1 lb imitation crabmeat, roughly chopped
1 cup elbow macaroni, uncooked (or other small shell pasta)
1 medium bell pepper, chopped
1/4 cup celery, chopped (about 1 rib)
1/4 teaspoon onion salt (or more) or 2 tablespoons finely chopped onions
1/4 teaspoon creole seasoning, like Tony Chachere's (or more)
1/4 teaspoon ground black pepper or 1/4 teaspoon white pepper
1 dash garlic salt
2 tablespoons mayonnaise (or more)
1 tablespoon sour cream (optional)
1 medium tomatoes, seeded and diced (optional)

Steps:

  • Cook pasta as directed on package. Rinse until cool under cold tap water. Leave to drain well in a colander.
  • Chop crab meat in a medium bowl. Set aside.
  • In a large bowl, chop all desired veggies. Add pasta and all seasonings. Fold in mayo (and sour cream, if using). Adjust mayo and seasonings to personal taste. Gently fold in the crab meat.
  • Refrigerate. Stir again before serving, adding more mayo if needed.

3 lbs medium unshelled shrimp
1 lb of real crabmeat (claw or lump)

1 tablespoon cajun seasoning

CUCUMBER CRAB PASTA SALAD



Cucumber Crab Pasta Salad image

This is best when it has time to chill. I've only had this using imitation crab, let me know if you used real crab with it. This is another recipe from my dad that people ask for every time they eat it. It's a good make ahead dish for pot lucks, etc. Prep time does not include chill time, although you could keep all your ingredients (including prepared noodles) in the fridge until you have time to assemble it.

1 (16 ounce) box medium shell noodles
1 English cucumber, sliced
2 (8 ounce) packages imitation crabmeat
1 1/2 tablespoons dried dill (or to taste. Can use fresh.)
salt (optional)
pepper (optional)
1 (16 ounce) bottle kraft creamy cucumber salad dressing

Steps:

  • Please note: cucumber and crab amounts are to your preference. The amounts listed here are a pretty good veggie/crab to noodle ratio.
  • Do not use noodles larger than the medium shells. You can use smaller shell noodles, though.
  • Boil noodles. Rinse well and let drain for quite a while. Stir them often when draining them to make sure all the water is out of the shells. The less water on them, the better the salad dressing sticks to them.
  • Slice cucumber (with or without skin) to your preference. I typically slice it in half lengthwise, then do about 1/8 thin slices.
  • Chop the imitation crab into chunks and add to the noodles.
  • Sprinkle with salt and dill over entire mixture and stir. Dill should have a nice amount of "speckling" throughout the dish after stirring.
  • If serving right away, pour approx 1/2 the bottle of dressing onto the cucumber crab mixture and stir, then slowly add more to lightly cover everything. You don't want the noodles sopping wet with dressing, but you want a nice thin coat on everything in the bowl.
  • Chill until serving.
  • If you are taking this to a pot luck or making it ahead, assemble everything but the dressing and keep refridgerated. Pour the dressing on just before serving.
  • Keep dressing handy for left-overs because it tends to get sucked into the noodles if it sits in the fridge for any length of time.
  • Optional: For presentation you can decorate with cherry tomatoes on top and sprinkle with dill for garnish.

1 teaspoon dried Italian herb seasoning
⅛ teaspoon ground black pepper, or to taste
¼ cup cherry tomatoes for garnish

Steps:

  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Drain pasta and add to a large bowl with extra-virgin olive oil. Stir well, and refrigerate, about 30 minutes, while preparing the other ingredients.
  • Combine bell pepper, broccoli, carrots, crabmeat, olives, and onion in a bowl. Add to pasta.
  • Stir together mayonnaise, balsamic vinaigrette, Italian seasoning, and black pepper for the dressing in a small bowl and pour over the pasta salad. Mix to combine. Garnish with cherry tomatoes and serve at room temperature or chilled.

This is my original recipe for a delicious seafood salad that is versatile. It can be made with fresh lump crabmeat, canned crab, or imitation. You may use fresh, cooked shrimp or frozen. You may combine crab and shrimp or lobster, if you prefer. Each way, it is a real winner! I love it, so much, that I've been known to eat it...

1 3/4 c mayonnaise (i prefer duke's brand or hellman's)
2 1/2 tsp old bay seasoning
1/2 tsp lawry's seasoned salt
8 oz shell macaroni
water & salt for cooking pasta
1/2 c diced celery
1/4 c sweet onion (vidalia etc), finely chopped
1 Tbsp shredded carrot
1/2 Tbsp chives, fresh snipped
1 lb imitation crabmeat (may substitute lump crabmeat and/or shrimp/lobster), chopped
1 Tbsp drained capers (if you omit capers, double the pickle)
1 1/2 Tbsp chopped dill pickle (or more, if desired; i prefer claussen's brand)
chives for garnish, if desired

Steps:

  • 1. Gather and prep all ingredients (dice celery, chop onion, shred carrot, snip chives, chop imitation crabmeat and/or shrimp & if using fresh lump crabmeat, pick through for shells.)
  • 2. In large mixing bowl, combine mayonnaise, Old Bay seasoning; & seasoned salt; mix well.
  • 3. Cook pasta according to package directions.
  • 4. Drain, rinse well with cold water, then drain pasta very well, shaking and turning to remove almost every drop of water.
  • 5. Add drained pasta to mayonnaise mixture; mix well.
  • 6. To pasta, add celery, onion, carrot and chives; mix well.
  • 7. Taste for seasoning; add salt and/or pepper, as desired.
  • 8. Add capers and/or chopped dill pickle and seafood of your choice; gently combine.
  • 9. Cover and refrigerate until ready to serve (it's best to let it chill thoroughly for at least 1 or 2 hours.) Stir to "remix" the ingredients before plating; you may add a little more mayonnaise if it seems a little drier than you prefer.
  • 10. Garnish with chives or as desired.
  • 11. Cover and refrigerate leftovers.
