Creamy Pasta With Smoked Salmon, Arugula and Lemon image

One selling point of smoked salmon is that you don't need to do much to it to get it on the table. Fold it on top of toast and dab it with sour cream and you have the lazy man's cocktail party. But take the salmon one or two steps further and you break out of the cliché. Salmon's buttery fat and smoke serve as useful flavoring elements. In this easy 15-minute meal, it's chopped up and used as a counterweight in pasta tossed with full-fat Greek yogurt, arugula, fresh dill, lemon zest and juice. It is, at once, lively and comforting.

Salt
3/4 pound casarecci, gemelli or gigli pasta
1 cup Greek yogurt
1/2 pound smoked salmon, cut into bite-size pieces
1 clove garlic, smashed and chopped
Zest and juice of 1 Meyer lemon (or a regular lemon)
2 cups packed arugula
1 1/2 teaspoons chopped fresh dill
Coarsely ground black pepper

Steps:

  • Bring a large pot of salty water to a rolling boil. Add the pasta. While it cooks, combine in a large serving bowl the yogurt, salmon, garlic, lemon zest and juice, arugula and dill. Just before the pasta is finished cooking, scoop out 1/2 cup pasta water and reserve.
  • Drain the pasta and slide it into the bowl. Using two spoons, toss the pasta and sauce as you would a salad. If the sauce is too thick, add a little of the reserved pasta water. Season to taste with salt and grind a generous amount of pepper on top.

9 ounces dried linguine or 9 ounces penne pasta
3 tablespoons butter
12 ounces smoked salmon, cut into 1/3 inch-wide strips
1 cup whipping cream, plus
2 tablespoons whipping cream
1 teaspoon tomato paste
3 teaspoons chopped fresh dill, divided
1/8 teaspoon cayenne pepper

Steps:

  • Cook pasta in a large pot of boiling, salted water until tender but still firm to bite, stirring occasionally.
  • Drain, reserving 1/4 cup cooking liquid.
  • Meanwhile, melt butter in heavy large skillet over medium heat.
  • Add salmon and cook until fish turns light pink, stirring frequently, about 2 minutes.
  • Stir in cream and tomato paste.
  • Cook until sauce is heated through, about 2 minutes, Stir in 2 teaspoons dill and cayenne pepper.
  • Mix Pasta into sauce, adding pasta liquid by tablespoons as needed to moisten.
  • Divide pasta among 4 shallow bowls.
  • Sprinkle with remaining 1 teaspoon dill and serve.

150-160g pack hot smoked salmon
400g good-quality dried spaghetti
100g frozen petits pois
a small bunch fresh dill (a supermarket packet is about right)
3 tbsp (rounded) crème fraîche

Steps:

  • First prepare the salmon. Flake the salmon into mouthful-sized chunks in a bowl. Bring a large pan of generously salted water to the boil.
  • Cook the pasta. Feed the spaghetti into the pan, give it a stir, then cook at a rolling boil, stirring occasionally to keep the strands separate, until the pasta is just tender but with a bite. Check the cooking time on the pack, as it does vary. When the pasta is almost done, throw in the peas.
  • Finish the dish: remove any tough stalks from the dill, then chop the fronds fairly roughly. Reserve about 4 tablespoons of the pasta water, then drain the pasta and peas and return them to the pan with the reserved water. Set over a very low heat, then toss in the salmon, dill, crème fraîche, salt and plenty of freshly ground black pepper. Toss everything together lightly and heat through briefly, then serve.
