PAT'S CHERRY DELIGHT

This is a recipe that I made up of different parts of several other recipe's and it has been a hit everywhere I take it. It has become a holiday staple in my family since the first Christmas I made it.

CRUST
1/2 c butter
1 c flour
1/2 c pecans, in pieces
1/4 c sugar
FILLING
4 pkg cream cheese (8 0z, room temperature)
2 c powdered sugar
1 pkg cool whip (16 0z)
2 can(s) cherry pie filling (15 0z)

Steps:

  • 1. To make crust: Melt the butter in microwave, then add the flour, sugar and pecans. Mix with a fork. Mixture will be thick. Spread mixture onto ungreased 13 x 9 pan and bake in 425 degree oven for 5 to 10 minutes or until just starting to turn brown around the edges. Watch closely because this burns very easily, and if you cook it until entire crust is brown it will stick to the pan. Set aside and allow to cool completely.
  • 2. To make filling: Mix the cream cheese with electric mixer until smooth. Add powdered sugar and beat until blended well. Beat in the cool whip until smooth and creamy. Pour mixture onto the cooled crust. Top with the two cans of Cherry pie fullling. Cover and chill over night.

CLASSIC CHERRY DELIGHT

This Classic Cherry Delight comes together in just minutes and is made of three simple layers. If you want a dessert that's not overly sweet yet delicious, this is it!

7 tablespoons unsalted butter
1 1/2 cups graham cracker crumbs (about 9 whole crackers)
3 tablespoons granulated sugar
8 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon pure vanilla extract
1 container cool whip, 8 ounces
1 can cherry pie filling, 21 ounces

Steps:

  • Add the butter to a medium bowl. Microwave for 30 seconds or until melted. Add the graham cracker crumbs and sugar and mix well to combine. Pat the crumb mixture firmly into the bottom of a sprayed 8 x 8 baking dish. Set aside.
  • Add the cream cheese to a large bowl. Mix with a mixer until the cream cheese of smooth and free of any lumps. Add the powdered sugar and vanilla and mix well. Add the cool whip and mix until the cool whip and cream cheese are combined, but don't overmix.
  • Spread the filling evenly over the graham cracker crust, using a spoon or offset spatula. Spoon the cherry pie filling over the top and carefully spread it evenly over the filling.
  • Refrigerate for at least 2 hours before serving. I like to leave it overnight.
  • Refrigerate leftovers.

Steps:

  • Mix graham cracker crumbs, 1/2 cup confectioners' sugar, and butter together in a bowl; press into a 9x9-inch pan.
  • Whisk cream cheese, whipped topping, and 1 cup confectioners' sugar together in a bowl until smooth; spread over graham cracker crust. Pour cherry pie filling over cream cheese mixture layer. Refrigerate until firm, at least 1 hour.

1 cup chopped pecans
1/2 cup packed brown sugar
1/2 cup butter, softened
FILLING:
2 packages (8 ounces each) cream cheese, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
1 carton (12 ounces) frozen whipped topping, thawed
2 cans (21 ounces each) cherry pie filling

Steps:

  • Preheat oven to 350°. In a small bowl, combine the flour, pecans and brown sugar. Stir in butter until crumbly. Lightly pat into an ungreased 13-in. x 9-in. baking dish. Bake until golden brown, 18-20 minutes. Cool completely., For filling, in a large bowl, beat the cream cheese, confectioners' sugar and vanilla until smooth. Fold in whipped topping. Carefully spread filling over crust. Top with pie filling. Cover and refrigerate for at least 2 hours.

1 3/4 cups crushed graham cracker crumbs
1/3 cup sugar
1/4 cup melted butter
2 cups whipped dream whipped topping (1 envelope)
1/2 teaspoon vanilla
1 (8 ounce) package cream cheese, softened
1 (28 ounce) can cherry pie filling

Steps:

  • Prepare a 9 x 9" baking pan.
  • In a bowl, mix the graham cracker crumbs, melted butter and 1 tbsp sugar; spread on bottom of prepared baking pan to form a crust.
  • Mix the Dream Whip topping according to directions on the package, then beat in the softened cream cheese into the Dream Whip a little at a time.
  • Add the remaining sugar and vanilla until well blended.
  • Smooth on top of the crust.
  • Top with the cherry pie filling.
  • Chill at least 3 hours (overnight is even better) if storing in the fridge overnight, cover with plastic wrap.
