1/3 cup butter, softened
1 cup sugar
1 egg
1-1/4 cups applesauce
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugar. Add the egg and applesauce; mix well. Combine the flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves. Stir into creamed mixture just until moistened. Fold in raisins and nuts. , Pour into a greased 8x4-in. loaf pan. Bake at 350° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

170 grams (1 1/2 cups) whole-wheat pastry flour
70 grams (1/2 cup) unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/2 teaspoon ground cloves
1 teaspoon ground ginger
1/2 teaspoon salt
2 large eggs
90 grams (about 1/2 cup) raw brown sugar (turbinado) or packed light brown sugar
1/4 cup canola oil or grapeseed oil
1/4 cup plain low-fat yogurt or buttermilk
1 cup organic applesauce with no sugar added
1 teaspoon vanilla extract
50 grams (about 1/2 cup) walnuts, coarsely chopped, or 1/2 cup raisins, plumped for 5 minutes in warm water and drained

Steps:

  • Preheat the oven to 350 degrees with a rack in the middle. Lightly oil a loaf pan and line with parchment. Oil the parchment.
  • Sift together the flours, baking soda, spices and salt.
  • In a large bowl, beat together the eggs and sugar until the mixture is thick. Beat in the oil, yogurt or buttermilk, applesauce and vanilla. Whisk in the flour mixture without overbeating, and fold in the walnuts or raisins.
  • Scrape into the loaf pan and bake 45 to 50 minutes, until the bread is firm and a toothpick inserted in the middle comes out clean. Let cool in the pan for 15 minutes, then turn out onto a rack to cool completely.

1 1/4 cups unsweetened applesauce (room temperature)
1 egg
1 1/2 teaspoons salt
2 tablespoons packed brown sugar
1 tablespoon light molasses
2 tablespoons vegetable oil
2 cups whole wheat flour
1 cup bread flour
1 teaspoon ground ginger
1 1/2 teaspoons bread machine yeast or 1 1/2 teaspoons fast rising yeast
2/3 cup raisins

Steps:

  • Measure all ingredients except raisins into baking pan in the order recommended by the manufacturer.
  • Insert pan into the oven chamber.
  • Select Whole Wheat Cycle; press start.
  • Add the raisins at the "add ingredient" signal.
  • When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
  • Let cool to room temperature before slicing.
  • **If your bread machine does not have an "add ingredient" signal on the Whole Wheat Cycle, add the raisins on top of the flour--or check the manufacturer's directions for use--then set a timer for 5 minutes before the end of the second long knead.
