This is a wonderful recipe, the flavors are so good together. Sometimes I add more onion and garlic than it calls for :)

1/2 lb italian sausage, mild, sliced
1 medium onion, chopped
1 large garlic clove, minced
2 can(s) italian style chopped tomatoes
1 can(s) tomato sauce
1 c water
8 oz rigatoni or spiral pasta-uncooked
1 can(s) olives, sliced
1 or 2 Tbsp italian seasoning
parmesan cheese & parsley to put on top

Steps:

  • 1. In large skillet brown sausage, add garlic and onion and cook til onion is soft.
  • 2. Stir in rest of ingredients except the parmesan cheese and parsley.
  • 3. Bring to a boil, reduce heat and simmer, covered for 25-30 minutes, stirring occasionally. Garnish with parmesan cheese and parsley.

There is an Olive Garden right next to my office and I love to get this soup and some breadsticks to go for lunch! Now I can make it on the weekends when it is cold outside! This soup is easy to make satisfying and delicious. :You could leave out the bacon and chicken broth for non meat-eaters.

32 ounces garbanzo beans, drained
6 slices cooked bacon, chopped
1/3 cup olive oil
3/4 cup onion, diced
1 cup celery, diced
1/4 teaspoon garlic, minced
1 cup carrot, julienned
1 1/2 cups canned tomatoes, drained and diced
1 quart chicken broth
1/2 teaspoon black pepper
1/8 teaspoon rosemary, ground
2 tablespoons fresh parsley, chopped
1/2 cup minature bow tie pasta, cooked ale dente

Steps:

  • Directions:.
  • Add beans to food processor and process using on/off pulse until beans are well mashed. Scrape down sides as necessary. Reserve. Heat oil in a Dutch oven. Add carrots, onions, celery and garlic and saute for 5 minutes on medium heat. Add remaining ingredients except pasta and bring to a boil. Reduce heat to a simmer and cook stirring occasionally for 25 minutes. Keep warm. Add pasta to finished soup and serve immediately.

I Lb. small pasta shells
2 sticks of butter
2 packages of cream cheese
1 cup grated parmesan cheese
2 lbs roma tomatoes
salt and pepper to taste
Olive Oil to coat pan
1 package fresh basil

Steps:

  • Preheat the oven to 350 degrees. Pour pasta into a 6-8 quart pot of boiling water. Blend the next two ingredients and 1/2 a cup of the parmesan cheese in a food processor until the mixture is creamy. Add the last 1/2 cup of parmesan to the mixture and blend until the paremesan is disbursed in the mixture. Set aside Chop the roma tomatoes into pieces. Sprinkle with salt. Set aside. Pour olive oil on a 9x13 oven ready casserole dish. Drain noodles. Pour the noodles into the pan and cover completely with the creamy mixture. Then, top the pasta and creamy mixture with the chopped tomatoes. Place the dish in the oven on the middle rack for 40 minutes or until the sides are bubbling and the center is hot. Take the basil leaves off the stems and chop the basil. When the pasta is ready take it out of the oven and sprinkle the basil on top. viola! Dinner is ready!

1/2 pd Italian sausage, sliced or crumbled
1 large onion, chopped
1 large clove garlic, minced
2 cans Del Monte Diced Tomatoes with Basil, Garlic, & Oregano
1 can Del Monte Tomato Sauce
1 cup water
8 oz uncooked rotini or other spiral pasta
8 mushrooms, sliced
Grated Parmesan cheese and fresh parsley sprigs

Steps:

  • Brown sausage in large skillet. Add onion and garlic. Cook until onion is soft; drain. Stir in undrained tomatoes, tomato sauce, water and pasta. Cover and bring to a boil, reduce heat. Simmer covered 25-30 minutes or until pasta is tender, stirring occasionally. Stir in mushrooms, if desired, simmer 5 minutes. Serve in skillet garnished with cheese and parsley
