2 cups cooked brown rice
1 can (6 ounces) light water-packed tuna, drained and flaked
1/2 cup sliced ripe olives
1/2 cup sliced celery
1/2 cup frozen peas, thawed
1 medium tomato, diced
1/2 cup chopped green pepper
1/4 cup thinly sliced radishes
1/4 cup sliced green onions
1/4 cup grated carrots
LEMON HERB SALAD DRESSING:
2 tablespoons olive oil
2 tablespoons water
2 tablespoons lemon juice
1 tablespoon Italian seasoning
1 teaspoon sugar
1/2 teaspoon salt
1 garlic clove, minced
1/4 teaspoon lemon-pepper seasoning

Steps:

  • In a large bowl, combine the first 10 ingredients. In a jar with a tight-fitting lid, combine salad dressing ingredients; shake well. Pour over salad and toss to coat. Cover and refrigerate for at least 1 hour.,

Number Of Ingredients 12

1 package (7-1/4 ounces) macaroni and cheese
1/4 cup milk
1/4 cup butter
1/2 cup mayonnaise
2 tablespoons Dijon mustard
4 hard-boiled large eggs, chopped
2 medium tomatoes, chopped
1 small cucumber, peeled and chopped
2 tablespoons chopped onion
1 dill pickle, chopped
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Prepare macaroni and cheese with milk and butter according to package directions. Place in a large bowl; cool for 15 minutes. Stir in mayonnaise and mustard. Fold in remaining ingredients. Refrigerate until serving.

12 oz spiral macaroni
fresh broccoli florets, slightly steamed
fresh mushrooms, sliced
1/4 C diced onion
thinly sliced carrots
1 can small black olives, drained
DRESSING:
1/2 C mayo
1/2 C. sour cream
4 T oil
4 T red wine vinegar
2 minced garlic gloves
1 t salt
1 t oregano
1/4 t ground red pepper
celery salt to taste

Steps:

  • Steam (or boil) broccoli but leave them crisp-tender. Drop broccoli into cold water when done to keep them bright green and stop them from cooking. Drain. Cook pasta according to directions and drain. Into large bowl goes pasta, broccoli, onion, mushrooms, carrots and olives. Mix dressing and toss into bowl with pasta mixture. Season to taste if needed. Chill at least 2 hours.

Number Of Ingredients 15

3 tablespoons olive oil
1/4 lb sea scallops
1/4 lb shrimp, peeled and deveined
1/2 cup smoked salmon, sliced into 1/2 inch strips
1/2 cup white wine
1 cup heavy cream
1 shallot, peeled and sliced into rings
1/2 tablespoon garlic, minced
1 tablespoon basil, thinly sliced
3 roma tomatoes, seeded & diced
1 tablespoon parsley, chopped
1/3 cup parmesan cheese, shredded
4 cups linguine, already cooked
1/2 teaspoon sea salt
1/4 teaspoon white pepper

Steps:

  • In a large skillet add in your Olive Oil and bring it to a medium high heat, add in the shallots cook for 1-2 minutes,
  • then add in the shrimp and scallops lightly and lightly brown on both sides for about a minute on each side.
  • Add in garlic and stir it around to incorporate it into the pan.
  • Add the wine and reduce for 2-3 minutes. Then add heavy cream and salmon reduce for 1-2 minutes.
  • Season with Sea Salt and White Pepper to taste.
  • Then finish by adding Tomatoes, Basil, and pasta. Turn off heat and fold all ingredients together, let sit for 2-3 minutes.
  • Top with Parmesan and Parsley then serve.
