Go full-on kitsch with this 1970s-inspired platter: Pair grocery-store favorites like a port wine cheese ball and cubed havarti with a classic baked brie and old-school crackers. Don't forget the frilly toothpicks!

- Roll out 1 sheet puff pastry into a 12-inch round on a lightly floured surface. Trim into a circle and place an 8-ounce wheel of brie in the center. Brush the pastry with egg wash; fold into the center over the brie, pressing to seal. Press a smaller round of puff pastry on top, then brush all over with more egg wash. Bake at 400 degrees F until golden, 25 minutes.

An easy Pastry-Wrapped Brie recipe with Raspberries

- Preheat oven to 400°F. Stir preserves, berries and rosemary in small bowl to blend. Season berry mixture with pepper. Roll out pastry on lightly floured surface to 12-inch square. Cut top rind off cheese; discard rind. Place cheese, rindless side up, in center of pastry. Spoon raspberry mixture onto cheese. Fold pastry on 2 opposite sides over cheese. Brush remaining 2 sides of pastry with glaze. Fold over cheese; press seams to seal. Brush pastry with glaze; place on baking sheet.
- Bake cheese until pastry is deep golden brown (top of pastry may split open), about 30 minutes. Let cool 20 minutes. Place baked cheese on serving platter. Surround with crackers, baguette slices, and grapes.
PUFF PASTRY WRAPPED BRIE
Steps:
- 1. Heat oven to 400 degrees F. Beat egg and water in bowl.
- 2. Unfold pastry on lightly floured surface. Roll into 14" square. Place cheese in center. Fold pastry up over cheese to cover. Trim excess pastry and press to seal. Brush seam with egg mixture. Place seam-side down onto baking sheet. Brush with egg mixture.
- 3. Bake for 25 minutes or until the pastry is golden brown. Let stand for 20 minutes.
BAKED BRIE AND RED PEPPER JELLY WRAPPED IN PHYLLO PASTRY
This is a nice twist to the traditional baked brie in puff pastry. I find that the phyllo lends to a more elegant presentation. Phyllo is not that tricky to work with - just keep the sheets that you aren't working with covered with plastic wrap and a damp towel. We traditionally use a 300 gram wheel of Triple Cream Brie, which converts to about .66 of a pound. Because of the size of the phyllo sheets (about 12" x 18"), you could likely use up to a pound of brie.

- Preheat oven to 350 degrees.
- Place brie on flat surface and with sharp knife, slice Brie in half horizontally.
- (This is much easier to do if Brie is nicely chilled first).
- Spread red pepper jelly on bottom half of Brie and then replace top half of brie and set aside.
- Using a pastry brush, brush butter on first sheet of phyllo, place a second sheet on top at roughly a 30 degree angle, brush with butter, place third sheet on top at roughly a 30 degree angle from the first, brush with butter and continue until all sheets have been used.
- (The reason for placing the sheets on angles is that you'll end up with a larger surface which makes for easier wrapping and it also gives you a more interesting presentation as you bring all the sheets together).
- Place Brie in centre of phyllo and gently pull all the sheets up and over the Brie, twisting closed at the top.
- Arrange the sheets in the"twist" in various directions.
- Brush entire package with melted butter.
- Bake for 30-35 minutes.
- Set aside for 5-10 minutes before serving.
- Serve with crackers or thinly sliced baguette.

BAKED CRAB WITH BRIE WRAPPED IN PUFF PASTRY

- In a mixing bowl combine crab meat, green onion, Tabasco sauce and mayonnaise and blend together.
- Set out frozen puff pastry about 20 to 30 minutes before ready to use.
- On a working surface place the brie and cut a ring about an inch from the side and left out the center ring and remove some of the brie and spoon in the crab meat mixture and place the center pieces back in place.
- Roll out pastry to 1/8" thickness. Cut off a 4" strip and set aside to use as decoration.
- Place Brie in center of puff pastry and bring up edges and crimp edges together around Brie, sealing completely. Turn Brie - crimped dough side down on a backing sheet. With remaining 4" of dough left cut out leaf design or anything you may want to use as a decoration. Place on top of dough covered Brie. Refrigerate until ready to bake. This can be kept overnight for your convenience. Just cover with plastic wrap.
- When ready to bake - remove plastic wrap. Mix egg yolk with 1 teaspoon water and brush entire dough covered Brie.
- Preheat oven to 400°. Bake for 15-20 minutes. Remove from oven and let set 20-25 minutes before serving.

PUFF PASTRY WRAPPED BRIE WITH MAPLE WALNUT FILLING
An appetizer that is fit for any large gathering with rich creamy brie and the sweet addition of raisins and maple syrup. A golden crust of puff pastry makes this a favourite for entertaining. - In a bowl, stir together walnuts, raisins and maple syrup until combined well and set aside.
- On lightly floured work surface roll out puff pastry to about a 12-inch circle.
- Using a large serrated knife, cut brie in half crosswise into two circles. Separate brie and spoon walnut mixture onto one of the circles.
- Top with remaining circle.
- Place stuffed brie in centre of pastry and fold pastry over top overlapping each piece decoratively to cover brie.
