the 1930s; the cheese came along a decade later. Geno's opened a few feet from Pat's in 1966 with an almost identical menu, and the rivalry began. Today, Pat's sandwiches have chopped steak; Geno's have sliced.

2 tablespoons extra-virgin olive oil
1 onion, thinly sliced
Kosher salt and freshly ground pepper
1 pound shaved beef
Hot sauce, to taste
Worcestershire sauce, to taste
4 hoagie or hero rolls, split
Sliced cherry peppers and American cheese, for topping

Steps:

  • Preheat the broiler. Heat the olive oil in a large skillet over medium heat. Add the onion and cook, stirring, until golden, about 4 minutes; season with salt and pepper. Remove the onion to a plate. Add the beef to the skillet and cook, stirring, until just starting to brown, about 8 minutes. Add a few dashes each of hot sauce and Worcestershire sauce and toss to coat.
  • Pile the beef and onion onto the rolls and top with cherry peppers and cheese. Place on a baking sheet and broil (open-face) until the cheese melts.

Number Of Ingredients 7

24 oz thin sliced rib eye or eye roll steak (pat's uses ribeye) - crave brand...if not available use whatever good quality label is available in your area
6 Tbsp soy bean oil
1 jar(s) cheez whiz® (american or provolone works fine)
4 crusty italian rolls
1 large spanish onion cut into large dice
optional--sweet green and red peppers sautéed in oil
optional--mushrooms sautéed in oil

Steps:

  • 1. Melt the Cheez Whiz® in a double boiler or in the microwave and keep warm until ready to use
  • 2. Heat an iron skillet or a non stick pan over medium heat
  • 3. Add 3 tablespoons of oil to the pan and sauté the onions to desired doneness
  • 4. Remove the onions
  • 5. Add the remaining oil and sauté the slices of meat quickly on both sides
  • 6. Return onions to pan and heat all ingredients through.
  • 7. spread Whiz on rolls. If you like extra cheese drizzle on top of steak once added to the roll, but you MUST spread the whiz on the roll to ensure you get a bite of cheese with every bite of meat.
  • 8. divide meat mixture between rolls
  • 9. Put on the theme song to the first Rocky movie and enjoy!
  • 10. NOTE--If you decide to use the peppers and mushrooms, add them all back to the meat to heat through prior to plating.
