Tomato, Basil, Garlic and Meat Sauce With Angel Hair Pasta image

Developed through experimentation. This dish is a family favorite when craving a pasta dish yet looking for a lite touch.

Number Of Ingredients 12

2 lbs vine ripe tomatoes
1 cup of diced red onion
2 cloves garlic, chopped
4 -5 leaves fresh basil, rolled and sliced
1 sprig fresh oregano
1/4 lb prosciutto, rolled and thin sliced
2 -3 links sweet Italian sausage links, crumbled
1/4 cup white wine
1/2 fresh grated parmesan cheese
1 lb fresh angel hair pasta
1 pinch chili pepper flakes
salt and pepper

Steps:

  • Prepare Tomatoes: Boil a large pot of water and prepare a bowl of ice water.
  • Cut an X in the bottom of each vine ripe totmatoe.
  • Place in boiling water for 30 seconds or until skin begins to peel back.
  • Immediately remove and place in ice water.
  • When all tomatoes are prepare, remove skins, core, cut each in half, and squeeze to remove seeds and pulp.
  • Coarse chop tomatoes and set aside.
  • In a large saute pan or skillet brown sausage and prosciutto.
  • Add onions and galic and saute until onions begin to appear translucent.
  • Deglaze pan with 1/4 cup of white wine and allow to reduce until liquid is almost gone.
  • Add tomatoes and herbs and allow to simmer for 45 minutes.
  • About 15 minutes before done add a generous amount of parmesan cheese to help thicken and flavor sauce.
  • Prepare Angel Hair Pasta per directions cook until al dente.
  • Drain and add to sauce, mix and transfer to large pasta bowl.
  • Serve with fresh grated parmesan cheese.

This is a full-flavored rich tomato sauce that benefits with a long slow cooking time, this sauce will take a couple of hours to cook and will only improve in flavor if made 1-3 days ahead and refrigerated, this will give the flavors time to blend and intensify even more, I also want to mention that the sauce will taste totally different after the 2-1/2 hour cooking time, when I make this sauce I use 1/2 cup cream, you will need to adjust the cream until you have reached the desired taste------------- to take this to yet another level 1 pound mild or spicy Italian sausages with casings removed may be added to the sauce, see instructions on the bottom of the recipe --- you will love this sauce! :)

1/4 cup olive oil (or as needed to cover the bottom of the saucepan)
1 medium onion, finely chopped
1 small red bell pepper, seeded and finely chopped (do not substitute green or yellow pepper)
2 -3 tablespoons finely chopped sun-dried tomatoes packed in oil (can use more)
2 -3 tablespoons finely chopped fresh garlic (the more garlic the better!)
1/2 teaspoon crushed red pepper flakes (or adjust to suit heat level)
1 tablespoon dried basil (rubbed between fingers to release flavors)
2 tablespoons tomato paste
1 (28 ounce) can crushed tomatoes (or use two 14-ounce cans)
1 (28 ounce) can plum tomatoes (do not drain)
2 1/2 teaspoons salt (or to taste)
fresh ground black pepper (to taste)
1/3 cup heavy whipping cream (or more to desired creaminess)

Steps:

  • Heat oil in a medium pot over medium-high heat (use enough oil to cover the bottom of your pot you may need more than 1/4 cup).
  • Add in onion, bell pepper and chopped sun-dried tomatoes; cook stirring for about 5-6 minutes or until softened.
  • Add in garlic, chili flakes and basil; cook stirring for 2 minutes,.
  • Add in tomato paste; stir for 2 minutes.
  • Add in crushed and plum tomatoes with juice; bring to a simmer over medium heat stirring and breaking up the whole tomatoes with a fork.
  • Reduce heat to low cover with a lid and simmer for 30 minutes.
  • Uncover and continue to simmer over low heat for another 2 hours stirring frequently (the longer cooking/simmering time over low heat the better this sauce will be, if your sauce becomes too thick add in a little water and continue cooking).
  • Season with salt and black pepper about halfway through cooking.
  • At this point and before the addition of the cream you may cool the sauce and refrigerate up to 3 days.
  • At the end of cooking mix in the cream starting with 1/3 cup and adding in more until you reach your desired creaminess; stir until heated through.
  • Delicious!
  • THE ADDITION OF SAUSAGE MEAT; in the pot brown the sausage meat with onion, bell pepper and sun-dried tomatoes until no longer pink (breaking up the meat while cooking) drain fat.
  • Add in the garlic, red pepper flakes and basil; cook stirring until the meat is browned (about 7-8 minutes, or best flavor the meat should be lightly browned).
  • Add in the tomato paste and continue with the recipe as stated from step# 5.

2 table sppons Virgin Olive oil
1 lb Lean Ground Beef
1 lb of Ground Sweet or Hot Sausage
2 table spoons oregano
8 leaves fresh basil
1 15 oz can of Tomato Sauce
1/2 or 3oz of a 6oz can of Tomato Paste
1 29oz Can of Tomato Puree
1 15oz can Sliced Stewed Tomatos
1 large Yellow Onion
Two cloves chopped garlic
1 pound of Sweet or Hot Italian Sausage links
29 oz of water or fill the crushed tomato can
1 cup of any red wine

Steps:

  • Mince the yellow onion. In a 5 quart sauce pan, heat the 2 tablespoons of the Olive oil saute onions and garlic, after tender but not brown add 1 lb of ground beef and 1 lb of ground sausage. After meat is browned, add all remaining ingredients. Simmer for at least two hours on low heat..Stir often. Sauce should be thick. If you prefer a less thickness add more water or wine to sauce at any point during the cooking. Serve over your favorite Pasta, Gnocchi , Tortellini or Ravioli.

Steps:

  • finly chop the onion and cut the bacon into smal peices with kitchen scissors.
  • heat the vegetable oil in a saucepan add the bacon & onion & meetballs gently fry for 5mins.
  • Add the can of tomatoes, tomato puree salt & pepper.
  • add the herbs and Simmer gently uncoverd for 15mins stirr occasonaly.
  • Put the pan onto the stub pour water to the top of the pan add salt put the lid on the pan leave to boil.
  • Once water has boid add the pasta to the water leave to boil for 10-15mins.
  • after test the pasta to chek its aldente (soft). then ou knoe that it is cooked.
  • once the pasta is cooked put it into a bowel alog with the sauce and make shure all the hobbs are turned of. Mix the pasta and sauce together grate some cheese over the to and then you are readdy to serve.
