Green with Envy Orecchiette and Red Wine Braised Sausages image

2 pounds - 8 short links or 4 large, hot or sweet Italian sausages
2 cups dry red wine
1/2 cup extra-virgin olive oil, divided
Salt
1 pound orecchiette pasta
1/2 cup hazelnuts
1 package or bunch chives, coarsely chopped or torn by hand
2 cloves garlic, popped from skin, 1 clove minced, divided
12 stems tarragon, 1 package or small bunch, leaves stripped from stems
Salt and freshly ground black pepper
1/2 cup grated Parmigiano-Reggiano, plus more to pass at table
1 bunch green Swiss chard, stems removed and roughly chopped
A little freshly grated nutmeg, to taste

Steps:

  • Orecchiette means little ears and the ears will be burning over this recipe - tasty and supper good for you. The friends and family you make it for will be green with envy to be able to make something so delicious!
  • Place sausages in a skillet and add wine and 1 tablespoon extra-virgin olive oil to the pan. Place pan over medium-high heat and let the wine reduce and evaporate, 15 to 18 minutes. Eventually, the casings will crisp up and the wine and oil will glaze the casings.
  • Place a pot of water on to boil for the pasta. Salt water and cook to al dente. Heads up: you will need 1 1/2 cups, a couple of ladles, starchy cooking water just before you drain the orecchiette.
  • Toast hazelnuts 5 minutes over medium-low heat in a small skillet. Cool a few minutes.
  • Place the chives, garlic, tarragon, salt and pepper and nuts into food processor and turn it on. Stream in about 5 tablespoons extra-virgin olive oil and process the ingredients into a smooth but thick sauce. Transfer the sauce to a bowl and stir in the cheese. The color is stronger if you stir rather than process the cheese into the sauce.
  • Heat remaining 2 tablespoons extra-virgin olive oil in a large skillet over medium high to high heat. Add greens, minced garlic and season with salt, pepper and nutmeg to taste. Sear greens, tossing them as they wilt down, 3 to 4 minutes.
  • Add cooking liquids to pesto in bowl then add pasta and greens and toss to coat the pasta and let the flavors absorb, 1 minute.
  • Serve 2 braised sausages with lots of greens alongside.

Italian Sausage Spaghetti image

This is my favorite method of making Italian sausage spaghetti. By browning the sausages first and then cooking them in the sauce at a long, slow simmer, the sausage is loaded with flavor and firm, but tender--almost meatball-like in texture. And we hardly need any seasonings because the long cook time allows the sauce to get infused with all the sausage-y goodness!

1 tablespoon olive oil
4 (6 ounce) sweet Italian sausage links
¼ cup white wine
1 (32 ounce) jar marinara sauce
1 ½ cups water
1 (16 ounce) package spaghetti
½ cup freshly grated Parmigiano-Reggiano cheese
2 tablespoons chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Heat olive oil in a saucepan over medium heat. Transfer sausage links into the hot pot. Cover with a lid and cook until beautifully browned and just barely cooked through, about 5 minutes per side. You can increase the heat a little if you like, but make sure the oil does not smoke. Turn off the heat and remove sausages to a plate to cool completely.
  • While the sausages are cooling, add wine to the same pot over medium-high heat. As it comes up to a simmer, stir the caramelized bits on the bottom of a pan with a spoon or spatula. Simmer until it reduces by about half, 1 to 2 minutes.
  • Add marinara sauce. Pour water into the jar of pasta sauce, seal, and shake to rinse out the jar. Pour that liquid into the pot and return to a simmer. Reduce heat to low.
  • Slice each fully cooled sausage into 4 pieces. Transfer sausage and any accumulated juices into the simmering sauce. Stir and increase heat to just between low and medium-low. Cook at a gentle, steady simmer, stirring occasionally, for 1 hour. Taste and adjust seasonings. Skim about 1/2 of the fat from the surface, and continue to cook until reduced and thick, about 30 minutes longer.
  • Meanwhile, bring a large pot of generously salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until almost tender yet firm to the bite, 10 to 11 minutes. Drain spaghetti and transfer it directly into the pot of hot sauce. Mix until thoroughly combined. Cover with the lid and let sit for 1 minute so the pasta can absorb some of the sauce.
  • Evenly divide pasta onto 4 plates and top each serving with 4 pieces sausage. Sprinkle with Parmigiano-Reggiano and parsley.

I grew up in an Italian household with my Grandfather (Carl D'andrea), teaching me from early childhood, his family recipe for 'basic tomato sauce' or marinara (not written down, completely from memory). I know this recipe like the back of my hand, and when I recently found myself with leftover italian sausages, peppers, and onions from italian sausage sandwiches the night before - I decided to 'get creative' with my grandfathers marinara recipe in combination. Awesome flavor, very good over pasta -- enjoy, & as my Grandpa used to say, 'Mangia!' (which means 'EAT' in Italian)...

28 ounces tomato sauce (use a good sauce such as Furmano's)
3/4 cup onions, chopped fine or 1 small onion
3 -4 garlic cloves, chopped or 2 -3 tablespoons store bought minced garlic
1/2 cup green pepper, chopped
1 medium size tomatoes, chopped
3 -4 Italian sausages, pre-cooked and chopped in food processor (sweet or hot, your preference)
1/4 cup extra virgin olive oil
1/4 cup dry red wine (a good one that you will drink)
3/4 cup water
2 -3 bay leaves
2 -3 tablespoons dried Italian herb seasoning (oregano, basil, parsley, thyme mixture)
2 teaspoons fennel seeds
1/4 teaspoon fresh ground black pepper
1/4 teaspoon kosher salt
1 pinch sugar

Steps:

  • In a large non-stick skillet with a lid, add the olive oil and warm over medium heat, allow oil to heat for approximately 2 minutes.
  • Add chopped onion and green pepper, cook for about 2-3 minutes or until onion is soft and you can see thru it, stir for even cooking.
  • Add chopped/minced garlic, stir and continue to simmer thru for another 2 minutes.
  • Add dry seasonings, chopped tomato, and chopped Italian sausage. Stir all and cook for another 2 minutes then add the ¼-cup dry red wine and stir all together.
  • Add fennel seed & black pepper, cook another 2 minutes longer.
  • Next, add the tomato sauce and water, bay leaves, salt and sugar, stir all and cover with lid, allow to cook on medium until mixture begins to slow boil, then remove lid. Stir again, cover and turn heat to a low simmer, allowing to cook for several hours or until ready to serve with pasta.
  • Allowing sauce to slow cook for at least 2-3 hours makes for a more robust sauce ~ serve with al dente pasta, a good crusty Italian bread (ciabatta for example), freshly grated Italian cheese (a good quality aged Pecorino Romano made from sheeps or goats milk is best, never cows milk), & your favorite red wine (our favorite is a good cabernet).
  • Sauce is also better the next day, so as a time saver make this sauce up a day ahead, allow to cool thoroughly before refrigerating, then serve the next night for dinner.
