1 large red or yellow onion, chopped
1 pound fresh asparagus spears, cut into 1-inch pieces
1 medium yellow squash or zucchini, quartered lengthwise, sliced 1/4-inch thick

½ teaspoon coarsely ground pepper
8 ounces cooked linguine pasta, kept warm
1 cup frozen peas and carrots
¼ cup butter
2 tablespoons Pillsbury BEST® All Purpose Flour
1 ½ teaspoons minced fresh garlic
1 (14.5 ounce) can chicken broth
3 tablespoons Santa Cruz Organic® Pure Lemon Juice
¼ cup Crosse & Blackwell® Capers, drained
¼ cup minced fresh parsley
1 cup finely shredded Parmesan cheese

Steps:

  • Heat oil in large skillet over medium heat. Add onion. Cook over medium-low heat 7 minutes or until soft. Add asparagus, yellow squash, salt and pepper. Cook an additional 5 minutes or until crisp-tender.
  • Heat butter in medium saucepan over medium heat. Stir in flour and garlic until blended. Gradually stir in chicken broth until smooth. Bring to a boil over high heat, stirring constantly. Reduce heat to low; simmer 5 minutes. Stir in lemon juice and capers.
  • Combine pasta, vegetable and sauce mixtures in pasta pot. Add parsley; stir until blended. Sprinkle individual servings with cheese.

3 cups cauliflower florets
¾ cup vegetable broth

Steps:

1 onion, thinly sliced
2 small zucchini, thinly sliced

½ pound farfalle (bow tie) pasta
3 tablespoons butter
3 cloves garlic, minced
¼ cup chicken stock
½ cup light cream
¼ cup tomato sauce

15 cherry tomatoes, halved

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Mix carrots, broccoli, onion, zucchini, and yellow squash in a large bowl; drizzle with olive oil. Season with Italian seasoning, salt, and black pepper. Toss to evenly coat vegetables. Spread coated vegetables on 2 baking sheets.

1 Tbsp. butter, divided
3 Tbsp. lemon juice
1 Tbsp. GREY POUPON Country Dijon Mustard
1/4 tsp. ground black pepper
1/2 lb. angel hair pasta, uncooked
1 cup sliced fresh mushrooms
1/2 cup each thin matchlike carrot and zucchini sticks
3/4 cup fat-free reduced-sodium chicken broth
1 cup chopped plum tomatoes
1 Tbsp. chopped fresh basil

Steps:

  • Heat oven to 400°F.
  • Place each head of garlic on separate sheet of foil. Melt 1 tsp. butter; brush evenly onto garlic. Wrap garlic (individually) in foil; place in shallow pan. Bake 45 min. or until tender. Cool 10 min.
  • Separate garlic cloves; squeeze pulp into blender. Discard skins. Add lemon juice, mustard and pepper to blender; blend until smooth.
  • Cook pasta as directed on package, omitting salt. Meanwhile, melt remaining butter in large skillet on medium heat. 450 g vine rippened cherry tomatoes
1/2 teaspoon caster sugar
1 onion, finely chopped
3 garlic cloves, finely chopped
1 tablespoon fresh rosemary, finely chopped
150 ml vegetable stock
350 g rigatoni pasta
175 g small broccoli florets
150 g fine green beans, trimmed
salt & freshly ground black pepper

Steps:

  • Put the tomatoes, sugar, onion, garlic, rosemary and stock into a large pan and bring to the boil. Simmer over a low heat for 15 minutes, stirring occasionally, until the tomatoes have broken down and the sauce has thickened.
  • Meanwhile, cook the rigatoni in a large pan of slightly salted boiling water according to the packet instructions. Add the broccoli and green beans 3 minutes before the end of the cooking time.
